1 pound Ground Beef (93% lean or leaner)
3 teaspoons fresh minced garlic
2 cups chopped tomatoes
3/4 teaspoon salt
1/4 teaspoon pepper
1-1/2 cups uncooked penne pasta, cooked
2 tablespoons sliced fresh basil leaves
3 tablespoons grated Parmesan cheese

Steps:

  • Heat large nonstick skillet over medium heat until hot. Add Ground Beef and garlic; cook 8 to 10 minutes, breaking into 3/4-inch crumbles and stirring occasionally. Pour off drippings.
  • Stir in tomatoes, salt and pepper; cook over medium heat 5 minutes, stirring occasionally. Add pasta and basil; toss. Sprinkle with cheese.

1 lb ground beef
1/2 onion, chopped
12 ounces pasta, any kind (I like Rotini or Bowtie)
1 (14 1/2 ounce) can diced Italian tomatoes (undrained)
1 (15 ounce) can tomato sauce
1 (10 3/4 ounce) can tomato soup
1 teaspoon italian seasoning
1/2 tablespoon dried parsley
1/4 teaspoon pepper
1/8 teaspoon salt (or to taste)
1/2 teaspoon garlic powder (or omit and use 2 Cloves of minced)
1 (8 ounce) package shredded five-cheese Italian cheese blend (or cheese of your choice)

Steps:

  • Preheat oven to 350'.
  • In a medium skillet, add beef and onion and cook until beef is no longer pink and onion is translucent.
  • Drain off fat and set aside.
  • While beef is browning, in a large pot, cook pasta according to package directions. (I usually cook it a minute less than directed because it will cook while in the oven as well).
  • When pasta is cooked drain and add rest of the ingredients to the pot, reserving 1/4 of the shredded cheese (about 1/2 cup) and blend well.
  • Transfer above mixture to a large buttered baking dish and spread evenly.
  • Top with remaining 1/4 of cheese.
  • Cover and bake at 350' for 20-30 minutes. Uncover the last 5-10 minutes and bake until hot and bubbly and cheese on top is melted.

250 g ground beef ((1/2 lb) - I used lean, 5% fat)
1 onion
3 cloves of garlic
1 yellow pepper
1 orange pepper
1 cup penne pasta
4 cups beef stock (broth)
2 tbsp concentrated tomato paste (puree)
1/4 cup grated cheddar cheese
2 tbsp grated parmesan cheese
1 tbsp chopped fresh parsley
1 tbsp vegetable oil

Steps:

  • Heat up the oil in a large pan, peel and slice the onion, and sautee until soft.
  • Add the ground beef and stir to break the meat until no longer pink.
  • Add the chopped garlic, peppers and tomato paste, and give it a stir.
  • Add the pasta and beef stock, cover the pan with a lid, and leave to cook until the liquid is absorbed and the pasta is cooked.
  • Add the cheddar and parmesan, and fresh parsley.
  • Remove from the heat, and leave the lid on for 5-10 minutes, the cheese will melt and the full flavours will come through.

1 14 1/2 oz can petite diced tomatoes
1 10 oz can diced tomatoes and green chilies (I used Rotel)
1 6 oz can tomato paste
1 1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 teaspoon dried Italian seasoning
1 bag uncooked medium egg noodles
5-6 green onions (chopped)
1 8 oz sour cream
1 3 oz cream cheese, softened
1 cup shredded cheddar cheese
1 cup shredded Parmesan cheese
1 cup shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F.
  • In a large skillet, cook ground beef over medium heat. Break the meat up in to crumbles and cook until browned.
  • Stir in petite diced tomatoes, tomatoes with green chilies, tomato paste, salt, pepper and Italian seasoning.
  • Bring to a boil, reduce heat and simmer for 5 minutes.
  • Take off heat.
  • Cook egg noodles according to package, drain.
  • Mix together cooked noodles, green onions, sour cream and cream cheese.
  • Lightly grease 13x9 baking dish with non stick cooking spray. Place egg noodle mixture in baking dish.
  • Top with beef mixture.
  • Top with cheddar cheese, Parmesan cheese, then mozzarella cheese.
  • Cover and back for 30 minutes. Uncover and bake 5 -10 more minutes.
  • Let stand 10 minutes before serving.

chopped fresh parsley - optional
1 tablespoon olive oil
1 lbs ground beef
1 large onion (diced small)
5 garlic cloves (minced)
1/4 dry thyme
1/4 dry oregano
1/4 dry basil
1/2 cup tomato sauce
2 tablespoons olive oil
1 cup red bell pepper (diced)
1/2 cup diced zucchini or summer squash
1 cup mushrooms (slices)
1/2 cup frozen mixed vegetables (like peas and carrots)
2 garlic cloves (minced)
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/2 teaspoon dry thyme
large non stick skillet
bamboo spatula

