Steps:
- Chop the ham as finely as desired.
- Place boiled egg in a medium sized bowl and mash with a fork.
- Add the chopped ham.
- Add chopped celery.
- Add mayonnaise.
- Add pickle relish.
- Add yellow mustard.
- Add sugar.
- Add black pepper.
- Use a wooden spoon and mix together well.
- Add more mayo or pickle juice for a creamier ham salad.
- Taste and season with salt if needed.
- Refrigerate for an hour or two before serving.
- Enjoy!

- In a large saucepan, bring the rice, water and bouillon to a boil. Reduce heat; cover and simmer for 1 hour or until the rice is tender. Drain if necessary; cool. , In a large bowl, toss rice with ham, cheese, red pepper, broccoli, carrots and green onions. For dressing, combine lemon juice, vinegar, mustard, curry powder, salt and pepper in a blender or food processor. With machine on high, slowly add oil through the feeder cap until well mixed. Dressing will thicken slightly. , Pour over salad and toss to coat. Cover and chill several hours or overnight.

- Whisk the mayonnaise and mustard together in a large bowl. Pulse the ham and pickles in a food processor until finely chopped but not pureed. Add the ham mixture, pickle juice, celery, onions and celery leaves to the mayonnaise mixture, and stir. Taste; if the salad seems dry (it should be spreadable), add more mayonnaise and/or pickling liquid. Serve as is or on sandwiches.
CURRIED RICE AND HAM
This is very good. Not very spicy, so you may want to adjust the curry to your liking. My stomach does not tolerate spicy things well, so you may want to add more depending on how tough your stomach is. lol. I love the taste of curry and it goes well with the ham. My Husband cleaned his plate and went for seconds on this one.

- Saute onion in butter or margarine. Cut the eggs into slices.
- In bowl, mix rice, parsley, salt, curry and onion. Mix well.
- Grease a large baking pan. Line the ham slices on the bottom in a single layer.
- Spoon the rice mixture on top of the ham slices. Place the egg slices on top.
- Make sauce; Melt butter. In a bowl, Combine the cornstarch, curry and 1/3 C milk. Mix.
- stir the cornstarch mix into the butter. Add remaining milk. Bring to a boil, stirring constantly. Stir for 3 minutes.
- Pour this mixture over the eggs. Cover. Bake 375F for 30 minutes.
- Uncover. Bake for 10 more minutes.

COLD RICE MOZZARELLA HAM SALAD
One of my favorites, and also my own creation, great to serve at get togethers. Make certain to use only Uncle Ben's converted rice for this. You can add in other veggies along with radishes and celery if desired. I serve this at my BBQ get togethers, everyone loves this, and it is a nice change from potato salad. Prep time does not include boiling rice, but does include chilling time You can substitute salami for the ham. Instead of shredded mozza cheese you can cube it.

- Prepare the rice in water with a teaspoon of salt until cooked, then cool completely.
- In a large mixing bowl, mix the cooled rice with onions, radishes, celery, mozzarella cheese and ham.

HAM AND RICE CASSEROLE

- Add the butter to a deep skillet or a soup pot over medium heat. Add in the onion and cook until it becomes translucent.
- Then add the garlic powder, onion powder, salt and pepper and stir to combine.
- Cook for another minute then add the rice and sauté until the rice starts to turn a light golden color.
- Pour in the chicken broth and bring it to a boil over high heat. Then cover the pot with a lid and reduce the heat to low medium and cook for 10 minutes.
- While the rice is cooking, cut the large pieces of ham into smaller pieces and set aside.
- Once the 10 minutes have passed, remove the lid from the rice and gently stir in the broccoli and ham.
- Place the lid back on the pan and cook for another 8 minutes then add the freshly grated cheese and stir to combine.
- Place the lid back on the pot and remove it from the heat.
- Let the cheese melt before serving with fresh parsley if desired.
