I make this Reuben for my husband...hope you will enjoy it. Serve with coleslaw or potato salad.

8 slices rye bread
¾ cup thousand island dressing
1 (16 ounce) can sauerkraut, drained
8 slices Swiss cheese
8 slices pastrami
¼ cup margarine, softened

Steps:

  • Spread each slice of bread with thousand island dressing. Top 4 of the bread slices with sauerkraut, cheese and pastrami. Place remaining bread slices on sandwich. Spread margarine on the outsides of each sandwich.
  • Heat a large skillet over medium high heat. Grill until browned, then turn and grill until heated through, and cheese is melted.

2 tablespoons butter
8 slices rye bread
8 slices deli sliced corned beef
8 slices Swiss cheese
1 cup sauerkraut, drained
½ cup Thousand Island dressing

Steps:

  • Preheat a large skillet or griddle on medium heat.
  • Lightly butter one side of bread slices. Spread non-buttered sides with Thousand Island dressing. On 4 bread slices, layer 1 slice Swiss cheese, 2 slices corned beef, 1/4 cup sauerkraut and second slice of Swiss cheese. Top with remaining bread slices, buttered sides out.
  • Grill sandwiches until both sides are golden brown, about 5 minutes per side. Serve hot.

6 ounces corned beef, sliced
1/4 cup sauerkraut, rinsed and drained
2 slices swiss cheese
4 slices rye bread, toasted
thousand island dressing
mustard (optional)

Steps:

  • On a medium-size microwave-safe dinner plate, mound corned beef in 2 piles.
  • Top each pile of meat with the sauerkraut.
  • Micro-cook, uncovered, on 100% power (high) 3 to 4 minutes or until heated.
  • Top each pile with a cheese slice.
  • Cook, uncovered, on high 1 to 2 minutes more or till cheese is melted.
  • Meanwhile, place toasted bread on individual plates.
  • Spread one side of bread slices with salad dressing or mustard.
  • To serve, use a wide spatula to transfer each mound of meat to the dressing side of 2 bread slices.
  • Top with remaining bread slices, dressing-side down.

2 teaspoons yellow mustard
1 teaspoon worcestershire sauce

4 slices rye sandwich bread
1 cup suerkraut
½ lb corned beef, sliced
4 slices swiss cheese

Steps:

  • Make the Russian dressing: In a small bowl, whisk together the mayonnaise, ketchup, pickle relish, mustard, Worcestershire sauce, and paprika.
  • Make the sandwich: On a cutting board, spread ½ tablespoon of butter on one side of each slide of bread. Flip the bread slices over so that the buttered side is face down. Spread 1 tablespoon of Russian dressing on each slice. Add ¼ pound corned beef to 2 of the slices of bread. Top the corned beef with ½ cup of sauerkraut and 2 slices of Swiss cheese. Place the other slice of bread on top, buttered side out.
  • Heat a large pan over medium-low heat. Once the pan is warm, add the sandwiches and cook, without moving, until golden brown, 2-3 minutes. Carefully flip the sandwiches over and continue cooking until the bread is golden brown and cheese has melted, 2-3 minutes more.

I have always liked corned beef & sandwiches made with it... Reuben's would be the deluxe of such sandwiches IMO. After finding Mike Mills' Crunchy Cole Slaw recipe in his book & adapting it (posted on this site), I thought that I would experiment with a Reuben using the crunchy slaw instead of sauerkraut! I was actually a bit stunned by how good the results turned out... I deemed it "the YOUNG Reuben" since the slaw is not aged like sauerkraut! Cole slaw & Reuben lovers might enjoy this variation of the sandwich! Recipe is for one sandwich... easily multiplied for more servings.

4 ounces lean thinly sliced deli corned beef
2 ounces swiss cheese (1-ounce slices)
2 slices rye bread, of choice (i prefer jewish rye with caraway seeds)

1 1/2-2 tablespoons thousand island dressing (to taste)

Steps:

  • Set corned beef, swiss cheese, cole slaw, & butter out to come to room temp, OR (to SHORTEN prep time to 20 minutes) gently warm each ingredient in microwave on low power to take off the chill so that the sandwich will be hot inside once grilled.
  • Assemble the sandwich:.
  • Place a slice of swiss on one piece of rye bread.
  • Next place 4 oz of corned beef atop the swiss cheese.
  • Top the corned beef with thousand island dressing & 1/3 c Mike Mills' Crunchy Cole Slaw.
  • Top the slaw with another slice of swiss cheese.
  • Place the remaining slice of rye atop the sandwich.
  • Butter the top of the sandwich and place DOWN in a skillet heated to Medium heat on the stove burner --.
  • butter the (now) top of the sandwich while the bottom browns for a few minutes. (Lift gently with a spatula to check browning and turn when ready -- do not scorch!).
  • Turn sandwich and brown the other side.
  • Serve HOT with dill spear, and chips or french fries if desired.
  • Note: the sandwich can actually be built in layers right in the skillet as the one side (bottom) browns IF you have all the other ingredients "warm" and staged for assembly. Tricky the first time but actually easier once you get the hang of it.

  • 1. Preheat a large skillet or griddle on medium heat.

  • My Update Notes: I drained the sourkraut but didn't rinse it, because we like the tangy taste of the sourkraut. I buttered rye bread slices on one side and spread Thousand Island dressing on the other side. On the dressing side I placed a slice of swiss cheese, sliced Pastrami from the deli and then topped with sourkraut. I cooked them on my grill until the cheese was melted and the bread was nice and toasted. They were delicious! I only gave the four star rating because the sourkraut in the middle wasn't very warm. Next time I make these I will warm the sourkraut in the microwave first and maybe add another slice of swiss too! I made was to heat the sauerkraut in the microwave for 20 seconds before adding to the sandwich. I like my sandwich warmed all the way through. I would recommend keeping a good eye on your bread and toast it to your liking. If you like Rueben sandwiches you will love this one!

1 teaspoon salted butter, softened
2 slices pumpernickel bread
3 slices Swiss cheese
2 teaspoons Thousand Island salad dressing
4 slices deli sliced corned beef
¼ cup sauerkraut, drained
1 large dill pickle, sliced

Steps:

  • Preheat a large skillet or griddle over medium heat.
  • Lightly butter one side of each bread slice. Place buttered-sides down on the preheated skillet. Place 1 1/2 pieces of Swiss cheese on top of each bread slice, then spread Thousand Island on top.
  • While sandwich halves are toasting, place corned beef on one side of a microwave-safe plate and sauerkraut on the other side. Cover with a dampened paper towel and microwave on high for 90 seconds.
  • Remove bread from the skillet. Add hot corned beef and sauerkraut and close to form a sandwich.
  • Serve with dill pickle.
