Monterey Chicken Spaghetti Casserole - my whole family went crazy over this easy chicken casserole!! Even our super picky eaters! Chicken, spaghetti, sour cream, cream of chicken, spinach, Monterey Jack Cheese, and french fried onions. Makes a great freezer meal! 12- oz dried spaghetti
4 cups chopped cooked chicken
1 (16-oz) container sour cream
2 (10.5-oz) cans condensed cream of chicken soup
1 (10-oz) package frozen spinach, (thawed and drained)
2 cups shredded Monterey Jack cheese, (divided)
2 garlic cloves (minced)
1 (6-oz) can French's French Fried Onions, divided

Steps:

  • Preheat oven to 350ºF. Lightly spray a 9x13-inch pan with cooking spray.
  • Cook spaghetti according to package directions. Drain.
  • In a large bowl, combine cooked chicken, cream of chicken soup, sour cream, drained spinach, 1 cup cheese, garlic and 1/2 can of French's French Fried Onions.
  • Stir in cooked spaghetti. Pour into prepared pan.
  • Sprinkle remaining shredded cheese and onions on top of pasta mixture.
  • Bake, uncovered, for 40 to 50 minutes.

1 ⅓ cups French-fried onions, crushed
1 egg, beaten
1 pound skinless, boneless chicken breast halves

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Spread crushed onions in a shallow bowl. Pour beaten egg into a separate shallow bowl.
  • Dip chicken into beaten egg, then press into crushed onions. Gently tap chicken to let loose pieces fall away. Put breaded chicken to a baking sheet.
  • Bake chicken until no longer pink in the center and the juices run clear, about 20 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

This is not "Italian style" - no tomatoes or Italian seasonings. It's really delicious...creamy and cheesy with a cruncy topping. My husband's ex-wife gave this recipe to me and I've thanked her many times!

4 -6 boneless skinless chicken breasts, cut into bite-size pieces
2 tablespoons olive oil
1 small onion, Chopped
1 garlic clove, minced
1 lb thin spaghetti, broken into pieces
1 (6 ounce) can sliced mushrooms
1 (10 1/2 ounce) can cream of chicken soup
1 (10 1/2 ounce) can cream of celery soup
1 (10 1/2 ounce) can cream of mushroom soup
1 cup water
2 cups shredded mozzarella cheese
1 1/2 cups French fried onion rings (such as Durkee's or French's)

Steps:

  • Preheat oven to 375.
  • Cook spaghetti in a pot of boiling water until just tender, about 7 - 8 minutes. Drain in colander.
  • Heat oil in skillet over medium high heat.
  • Add onions, chicken pieces and garlic.
  • Sautee until chicken is lightly browned on all sides. Remove from heat.
  • Mix all three soups together, along with a cup of water. Add spaghetti and chicken (make sure to scrape the pan and get all those juicy pieces).
  • Pour into a 13" x 9" casserole dish.
  • Top with mozzarella cheese.
  • Cook 30 - 35 minutes, or until bubbly.
  • Add onion rings and cook another 10 minutes, or until lightly browned and crunchy.

  • In 12-inch nonstick skillet, heat 1/4 cup butter over medium-high heat. Add onions, thyme, salt and pepper. Cook 11 to 12 minutes, stirring occasionally, until onions are tender. Reduce heat to medium; cook 10 to 12 minutes, stirring occasionally, until onions are starting to brown.
  • Sprinkle flour over onions in skillet; cook and stir about 1 minute. Stir in broth; heat to boiling, stirring constantly. Simmer 1 to 2 minutes or until slightly thickened. Remove from heat; stir in chicken and cooked pasta, mixing to combine.
  • Add half of the mixture to baking dish. Sprinkle with half of the cheese. Top with remaining pasta mixture, then remaining cheese. Cover and bake 20 minutes.

  • In a large pot over medium heat, bring about 2 quarts lightly salted water to a boil. Add spaghetti and cook for about 1 to 2 minutes less than package's directions. Rinse under cold, running water and drain well. Set aside.
  • In small, heavy-bottomed pot, arrange chicken breasts in a single layer. Add quartered onions, smashed garlic cloves, bay leaf, salt, peppercorns, and enough water to cover.
  • Bring to a boil, skimming scum that floats on top. Lower heat, cover, and cook in a barely a simmer for about 10 to 15 minutes or until thermometer inserted in the thickest part of chicken reads 165 F.
  • With a slotted spoon, remove chicken from pot and allow to cool to touch. Coarsely shred chicken and keep warm.
