- Preheat oven to 350'.
- In a medium skillet, add beef and onion and cook until beef is no longer pink and onion is translucent.
- Drain off fat and set aside.
- While beef is browning, in a large pot, cook pasta according to package directions. (I usually cook it a minute less than directed because it will cook while in the oven as well).
- When pasta is cooked drain and add rest of the ingredients to the pot, reserving 1/4 of the shredded cheese (about 1/2 cup) and blend well.
- Transfer above mixture to a large buttered baking dish and spread evenly.
- Top with remaining 1/4 of cheese.
- Cover and bake at 350' for 20-30 minutes. Uncover the last 5-10 minutes and bake until hot and bubbly and cheese on top is melted.

- Heat up the oil in a large pan, peel and slice the onion, and sautee until soft.
- Add the ground beef and stir to break the meat until no longer pink.
- Add the chopped garlic, peppers and tomato paste, and give it a stir.
- Add the pasta and beef stock, cover the pan with a lid, and leave to cook until the liquid is absorbed and the pasta is cooked.
- Add the cheddar and parmesan, and fresh parsley.
- Remove from the heat, and leave the lid on for 5-10 minutes, the cheese will melt and the full flavours will come through.

- Preheat oven to 350 degrees F.
- In a large skillet, cook ground beef over medium heat. Break the meat up in to crumbles and cook until browned.
- Stir in petite diced tomatoes, tomatoes with green chilies, tomato paste, salt, pepper and Italian seasoning.
- Bring to a boil, reduce heat and simmer for 5 minutes.
- Take off heat.
- Cook egg noodles according to package, drain.
- Mix together cooked noodles, green onions, sour cream and cream cheese.
- Lightly grease 13x9 baking dish with non stick cooking spray. Place egg noodle mixture in baking dish.
- Top with beef mixture.
- Top with cheddar cheese, Parmesan cheese, then mozzarella cheese.
- Cover and back for 30 minutes. Uncover and bake 5 -10 more minutes.
- Let stand 10 minutes before serving.

- Cook the pasta as instructed on the package.
- Cook the beef.
- Heat the oil in a large skillet and add onion.
- Saute until slightly soft, about 1 minute, then add ground beef.
- Stir often, breaking the meat into small bits and cook until the meat is almost browned.
- Add the garlic and herbs and cook until garlic is fragrant, about 2 minutes.
- Set aside on a covered plate.
- Cook the vegetables:
- Use the same skillet (no need to wash) and heat the 2 tablespoons of olive oil.
- Add bell pepper and zucchini and cook until slightly roasted, about 3 minutes.
- Add mushrooms and cook until mushrooms are soft and the water has evaporated.
- Time to add the frozen veggie and cook until just a little soft.
- Mix in garlic and the herbs and spices and cook until garlic is fragrant, about 2 minutes.
- In a large bowl, mix cooked beef and vegetables then fold in the cooked pasta, mixing gently to avoid breaking the pasta.
- Serve immediately with grated provolone or Parmesan and chopped fresh parsley.

- Cook pasta according to package directions. Drain and put back in the pot. Swirl in 1 tablespoon of butter.
- While the pasta is cooking, using a large skillet, cook onions in olive oil for about 3 minutes. Add garlic the last 30 seconds.
- Add the ground beef to the skillet with the onions and garlic. Brown beef breaking up pieces with a spatula as it cooks. Lightly salt and pepper beef while browning. Drain off any extra grease.

- Cook pasta according to package directions for 6-8 minutes.
- Preheat oven to 400 degrees.
- Heat a large skillet on medium high heat and then add in 2 tbsp. of olive oil.
- Sauté the peppers and mushrooms until tender then set aside in a bowl.
- Using the same pan, add 1 tbsp. of olive oil and sauté the onion until tender then add in the ground meat.
- Break up the meat well and cook until no longer pink then add in the salt, oregano, basil, black pepper, garlic and the tomato sauce, diced tomatoes, tomato paste and pasta water.
- Return the mushrooms and bell pepper to the pan.
- Mix well and let the sauce simmer on medium low heat for 5-7 minutes, covered.

- Heat the olive oil in a large skillet on medium heat. Add the onion, sauté until it begins to soften, about 5 minutes.
- Add the ground beef, breaking up with a heavy spoon. Cook until it begins to brown, about 5 minutes.
- Stir in the red wine and garlic. Simmer on medium low for a few minutes until the wine has been mostly absorbed.
