VEGETABLE AND RICE CASSEROLE
Easy rice and vegetable rice casserole that tastes like a million bucks! Everyone goes crazy for this recipe.

Steps:
- Measure 3 cups of dry instant rice and cook according to package instructions, set aside
- Combine onion, garlic, carrots, olive oil, salt, and pepper in a large skillet
- Sautee for 10 - 15 minutes on medium high heat, until carrots start to soften and onions become translucent
- Add peas, broccoli, mushroom soup, 1 1/2 cups parmesan cheese, and 1 cup of sharp cheddar cheese to the skillet
- Stir on medium heat until heated through, about 10 - 12 minutes
- Add cooked rice and parsley to skillet and stir to combine
- Transfer mixture to a 13 x 9 casserole dish
- Top with remaining 1 cup of parmesan cheese and 1 cup of sharp cheddar cheese
- Bake for 10-15 minutes at 400 degrees, until cheese is bubbly and beginning to brown

Steps:
- Boil 500 ml (approximately 2 cups) of water and a pinch of salt in a pot, add brown rice, cover and cook over low heat until soft.
- Thaw peas. Melt the butter in a frying pan, stir in the flour and cook lightly. Stir in the milk, bring to a boil and simmer for 10 minutes, stirring occasionally. Remove from the heat, crumble in the cheese and stir in the eggs. Chop basil and add to the sauce. Butter a baking dish and spread the rice. Evenly distribute the peas on top. Pour the sauce over and bake in the oven at 200°C (approximately 400°F) for 15-18 minutes.

Steps:
- Add rice and water to a large, heavy saucepan and bring to a boil.
- Continue boiling for 10 minutes, or until most of the surface liquid has evaporated.
- The surface of the rice will be uneven and look like a pitted crater. At this stage, cover the pan with a tight-fitting lid and set the heat to low.
- Meanwhile, prepare the rest of the dish. If you went the fresh peas route, blanch them in boiling water for 2 minutes, drain, and set aside. Otherwise, thaw frozen peas at room temperature.
- Add the oil to a heated wok or skillet. Add the pork and stir-fry for 1 minute, then add the peas, soy sauces, oyster sauce, and rice wine.
- Continue to cook for another 2 minutes, then add the green onions.
- Place this cooked mixture on top of the rice, cover, and continue to cook over the lowest possible heat for another 15 minutes (rice will have cooked a total of 25 minutes).
- Serve immediately, drizzling additional oyster sauce over the top of the casserole if desired.

BEEF, RICE, PEAS AND CARROTS ONE DISH MEAL
Quick, simple supper. My 3 year old ate 6 servings, so I guess its kid friendly too. :) I used a very lean beef that didn't require draining, if you use a fatty meat you may want to drain it before step 3. If you don't want to use minute rice, you can double the water, use regular rice, and let it simmer about 7 minutes longer.

- Dice onion (I like large chunks, you may prefer it smaller.)
- In a medium sized pot, brown ground beef, with onion. (Add a clove or two of garlic if desired.).
- When the beef is done, add the peas and carrots, and 2 1/2 cups of water. Let it reach a boil, and turn heat to medium.
- After about 5 minutes, add the minute rice, and an additional 1/2 cup of water if needed. Simmer for 5 minutes or so, until the rice and vegetables are tender.
- Season with salt and pepper to taste just before serving.

- In a mixing bowl, mix together the first 5 ingredients.
