1/2 cup walnuts halves
1/2 cup non-fat yogurt
2 tablespoons light mayonnaise
2 tablespoons minced fresh flat-leaf parsley
1 teaspoon honey
1/2 lemon, zest finely grated
Freshly ground black pepper
2 large crisp apples, such as Gala
2 ribs celery (with leaves), sliced into 1/2-inch-thick pieces (leaves chopped)
1/4 cup golden raisins
1/2 lemon, juiced
1 head Boston lettuce, trimmed, washed, and dried

Steps:

  • Preheat the oven to 350 degrees F.
  • Spread the nuts on a baking sheet and toast in the oven for 8 to 10 minutes. Cool and break the nuts up into small pieces.
  • Whisk the yogurt, mayonnaise, parsley, honey, and lemon zest in a large bowl and season generously with pepper.
  • Halve, core, and cut the apples into 3/4-inch pieces, leaving the skin intact. Add the apples, celery and raisins to the bowl, and sprinkle with the lemon juice; then toss with the dressing. Cover and refrigerate if not serving immediately.
  • When ready to serve, toss walnuts into the salad. Arrange the lettuce leaves on a large platter, or divide them among 4 salad plates. Place the salad on the lettuce and serve.

This is the original Waldorf Salad recipe which I clipped out of the newspaper several years ago. My mother made this salad often--it must have been a favorite of hers also. Newer versions have left out some of the ingredients which add variety in texture and taste. It's a classic American salad which was developed by the Waldorf Astoria Hotel in New York City.

2 cups diced unpared apples
1 cup diced celery
1 cup sliced red grapes
1 banana, halved lengthwise and thinly sliced
1 cup miniature marshmallow
1/2 cup chopped walnuts
1 tablespoon lemon juice
1 cup mayonnaise
1 tablespoon sugar
2 tablespoons cream or 2 tablespoons half-and-half

Steps:

  • Combine first six ingredients; sprinkle lemon juice on top.
  • Combine gently--best to use your hands to mix.
  • Mix mayonnaise with sugar and cream and stir until sugar is dissolved.
  • Dress the salad with this.
  • Chill before serving.
  • Can be prepared several hours ahead of time if necessary.

Embellish this as you see fit, but I really like it best with just the four ingredients seen here. Things like dried cranberries can add a nice seasonal touch but, for me, the chewy fruit gets in the way of that addictive crunchy/crisp texture.

¾ cup mayonnaise
¼ cup creme fraiche
½ lemon, juiced
1 tablespoon finely chopped tarragon
½ teaspoon white sugar
¼ teaspoon salt
1 pinch freshly ground black pepper
1 pinch cayenne pepper
2 large crisp, sweet apples, cut into 1/2-inch cubes
1 cup cubed (1/4 inch) celery root, soaked briefly in cold water, drained well
1 cup quartered seedless green grapes
½ cup toasted walnut pieces

Steps:

  • Whisk mayonnaise, creme fraiche, lemon juice, tarragon, sugar, salt, black pepper, and cayenne together in a bowl.
  • Place apples, celery root, grapes, and walnut pieces in a large bowl. Toss with about 1/2 cup of dressing. Add more dressing until salad components are well coated but not swimming in dressing. You might not need all the dressing.
  • Serve immediately or cover and refrigerate for up to 24 hours.

¼ cup walnuts toasted*
⅓ cup 2% greek yogurt
2 teaspoon Lemon juice
Kosher salt to taste
Freshly ground black pepper to taste
2 cups chopped apples
¼ cup chopped celery
¼ cup Medjool dates seeds removed and cut into thin strips
¼ cup red grapes halved

Steps:

  • If toasting in the oven (I like to use my toaster oven), preheat oven to 350 degrees.
  • Spread out on evenly on a baking sheet. Make sure the nuts aren't overlapping each other.
  • Toast for 5 - 7 minutes, checking often to avoid burning.
  • Walnuts are ready when they are slightly darker.
  • If toasting on a stove top, place the walnuts in a small, dry pan over medium heat. Toast for 1 - 2 minutes.
  • In a large bowl, mix together yogurt, lemon juice, salt and pepper.
  • Add apples, celery, red grapes and dates. Mix well and serve immediately.

