RHUBARB AND CHERRY CRUMBLE



Rhubarb and Cherry Crumble image

The perfect dessert to please anyone, any season. This combo of fresh rhubarb and cherries with a crunchy, rich oat topping is the perfect bite. Add a scoop of ice cream and savour every spoonful.

6 cups rhubarb, chopped into smaller chunks
2 cups cherries, pitted and sliced. (These can be fresh or frozen)
1/4 cup lemon juice
1/4 cup white sugar
3/4 cup brown sugar
1 cup CUT flour
1 cup gluten-free rolled oats
1/4 cup white sugar
1 tbsp cinnamon
1/2 cup butter melted

Steps:

  • Preheat oven to 350°F
  • Chop rhubarb and slice cherries.
  • Add lemon juice and white sugar to rhubarb and cherries.
  • Stir to combine. Pour into 8x8" pan.
  • Mix CUT Flour and all the dry crumble ingredients into large bowl.
  • Pour melted butter into dry ingredients and using a fork stir to combine. It will look like a 'crunchy oatmeal'.
  • Spread crumble over top of fruit in pan.
  • Bake in oven for 45 minutes.
  • Let cool approximately 5-10 minutes.

2 cup(s) Uncooked rhubarb cut into bite-size pieces
2 cup(s) Cherries pitted, fresh or frozen, thawed (halved if large)
0.5 cup(s) Preserves cherry variety
10 tbsp(s) All-purpose flour divided
0.5 cup(s) Uncooked rolled oats
0.333 cup(s) Packed brown sugar dark variety
0.5 tsp(s) Ground cinnamon
0.25 tsp(s) Freshly grated nutmeg or less to taste
0.25 tsp(s) Table salt or to taste
4 tbsp(s) Unsalted butter chilled

Steps:

  • Preheat oven to 375ºF.
  • In a large bowl, combine rhubarb, cherries and preserves. When fruit is well coated, add 2 tablespoons flour; stir to combine. Spoon fruit into a 2-quart baking dish; set aside.
  • In another bowl, combine remaining 1/2 cup flour, oats, sugar, cinnamon, nutmeg and salt. Cut butter into small pieces and work it into flour mixture with a fork until it resembles coarse crumbs.
  • Spoon crumb topping over fruit and bake until fruit begins to bubble, about 25 to 30 minutes. Cool for 10 to 15 minutes. Yields about 3/4 cup per serving.

1 cup white sugar
3 tablespoons cornstarch
1 cup cold water
1 (21 ounce) can cherry pie filling
½ teaspoon almond extract
4 cups chopped fresh rhubarb
1 cup all-purpose flour
1 cup rolled oats
1 cup packed brown sugar
¼ teaspoon salt
½ cup margarine or butter
¼ cup finely chopped pecans or walnuts

Steps:

  • In a saucepan over medium heat, stir together the cornstarch and sugar. Stir in the water. Cook, stirring constantly, until thick and bubbly. Stir in the cherry pie filling and almond extract. Set aside to cool.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • In a medium bowl, mix together the flour, oats, brown sugar and salt. Cut in margarine until the mixture is evenly crumbly. Press 2 cups of this mixture into the bottom of a 9x13 inch baking dish. Spread the rhubarb over the crust, then spread the cherry mixture over the rhubarb. Stir the chopped nuts into the remaining crumb mixture, and sprinkle over the top of the fruit.
  • Bake for 40 minutes in the preheated oven, or until the top is crisp and golden. Serve warm topped with ice cream or whipped topping.

Use summer cherries to make this easy oat-topped crumble. Perfect with a scoop of vanilla ice cream, it makes a superb summertime dessert

1kg fresh cherries , pitted
50g golden caster sugar
1 lemon , juiced
½ tsp vanilla extract
150g plain flour
100g cold butter
½ tsp salt
70g soft brown sugar
100g rolled oats
40g flaked almonds
ice cream , to serve

Steps:

  • Tip the cherries into a medium-sized ovenproof dish (around 28cm) and mix with the sugar, lemon and vanilla. Set aside.
  • Heat the oven to 200C/180C fan/gas 4. Tip the flour and butter into a mixing bowl and rub together with your fingertips to create a fine, breadcrumb-like mixture. Stir through the salt, brown sugar, oats and most of the almonds. Tip over the cherry mixture, then top with the remaining almonds.
  • Bake the crumble in the centre of the oven for 30-35 mins or until the topping is golden brown. Serve warm with vanilla ice cream.