Steps:

  • Cook the pasta as instructed on the package.
  • Cook the beef.
  • Heat the oil in a large skillet and add onion.
  • Saute until slightly soft, about 1 minute, then add ground beef.
  • Stir often, breaking the meat into small bits and cook until the meat is almost browned.
  • Add the garlic and herbs and cook until garlic is fragrant, about 2 minutes.
  • Set aside on a covered plate.
  • Cook the vegetables:
  • Use the same skillet (no need to wash) and heat the 2 tablespoons of olive oil.
  • Add bell pepper and zucchini and cook until slightly roasted, about 3 minutes.
  • Add mushrooms and cook until mushrooms are soft and the water has evaporated.
  • Time to add the frozen veggie and cook until just a little soft.
  • Mix in garlic and the herbs and spices and cook until garlic is fragrant, about 2 minutes.
  • In a large bowl, mix cooked beef and vegetables then fold in the cooked pasta, mixing gently to avoid breaking the pasta.
  • Serve immediately with grated provolone or Parmesan and chopped fresh parsley.
  • Keep leftovers stored in the fridge, in an airtight container, for up to 3 days.

1 tablespoon butter
12 oz. penne pasta, cooked and drained
1 lb. ground beef
2 cloves garlic, diced
1 small onion, diced
2 (28 oz.) cans of whole tomatoes, drained
1 ( 8 oz.) can tomato sauce
1 teaspoon oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup heavy cream
1 teaspoon sugar
1/4 cup fresh chopped basil

Steps:

  • Cook pasta according to package directions. Drain and put back in the pot. Swirl in 1 tablespoon of butter.
  • While the pasta is cooking, using a large skillet, cook onions in olive oil for about 3 minutes. Add garlic the last 30 seconds.
  • Add the ground beef to the skillet with the onions and garlic. Brown beef breaking up pieces with a spatula as it cooks. Lightly salt and pepper beef while browning. Drain off any extra grease.
  • Drain the tomatoes of liquid and add to the skillet. Break up tomatoes using your fingers or with a spatula. Pull of any hard pieces and the tops of the tomatoes.
  • Add the tomato sauce, oregano, sugar, salt and pepper. Stir well to combine. Bring to a light simmer and cook for 25 minutes, stirring once or twice.
  • Stir in the heavy cream and basil. Add the pasta and toss to combine. Serve with grated Parmesan cheese.

8 oz. cavatappi pasta (or any other type)
1.5 lbs. ground meat (85/15)
1 medium onion (petite diced)
1 can petite diced tomatoes (15 oz)
1 can tomato sauce (15 oz)
2 tbsps. tomato paste
3 tbsps. olive oil
1 small red bell pepper (petite diced)
1 small green bell pepper (petite diced)
8 oz. mushroom (petite diced)
1 tsp black pepper

  • Cook pasta according to package directions for 6-8 minutes.

  • Using the same pan, add 1 tbsp. of olive oil and sauté the onion until tender then add in the ground meat.

  • Return the mushrooms and bell pepper to the pan.

  • Transfer the pasta to a baking dish and then top with the remaining cheese.
  • Bake covered with aluminum paper in a preheated 400 degree oven for 20 minutes, then remove the foil to bake another 10 minutes uncovered.
  • Remove from the oven, sprinkle with some fresh parsley and serve.

1 onion, chopped
1/2 lb ground beef
1/4 cup red wine
3 cloves garlic, minced
1/4 to 1/2 cup sliced mushrooms (optional)
28 oz can diced tomatoes
1 tsp dried oregano
1 tsp dried basil or 1 tbsp fresh basil
14.5 oz can of chickpeas, drained and rinsed
handful of greens such as kale, chopped (optional)
12 ozs elbow macaroni or other short pasta shape
shredded Parmesan cheese to pass at table

Steps:

  • Heat the olive oil in a large skillet on medium heat. Add the onion, sauté until it begins to soften, about 5 minutes.
  • Add the ground beef, breaking up with a heavy spoon. Cook until it begins to brown, about 5 minutes.
  • Stir in the red wine and garlic. Simmer on medium low for a few minutes until the wine has been mostly absorbed.
  • Add the diced tomatoes, stirring to combine with the beef. Add the oregano and dried basil. (if using fresh basil, save that until you are almost done cooking the sauce). Stir in greens at this time, too, if you are using them.
  • Start cooking the pasta according to package instructions as the tomatoes and beef simmer.
  • After the tomatoes have cooked for about 10 minutes, stir in the chickpeas. Break up a few against the side of the skillet with a heavy spoon, to thicken the sauce. Add the fresh basil at this time if using.
  • Drain the pasta when cooked to your liking. Gradually stir the pasta into the skillet, so that the pasta and sauce are well combined.
  • Plate the pasta, and top with grated Parmesan cheese. Enjoy!
