SWEET AND SPICY GRILLED SALMON



Sweet and Spicy Grilled Salmon image

The decadent-tasting "good" fat in salmon complements the sweet-spicy Buffalo glaze. The skin gets caramelized and crisp on the grill as the sauce drips onto it. It's delicious, but can be discarded to save fat and calories. (The numbers below include the skin.) A crisp and refreshing celery slaw is dressed with the same sauce, made creamy with light mayo, and brightened with onions and chives.

2 tablespoons hot sauce, such as Frank's
1 tablespoon packed dark brown sugar
1 teaspoon smoked paprika
1/4 teaspoon cayenne pepper
2 tablespoons light mayonnaise
1 tablespoon snipped chives
8 stalks celery, very thinly sliced in half moons on an angle
1/2 small red onion, very thinly sliced
Four 5-ounce center-cut skin-on salmon fillets, about 1-inch thick
Kosher salt and freshly ground black pepper
Vegetable oil, for oiling the grill

Steps:

  • Preheat an outdoor grill or grill pan on medium high.
  • Mix together the hot sauce, brown sugar, paprika and cayenne in a small bowl. Transfer 1 tablespoon of the mixture to a large bowl and whisk in the mayonnaise; set aside the rest of the sauce. Add the chives, celery and onions to the bowl with the mayonnaise and toss well.
  • Sprinkle the salmon with salt and pepper. Brush the grill grate lightly with oil. Lay the salmon on the grill, skin-side up, and cook until distinct grill marks appear and the salmon releases easily from the grate, 2 to 3 minutes. Turn and brush the fish with some of the reserved sauce. Continue to cook the fish, brushing the pieces periodically with the sauce, until the salmon fillets are glazed and just cooked through, 13 to 15 minutes more.
  • Transfer the fillets to individual plates and serve with the celery slaw.

A Nicoise-inspired main-course salad (tossed with grilled salmon, eight-minute eggs, fresh sugar snap peas, watercress, and boiled new potatoes) is a reliable crowd-pleaser.

8 anchovies packed in olive oil, drained
1 teaspoon Dijon mustard
1 teaspoon finely grated lemon zest, plus 3 tablespoons fresh juice
1/2 cup plus 2 teaspoons extra-virgin olive oil, plus more for brushing
Coarse salt and freshly ground pepper
12 ounces very small new potatoes
1 1/4 pounds skin-on salmon fillet (about 1 3/4 inches at thickest part)
12 ounces sugar snap peas, trimmed
6 large eggs
3 cups watercress, trimmed

Steps:

  • Mash anchovies with a spoon in a small bowl. Add mustard and 2 tablespoons lemon juice. Gradually whisk in 1/2 cup oil. Season with salt and pepper.
  • Cover potatoes with 2 inches water in a pot. Add 1 tablespoon salt. Bring to a boil, then reduce to a simmer and cook until knife-tender, about 12 minutes. Drain. Let stand until cool enough to handle, then halve potatoes.
  • Heat grill to medium-high. Brush salmon lightly with oil, sprinkle with zest and remaining 1 tablespoon lemon juice, and season with salt and pepper. Brush grill grates with oil, then place salmon on grill, skin-side down. Cook until skin is crisp and browned, about 6 minutes a side for medium-rare, 8 minutes a side for medium. Remove from grill.
  • Place a wire rack on grill (or use a vegetable grill basket). Toss snap peas with remaining 2 teaspoons oil, transfer to rack, and grill, tossing frequently with tongs, until charred in spots, 3 to 5 minutes. Remove from grill.
  • Meanwhile, bring a pot of water to a boil. Gently lower eggs into pot; simmer 8 minutes. Drain, then run under cold water to stop cooking; peel and halve.
  • Pour half of dressing into a serving bowl. Add potatoes; toss to coat. Add watercress and toss again. Flake salmon into large pieces; add to bowl. Top with eggs and peas and serve, with remaining dressing on the side.

This is a combination of two recipes from the June/July issue of "Light & Tasty" magazine. I have been experimenting with different ways to cook salmon. This is the one I will use from now on......my family just loved it!!!

