1/2 tablespoon potato starch (or cornstarch)
7 ounces of water
3 1/2 ounces ketchup (or 2 to 3 tablespoons tomato paste)
3 1/2 ounces rice vinegar
3 1/2 ounces rock sugar (You can also use superfine sugar or demerara sugar, but rock sugar is preferable for taste)
Salt (to taste)

Steps:

  • Gather the ingredients.
  • Mix the potato starch with 1 tablespoon of water (or a little more, as needed) to make a slurry.
  • Add all of the ingredients to a saucepan and mix evenly before you start cooking.
  • You must continuously stir the sauce to prevent the sauce from getting lumpy.
  • Bring the sauce to a boil and turn the heat to the lowest temperature and simmer until the sauce texture has turned thick and sticky. Then it's ready.
  • You can stir fry some pork or chicken with vegetables and pour the sauce in.
  • If you have any extra sauce, you can keep it in a dry and clean container after it is cooled down and store it in the fridge. Usually, this sauce should last 7 to 10 days in the fridge.

5 cups water
1 orange
1 lemon
2 or 3 slices fresh ginger
1 cup sugar
1/2 cup vinegar
1 cup ketchup
red food coloring if desired
3 tablespoons cornstarch
3 tablespoons water

Steps:

  • Wash the orange and the lemon well.
  • Slice the fruit and ginger and place the slices into a medium pot along with 5 cups of water.
  • Bring to a boil then reduce heat and simmer for 30 minutes.
  • Strain water with a sieve into a bowl.
  • Press the fruit into the sieve. You want to get all of the water released.
  • Place the water back into the pot and add 1 cup sugar, 1/2 cup vinegar, 1 cup ketchup, and a few drops of red food coloring (if using).
  • Whisk until well blended.
  • Heat the sauce over medium high heat.
  • Combine 3 tablespoons corn starch and 3 tablespoons cold water in a small bowl.
  • Slowly stream the corn starch liquid into the sauce, stirring constantly.
  • When the sauce thickens, remove it from heat.

1 teaspoon regular soy sauce
1/3 cup white vinegar
1/2 cup brown sugar, lightly packed
1 cup white sugar (can reduce a 2-3 tablespoons for a less sweeter taste)
3/4 cup cold water (or can use unsweetened pineapple juice or half each, I prefer the pineapple juice)
3 tablespoons cornstarch (for a thinner sauce reduce to 2 tablespoons, if you want an very thick sauce use 4 tablespoons)

Steps:

  • In a saucepan combine the first 5 ingredients until combined.
  • In a cup or bowl whisk the cold water with cornstarch or pineapple juice until smooth and combined, then whisk in ketchup mixture; bring to a boil stirring or whisking constantly over medium-high heat until bubbly and thickened (the sauce will continue to thicken more while simmering).
  • Cool slightly and use immediately or refrigerate.

3 tablespoons cornstarch
2/3 cup chicken broth
1/2 cup pineapple juice
1/3 cup ketchup
2 tablespoons rice wine
1/4 cup amaretto liqueur (or any almond liqueur)
1 tablespoon soy sauce
2 tablespoons Thai fish sauce (in the International food isle)
2 tablespoons rice vinegar
3 teaspoons gingerroot, minced
1/2 cup granulated sugar
1/4 cup light brown sugar (packed)
5 drops red food coloring

Steps:

  • In a medium size sauce pan add cornstarch, broth, pineapple juice, ketchup, rice wine, Amaretto, soy sauce, fish sauce, vinegar, ginger and sugars ; whisk to combine until smooth.
  • On medium heat, whisk mixture and bring to a boil until thickened. Add food coloring and mix inches Serve hot over favorite entree or side dish.
  • Cook's Note: You can use this recipe for canning for long term storage by doubling or tripling the recipe, also, if canning, you want to use 1 rounded tablespoon "Clear Jel" (cook type) in place of the cornstarch. (Can be purchased on Ebay.com).
  • For canning: Fill prepared jars to the 1/2" headspace, clean rims of jars (according to manufacturer's directions) and place a hot sterilized lid and rim on each jar, screw on "finger tight" and place in a large canner pot with enough water to cover 2 inches over the top of the jars.
  • Boil the filled jars, covered for 30 minutes, place on kitchen towel undisturbed, for several hours or overnight to allow jars to seal.
  • In the morning, wash and dry jars, then label and date them.
  • Makes 2 cups, or 1 pint = 2 x 1/2 pints.

