Number Of Ingredients 0

Steps:

  • Place lavender flowers in a small bowl. Pour boiling water over flowers and steep for 20 minutes. Strain and discard flowers.Prepare canner and wash/sterilize 6 half-pint mason (or equivalent) jars. Keep jars in hot (not boiling) water until ready to use. Warm lids in hot (not boiling) water to sterilize and soften seal.Combine lavender liquid, peaches, lemon juice, and sugar in a very large stainless steel or enamel saucepan. Bring to a full boil over high heat and boil hard for 2 minutes, stirring constantly. Remove from heat and stir in pectin.Ladle hot jam into jars, leaving 1/4-inch of headspace. Wipe jar rims and threads. Screw on lids and rings. Process in a boiling water bath for 10 minutes. Remove from water and let cool completely, 12 to 24 hours. Check seals. Any unsealed jars should be refrigerated and used within 3 weeks.

3 1/2 pounds peaches (8 to 10), peeled, halved, pitted, and cut into chunks
1 1/4 pounds sugar (scant 3 cups)
1 tablespoon plus 1 teaspoon fresh lemon juice
Coarse salt

Steps:

  • Working in batches, pulse peaches in a food processor until chunky. Transfer to a small saucepan, and add sugar, lemon juice, and 1/2 teaspoon salt. Bring to a boil, stirring frequently. Boil, continuing to stir, until bubbles slow, foam subsides, fruit rises to the top, and jam sticks to a spoon when lifted, about 12 minutes. Let cool. Refrigerate until completely cooled.

I have large lavender plants in my backyard and I wanted to post this for when the peaches come into season. Please use organic lavender (usually found in Farmer's Markets) to make this. You can also use other fruits like strawberries, raspberries, orange and lemon. For an added touch, place a small sprig on top of jam before sealing. From Topp and Howard's "Small Bath Preserving".

1 lime, rind of
2 tablespoons lavender flowers, dried
1/2 cup boiling water
4 cups peaches, finely chopped (about 5-6 medium peaches)
2 tablespoons lemon juice
6 cups granulated sugar
1 (6 ounce) envelope liquid fruit pectin

Steps:

  • Place lavender flowers in a small bowl. Pour boiling water over flowers and steep for 20 minutes. Strain and discard flowers.
  • Combine lavender liquid, peaches, lemon juice and sugar in a very large stainless steel or enamel saucepan. Bring to a full boul over high heat and boil hard for 2 minutes, stirring constantly. Remove from heat and stir in pectin.
  • Ladle into sterilized jars and process in a hot water bath for 5 minutes.

5 1/2 cups sugar
6 cups fresh peaches
2 tablespoons lemon juice
1 3/4 ounces pectin
1 tablespoon Bourbon
1 teaspoon vanilla extract

Steps:

  • Peel, pit and chop peaches.
  • In saucepan combine peaches,lemon juice, and pectin.
  • Cook over high heat stir constantly about 5 minutes or until full rolling boil.
  • Stir in sugar.
  • Return to a full rolling boil.
  • Boil hard for (1) minute stir constantly.
  • Remove from heat and add vanilla extract and bourbon (bourbon is optional).
  • Skim off foam.
  • Ladle in hot sterilzed jars process in boiling bath 5 minutes.
