CAJUN RICE RECIPE

Steps:
- Place the butter and veggies in the rice cooker and press cook
- After about 10 mins the butter will be melted and the onions will start to turn opaque.
- add everything else, stir and restart the rice cooker, it will take a little longer than a normal batch
- When the timer goes off stir the rice, close the lid and let it sit another 10 mins
- Melt the butter over the stove and saute the vegetables.
- Cook until the onions are opaque.
- Add everything else, stir and bring to a boil
- Reduce heat to a simmer, cover, and cook until rice is tender and has absorbed all the liquid, 16 to 18 minutes (check at 16 and see, it could take up to 20)

Steps:
- Heat olive oil over medium/medium-high. Put the onions.celery,carrot,parsnip and parsley into the pot and cook until the vegetables are soft. Add garlic and cook 1 more minute. Put vegetables into the rice cooker pot.
- In the same pan, cook the sausage for about 1 minute. Put the sausage in the rice cooker pot.
- Put rice in the rice cooker pot. Sprinkle with salt and pepper. Add butter.
- Pour chicken broth over.
- Cook using the regular cycle. At the end, add hot sauce to taste.
- note: the amount of chicken broth is approximately If the rice is too dry at the end just add more broth and let sit ( the warm setting should be on) for a few minutes. if the rice is too wet, well next time use a bit less broth.

This came from the Justin Wilson Website. I only get to eat this when I'm going through LA on my way to see family in MS, so when I saw this I was overjoyed. Mostly posting this so I don't lose it!! :)

Steps:
- Preheat the oven to 350 degrees.
- In a large skillet over medium-high heat, sauté the onions, bell pepper, and parsley in the oil until the onions are clear.
- Then add the garlic and sauté another 5 minutes. Stir in the meat, making sure it mixes well with the vegetables, and cook until the meat is browned.
- Pour in the stock, taste for salt, then add the hot sauce and Worcestershire, and mix well.
- Stir in the rice, mix well, then pour into a small greased casserole dish and bake for 45 minutes.

- Pour chicken broth into rice cooker.
- Crumble bouillon cube to a powder and add to broth.
- Add olive oil, garlic, Cajun seasoning, Worcestershire, and pepper.
- Add bacon bits, diced onion, diced celery, and rice. Stir well.
- Turn rice cooker on ad cook until machine shuts off (or shifts to WARM mode) and rice is tender, about 20-25 minutes.
- Stir and fluff rice with fork (or paddle utensil provided with rice cooker) and serve.
- STOVETOP INSTRUCTIONS: Add all ingredients, except rice, to medium saucepan and bring to boil over high heat. Reduce heat to low, add rice, cover, and cook until rice is tender, appx 17 minutes. Stir and fluff rice with fork and serve.
- NOTES: You may add up to 1/3 c additional veggies, such as diced bell peppers or cooked red beans.

- In a 3-quart heavy saucepan wash rice in several changes of water, pouring off each change of water carefully, until water is almost clear. Drain rice in a sieve and return to pan. Add 3 cups water and salt and bring to a boil, uncovered, without stirring. Boil mixture until surface of rice is covered with steam holes and grains on top appear dry, 8 to 10 minutes. Reduce heat to low and cook rice, covered, without stirring, 15 minutes. Remove pan from heat and let rice stand, covered, 5 minutes. Fluff rice with a fork.