1/4 teaspoon salt
2 tablespoons sugar
1 tablespoon ketchup
1/2 cup pineapple juice ((optional, reserved from canned pineapple))
3 tablespoons rice wine vinegar ((or red wine vinegar))
12 ounces boneless skinless chicken breast or thighs
1-2 tablespoons water
1/8 teaspoon garlic powder
1/4 teaspoon onion powder
1/2 teaspoon sesame oil
1/8 teaspoon white pepper
1/2 teaspoon salt
3/4 cup all purpose flour
1 tablespoon cornstarch
3/4 teaspoon baking powder
3/4 teaspoon baking soda
2/3 cup ice water
1 tablespoon vegetable oil ((or canola oil, plus more for frying))
2/3 cup canned pineapple chunks ((optional))
1 tablespoon oil
1/4 cup red onion ((cut into 1-inch/2.5cm chunks))
1/4 cup red bell pepper ((cut into 1-inch/2.5cm chunks))
1/4 cup green bell pepper ((cut into 1-inch/2.5cm chunks))
2 tablespoons cornstarch
2 tablespoons water

Steps:

  • Set aside ½ cup of pineapple juice from your can of pineapple, and reserve ⅔ cup of the pineapple chunks (if using). Set aside.
  • Combine the hot water, salt, sugar, and ketchup. Stir until the salt and sugar are dissolved, and then add the vinegar and pineapple juice (if using). If not using pineapple juice, replace with ½ cup water or chicken stock. Set aside.
  • Cut your chicken into uniform 1 inch chunks (for even cooking) and place into a bowl. Add the garlic and onion powders, sesame oil, white pepper and salt. Mix until all pieces are uniformly coated, and let it sit for 5 minutes. Any excess water should be fully absorbed by the chicken. If not, mix the chicken again and let it sit for another 5 minutes.
  • Mix together the all-purpose flour, cornstarch, baking powder, and baking soda in a bowl, and add 2/3 cup of ice water. Use a fork to mix until a batter is formed, and stir in 1 tablespoon of oil. Set aside.
  • The amount of oil you need depends on the size of the pot you will use. Using a larger pot uses more oil, but allows you to cook the chicken in fewer batches. Using a smaller pot uses less oil, but you'll have to fry more batches of chicken. We usually go for a smaller pot, so we have less leftover oil. Heat the oil in a small pot until it reaches 335°F/170°C.
  • Place 5 to 6 pieces of marinated chicken into the batter. Use a chopstick, fork, or your fingers to coat the chicken in the batter and place each piece slowly into the oil.
  • Use a slotted spoon to carefully turn the chicken so all sides are uniformly fried. Fry for about 2 minutes, or until the batter is a light golden brown and crispy. Remove with a slotted spoon and let any excess oil drain off before placing onto a rack or paper towel lined plate.
  • Heat 1 tablespoon canola oil in a wok over medium high heat, and add the red onion and peppers. Stir-fry for 30 seconds.
  • Next, add the sweet and sour sauce you prepared earlier and bring to a boil. Reduce the heat so the sauce is simmering.
  • Combine the cornstarch and water to make a uniform slurry. While stirring the sweet and sour sauce, drizzle the slurry in gradually until the sauce is thick enough to coat a spoon (you may not need all of the slurry). Turn down the heat and give the sauce a quick taste--now is the time to add more salt, vinegar or sugar if desired.
  • Add the pineapple chunks (if using) and stir until warmed through. Now is the time to refry the chicken to make them nice and crispy. Heat the oil up to 335°F/170°C and fry the chicken in two batches for about 45 seconds each time. Then add the chicken pieces to your sauce, and gently toss with your wok spatula until the chicken is coated. Serve immediately!

1-2 tablespoons soy sauce or GF tamari**
3/4 cup granulated sugar
2 tablespoons cornstarch

2-4 drops red food coloring (optional, but very recommended)

Steps:

  • Add pineapple juice, rice vinegar, soy sauce (see notes), and sugar to a sauce pan and whisk together. Set over medium-high heat and bring to a boil.
  • While you're waiting for the sauce to boil, mix together your cornstarch and water to make a slurry.
  • Once the sauce is boiling (big bubbles), add in the cornstarch slurry. Stir until thickened and then remove from heat.
  • Add in your food coloring. Do not add it in before this or it will lose some of it's vibrancy and you'll end up needing more.
  • Let cool at room temperature. Store in refrigerator.
