BAKED CHICKEN REUBEN
This is a great make-ahead dish from Marcia Adams of Fort Wayne, Indiana. It took the top $10,000 prize in the National Chicken Cooking Contest in Dallas, Texas. It sounds weird, but it is good.

Steps:
- Preheat oven to 325 degrees F.
- Place chicken in a lightly greased 9x13 inch baking dish.
- Sprinkle with salt and pepper.
- Place sauerkraut over chicken and top with cheese slices.
- Pour dressing over all and cover dish with aluminum foil.
- Bake in preheated oven for 90 minutes, or until chicken is cooked through (fork can be easily inserted and juices run clear).
- Sprinkle with chopped parsley and serve.

Steps:
- 1. Preheat oven to 400 degrees and unroll pastry sheet onto large baking sheet that has been sprayed wtih cooking spray.
- 2. Lay swiss cheese on pastry sheet then top with corned beef and then sauerkraut.
- 3. Roll up starting with the long sides.
- 4. Cut into 1/4" rounds and place 2" apart on the baking sheet.
- 5. Bake for 10 minutes, remove, sprinkle with caraway seeds and return to the oven baking another 5 minutes. Serve with thousand island dressing as a dipping sauce.
GREAT ROUND REUBEN
From the outside this looks like a loaf of bread but when it's sliced every piece is like a Reuben sandwich. Onion-rye bread, filled with corned beef, swiss cheese, sauerkraut and mustard. There's a bit of work here, but you can make it up ahead of time to avoid a last minute rush. The preparation time is approximate, it really depends on how quickly your bread rises.

- Bring milk almost to a boil in a small saucepan, then remove from the heat and let cool until warm.
- Dissolve the yeast and 1 tbs sugar in warm water in the bowl of a heavy-duty mixer.
- Let stand for 2 minutes until a foam forms.
- Add 3 tbs sugar, both flours, vitamin C, salt and milk.
- Mix for 5 minutes on a low-medium speed until dough is elastic.
- Add 4 tbsp (1/4 cup) oil, onion and caraway seeds.
- Mix until well blended.
- The dough should be soft.
- Add a little bread flour if too wet or a little water if too dry.
- Place the dough in an oiled bowl and turn to coat well with oil.
- Cover and let rise until doubled.
- Remove the plastic and punch down the centre of the dough with a closed fist.
- Pull the dough out of the bowl, knead lightly and then shape into a smooth round.
- Cover with plastic wrap and leave on the counter for 15 minutes.
- The dough can now be shaped or, if desired, refrigerated overnight.
- Spray an 18 inch round pizza pan with nonstick cooking spray.
- Place a shelf in a slot slightly below the middle of the oven and preheat to 375 F or 190 C.
- Reserve a third of the dough.
- Divide the remaining two thirds into three pieces-- a big piece, a medium sized one and a little piece.
- Oil a rolling pin and roll out the largest piece into a large cirle.
- Place on the pizza pan.
- Spread the dough circle lightly with dijon mustard.
- Cover with slightly less than half the corned beef, sauerkraut and thousand island dressing.
- Cover with a thin layer of cheese.
- Roll out the medium piece of dough into a circle about an inch smaller in diameter than the first circle and place on top of the first layer on the pan.
- Cover the second layer in the same way as the first, but saving a bit of each ingredient for the final layer.
- Roll out the small piece of dough and repeat as before.
- Now, roll the reserved third of the dough into a circle large enough to cover the Reuben completely.
- Wrap the dough across a rolling pin, lift and transfer to the layered Reuben.
- Tuck the top dough under the bottom layer of the dough all around the edges.
- Glaze the loaf with beaten egg and sprinkle lightly with coarse salt.
- Slash the centre in a daisy pattern.
- Do not let rise.
- Brush the bread again with beaten egg and place the pan in the oven.
- Bake until well browned, about 50-60 minutes.
- Place on a rack to cool.
- You can also assemble the Reuben ahead of time, then wrap it well in foil or a ziplock bag and keep it in the fridge or freezer.
- If frozen, defrost overnight in the fridge.
- To reheat, wrap in foil and heat in a 300 F or 150 C oven for 30 minutes.
R&R'S REUBEN BALLS
I am not a fan of the typical Reuben sandwich, but many of my family and friends are. So I found a way to please everyone, including myself, with this concoction. I absolutely love these, and could eat them daily, which is the nice thing about this recipe. They can be prepared all the way up until the fry-time, but then frozen to use "as needed/wanted"... (in the directions below) for up to a month. These make for a fantastic appetizer for a party/gathering, or for an afternoon/midnight snack! (see freezing instructions). Fry up 3 for yourself as a late night binge, or fry up 20 for unexpected guests. I hope you enjoy these as much as we do. (Please just be sure to read the directions carefully, so they are as delicious for you and yours as they are for us). *NOTE: Prep time includes refrigeration time. Also, using ingredients 1-5 and steps 1 & 2, you can easily make this into a creamy spread for cocktail rye (or whatever makes you happy), just microwave the mixture for a few seconds

