Steps:
- Heat the oil and butter in a skillet over medium-high heat. Add the rice, orzo and nuts and saute, stirring frequently, until half of the rice and orzo is browned.
- Add the onion and cook for another two minutes.
- Add the chicken stock, salt and herbs and stir to combine.
- Bring it to a boil, reduce the heat to low, cover and cook as you would normally cook rice, about 15-20 minutes (if using white rice, longer if using brown) or until the rice is done.
- Fluff with a fork and serve immediately.
PORCUPINE MEATBALLS W/ RICE-A-RONI
This recipe is from my favorite aunt. It's a big hit in her family, and great comfort food. And it's so easy that her bachelor sons can make it themselves. (of course, they'd rather have mom make it!!)

- Mix ground beef with egg and rice-a-roni, reserving seasoning packet.
- Shape into balls.
- Brown in frying pan, on all sides.
- Drain grease.
- Sprinkle seasoning packet on top.
- Mix brown gravy mix and pour on top.
- Cover and simmer for 15 minutes.
- Serve over mashed potatoes.

RICE-AH-RONI
Here's my version of what's often called 'the San Francisco treat,' although the next time I see this served here will be the first time. I used real chicken broth and a variety of seasonings.

Steps:
- Mix together salt, pepper, coriander, mustard powder, celery salt, paprika, turmeric, and cayenne pepper in a small bowl.
- Melt butter in a large skillet over medium-high heat. Add diced onion and pasta. Cook and stir until onions soften and pasta turns golden brown, 4 to 6 minutes. Stir in spice blend; cook and stir about 30 seconds. Add rice and stir until rice is coated with butter, about 1 minute.
- Pour in chicken broth. Bring to a simmer. Stir; reduce heat to low. Cover with a tight-fitting lid; cook for 17 minutes. Remove from heat; let covered skillet sit for 5 minutes. Remove lid and stir in parsley, fluffing rice and breaking up any clumps.

SPANISH RICE A RONI CASSEROLE
Easy meal and everyone usually loves this. I usually make it into a casserole, and put finished product into into a greased casserole dish, then add the cheese to the top and bake until cheese melts and serve.

- Brown ground beef with onions and bellpepper. Drain grease.
- In a dutch oven prepare both boxes of rice a roni to box directions.
- When rice mixture comes to a boil, add hamburger with onions and bell pepper to rice, add in cans of corn and cajun seasoning. Bring mixture to a boil and cover. Lower heat and simmer for 20 minutes. Stir often to prevent rice from sticking. When rice is done, add cheese, stir and serve!
- I always add more hot sauce to my plate of food, but I love the twang of hot sauce.

MY PORK CHOPS A RONI
There used to be a recipe on the back of the Beef Rice A Roni box 40 years ago that called for this version and I haven't been able to find it so I substituted until I came up with this one. This is quick, satisfying and filling. Our family likes it very much.

- Add salt and peppered pork chops to fat in pan and sear until lightly browned.
- Remove from fat.
- Add rice and spaghetti (broken up into small pieces) and stir until rice is white.
- Add the rest of ingredients and return chops to pan.
- Cover and cook on medium low until liquid is absorbed.
RICE-A-RONI PORK CHOPS
I prefer stuffing my chops with rice. This is a good and easy meal that everyone will enjoy. Pork chops stay moist and have plenty of flavor.

- Preheat oven 350 degrees.
- Rinse and pat dry the pork chops. Then create a pocket in each pork chop for the stuffing. Prepare the rice a roni as directed on the box. I used the Broccoli Au Gratin flavor but you can use any flavor you prefer. Coat the pork chops with the shake n bake and then stuff them with the rice. They do not hold all the rice so I set aside the excess rice for a side dish. Then place the pork chops on a baking dish that was sprayed with butter flavored spray. Bake for 45 minutes.
- While the pork chops are baking make the mushroom sauce. Saute the mushrooms in butter. Add the white wine and flour to make a roue. Finally add the chicken broth and stir. The sauce will thicken. Add the shake n bake to flavor the sauce. If it is too thick for your taste then add more chicken broth.
- Once the pork chops are done put them on a plate and cover in the sauce.

- Preheat oven to 400.
- In a skillet, lightly brown the Rice A Roni in the butter (keep flavor pack aside).
- Add and brown the ground beef, crumble finely.
- Stir in hot water.
- Add contents of the beef flavored packet that came with Rice A Roni.
- Add salt & pepper and mix.
- Cover and simmer for 15min on low.
- Cool slightly.
- Stir in 2 well beaten eggs.
- Fill pie shell with mixture.
- Top with bacon slices.
- Bake for 20 minutes.
- note: the bacon cooking on top of the pie is used to add flavor, but does not get crisp. You can brown the bacon slightly before adding it if you like.