1 tablespoon olive oil
1 teaspoon sesame oil
2 tablespoons brown sugar
2 tablespoons chili powder
2 teaspoons paprika
1 teaspoon garlic powder
2 teaspoons ground cumin
1/4 teaspoon dried oregano
1/4 teaspoon basil
1/4 teaspoon thyme
1 teaspoon salt
1 (2 lb) salmon fillets

Steps:

  • Combine olive oil and sesame oil together.
  • Brush both sides of salmon with oil mixture.
  • In a small bowl combine all of the seasonings.
  • Rub over salmon fillet, covering both sides, pressing seasonings down into flesh.
  • Refrigerate for at least 30 minutes.
  • Coat grill rack with nonstick cooking spray before starting the grill.
  • Grill salmon fillet uncovered, over medium heat for 3-4 minutes on each side, or until fish flakes easily with a fork.

HEARTS OF PALM SALAD

2 tablespoons rice wine vinegar
1 tablespoon soy sauce
3 scallions, white and tender green parts only, chopped
1/8 teaspoon ground black pepper
1/2 teaspoon salt
1/2 cup extra-virgin olive oil
32 ounces canned hearts of palm or 2 pounds fresh hearts of palm
1 large red onion, julienned
1 red bell pepper julienned
1 fresh mango, peeled, cut away from the seed and julienned

Steps:

  • Through the feed opening of a running blender add, 1 at a time, vinegar, soy sauce, scallions, black pepper, and salt. Then leaving the blender running, add the olive oil in a slow thin stream.
  • Toss together the hearts of palm, onion, bell pepper, and mango. Stir in enough of the dressing to coat, and serve any additional dressing on the side.

2 (6-8 ounce) skinless salmon fillets, cut into bite-size pieces
Olive oil (about 1 tablespoon)
Salt
Black pepper
Couple pinches of cayenne, to your liking
1/2 teaspoon orange zest
1 tablespoon honey
1 tablespoon orange juice (squeezed from a fresh orange, preferably)
1/2 teaspoon Meyer lemon juice (or regular lemon)
1 medium-large heart of romaine, chopped finely
6 ounces thin asparagus (bottom of stalk trimmed), chopped into small pieces
1/2 fennel bulb, cored, sliced and chopped
8 Brussels sprouts, halved and shaved thinly
1 (15 ounce) can organic chickpeas
2 hearts of palm stalks, chopped
1 tablespoon fresh orange juice from an orange
1 tablespoon fresh Meyer lemon juice (or regular lemon)
1 teaspoon finely minced shallot (about 1/2 of a medium shallot)
1 teaspoon Dijon mustard
1 teaspoon honey
1/2 teaspoon orange zest
1/2 teaspoon Meyer lemon zest (or regular lemon)
Salt
Black pepper
6 tablespoons olive oil

Steps:

  • Begin by gathering and prepping all of your salad ingredients according to the ingredient list above to have ready and organized for use.
  • To prepare your salmon, add the pieces to a bowl and drizzle in about a tablespoon of olive oil, along with a couple of pinches of salt and pepper, plus the cayenne, orange zest, honey, and orange and Meyer lemon juice. Allow the salmon to marinate for 20 minutes (can be done overnight, as well), while you prep your salad and vinaigrette.
  • Add all of your salad ingredients to a large bowl, and keep cold while you prep your vinaigrette and grill your salmon.
  • Gather and prep all of your vinaigrette ingredients according to the ingredient list above to have ready and organized for use.
  • To prepare your citrus vinaigrette, add all of the ingredients to a mason jar with a tight fitting lid, and shake vigorously until completely combined and emulsified. Check to see if any additional salt/pepper is needed. Set aside for a moment.
  • To grill your salmon, place a grill pan over medium-high heat. Once hot, add in the chunks of salmon, working in batches if necessary, and grill the pieces for about 1-2 minutes per side, or until cooked through to your liking. Place onto a plate to hold.
  • To assemble, add the grilled salmon chunks to the chopped salad ingredients, and drizzle in some of the vinaigrette, to your liking. Gently toss to combine everything well, then divide among two plates or shallow bowls, and garnish with an extra lemon or orange slice, if desired.

¼ cup lemon juice
4 green onions, thinly sliced

3 pounds salmon fillets

Steps:

  • Combine olive oil, lemon juice, green onions, parsley, rosemary, thyme, salt, black pepper, and garlic powder in a small bowl. Set aside 1/4 cup of the marinade.