1/2 cup plain yogurt
3 tablespoons mayonnaise
1 cup walnuts, roughly chopped and toasted
2 tablespoons finely chopped chives
2 tablespoons lemon juice
1 teaspoon kosher salt
1/2 teaspoon ground black pepper
2 cups Poached Chicken, recipe follows
1 1/2 cups thinly sliced celery
1 cup red seedless grapes, halved
1/4 cup golden raisins
2 apples, cored and cut into 1/2-inch pieces
12 leaves Bibb lettuce
2 stalks celery, roughly chopped
2 onions, roughly chopped
1 carrot, peeled and chopped
1 cup white wine
2 pounds bone-in chicken legs
4 cups chicken stock, plus more if needed

Steps:

  • Whisk together the yogurt, mayonnaise, lemon juice, salt and pepper until smooth. Add in the Poached Chicken, celery, grapes, raisins and apples. Mix until the salad is coated in the dressing. Line the bottom of four serving bowls with 3 leaves lettuce. Divide the salad evenly among the bowls, over the lettuce. Sprinkle the walnuts on top of the salads and finish with the chives to serve.
  • Place the celery, onions, carrots and wine in a large saucepot set over medium-high heat. Bring to a simmer and cook until the liquid reduces by half, 5 minutes. Add the chicken, and then pour enough stock to cover, adding more if needed. Bring to a simmer and cook until the meat falls off the bone, 30 to 45 minutes.
  • Remove the chicken to a baking sheet and cool. Strain and reserve the broth for another use, like a soup or sauce. Cool the chicken, then shred the meat.

1 1/4 pounds Red Delicious Apples
5 ounces celery
3 ounces mayonnaise
2 ounces chopped walnuts
1/2 squeezed lemon, to taste
Garnish with: orange segments, berries, kiwi, small vegetable flowers

Steps:

  • Peel, core and medium dice the red delicious apples. Apples start with approximately 2 pounds of apple to yield 1 1/4 pounds of diced apple. Place in a mixing bowl and mix with the lemon juice. This will keep the apple from discoloring. Before dicing the celery, blanch it in boiling water for 60 seconds and cool it with cold water. This will bring out the sweet flavor and extend the salads shelf life. Combine diced apple, lemon juice, mayonnaise, celery and chill. Serve on a bed of lettuce topped with walnuts and add a simple fruit garnish. Traditionally this is also served with tiny sweet finger sandwiches. (Example: date nut bread and raspberry jam.)
  • Serve with: Boston or Romaine leaf lettuce .

1/4 cup nonfat plain yogurt
2 tablespoons orange juice
2 teaspoons grated orange peel
1/2 teaspoon Cajun seasoning
1 head romaine lettuce
1 grapefruit
1 firm but ripe Bosc pear, peeled, cored, diced
1 tart green apple (such as Pippin), peeled, cored, diced
1 cup seedless grapes, halved
1/3 cup chopped dates
1/4 cup pine nuts, toasted

Steps:

  • Mix mayonnaise, yogurt, orange juice, orange peel and Cajun seasoning in small bowl to blend. (Dressing can be prepared 1 day ahead. Cover and refrigerate.)
  • Line large bowl with large outer leaves of lettuce. Chop enough remaining leaves into bite-size pieces to measure 6 cups (reserve remaining lettuce for another use). Place chopped lettuce in another large bowl. Using small sharp knife, cut off peel and white pith from grapefruit. Cut between membranes to release grapefruit segments. Cut segments in half. Place in bowl with chopped lettuce. Add diced pear, diced apple, halved grapes and chopped dates. Add dressing to salad and toss to coat.
  • Transfer salad to leaf-lined bowl. Sprinkle salad with pine nuts and serve.

A refreshing, low fat, no mayonnaise waldorf salad. My mom used to make a version of this in the '50's. This is so good and good for you. The first time you make this, I would add the vinegar a little at a time to get the tartness that's right for you. If you don't like vinegar you can substitute lemon juice or a combination of both.

4 Red Delicious apples, unpeeled, cored and diced
1 golden delicious apple, unpeeled, cored and diced
1 cup celery, finely diced
1 cup walnuts, chopped
1 (5 ounce) can pineapple tidbits, juice reserved
1 (5 ounce) jar maraschino cherries, juice reserved
1 cup Best Foods Mayonnaise (you may need more)

Steps:

  • In a large bowl, put diced apples, diced celery, drained pineapple, chopped cherries (about 1/2 the jar or as desired), and chopped walnuts. In a small bowl, mix together mayonnaise, 3 Tblsp. pineapple juice, and 2 Tblsp. cherry juice. Stir well and add more mayonnaise to get the right consistency. It should be like bottled salad dressing or a tad thinner. Mix with apple mixture, stirring until well coated. Chill, covered until serving time (about 1 hour). I never measure this so the amounts are a guess. You can use more or less of any of the ingredients.