- Pour the canned sauerkraut into a colander, "drain" and "lightly rinse" under running water. (If using fresh kraut, you may not need to rinse, your choice). Using your hands, "squeeze" as much water out as possible. Place kraut on a cutting board, pat it "dry" with paper towels, and chop it up finely. (It is very important to do the "drain, rinse, squeeze and dry", otherwise they will not cook properly or be too tasty)!
- Crumble the canned corned beef into a large bowl, add the 2 cheeses, chopped up sauerkraut and dried onions. Using your hands, mix (smoosh) it all together (like your making a meatloaf). Cover the bowl with plastic wrap and place in the fridge for at least 1 hour, to let mixture get firm and the dried onions to soften.
- In the meantime, place 3 plates and 1 bowl on the counter to make an assembly station.
- Plate #1: flour, Bowl: milk, Plate #2: dried bread crumbs, Plate #3: just somewhere for your balls to hang out while waiting for the fry.
- When the meat has been chilled for about an hour and has firmed up a bit, start making BALLS! I usually try to do 1" size. Roll some in your hands, toss 'em in the flour, dunk them in the milk, roll thru the bread crumbs and set them on Plate #3! Easy peasy, but messy! Just be sure that each of these steps are completely covering your balls.
- This is where you can choose to fry them right away, or put them on cookie sheet and place in freezer for an hour, and let them freeze thru. Then toss them all in zip-lock baggies to use as a "when needed" basis. Just be sure to let them rest on the counter from freezer to fry (DO NOT try to defrost in microwave).
- Frying: Heat up the oil over med-high heat.The oil should be hot enough to make a pinch of the flour we used bubble. (I never use a thermo, I always just guess at the temperature. One sacrificial ball goes in at the start of the fry)! Depending on the size of your pot of oil, DO NOT over-crowd it, or the oil temp will drop, and you will end up with very greasy balls (that is why I test one first). Make batches at a time. They will stay hot for a very long time. Fry for approx 1 - 2 mins, turning with a slotted spoon, until the coating gets browned (DO NOT burn them, they will taste "icky" then)! Place on a paper towel lined plate to drain.
- I serve these with cups of Thousand Island dressing (or Russian) for a dipping sauce, but I don't eat the balls with either. Plain is fine by me! I hope you enjoy these as much as we do.
REUBEN SANDWICH II
These sandwiches are really delicious and easy to make. They are one of my family's fix-it-quick favorites. I like to serve them with big bowls of steaming vegetable soup and dill pickles on the side. Enjoy!

- Preheat a large skillet or griddle on medium heat.
- Lightly butter one side of bread slices. Spread non-buttered sides with Thousand Island dressing. On 4 bread slices, layer 1 slice Swiss cheese, 2 slices corned beef, 1/4 cup sauerkraut and second slice of Swiss cheese. Top with remaining bread slices, buttered sides out.
- Grill sandwiches until both sides are golden brown, about 5 minutes per side. Serve hot.
