HEALTHY CHOCOLATE GRANOLA RECIPE
This healthy chocolate granola recipe is super simple to make, loaded with tons of granola clusters (the best part!), oats, and almonds. It is lower in sugar than your average granola, but still with the perfect sweetness. Get double the chocolate with cocoa powder and mini chocolate chips in the recipe. Made with gluten-free ingredients, easy to prep, and perfect to serve the fam for a quick breakfast.

- Pre-heat the oven to 325 degrees.
- In a small pot over low heat, add the cacao butter to melt (or melt in the microwave). Once it is melted, add the maple syrup, almond butter, and vanilla. Whisk to combine.
- In a 9" x 13" baking dish, combine the oats, chopped almonds, cocoa powder, and sea salt. You can also mix it in a large bowl first, then transfer it into the baking dish. Once the dry ingredients are fully mixed, add the wet ingredients. Stir the cacao butter mixture until there are no dry spots in your granola mixture. Smooth into an even layer, but don't press down.
- Bake for 20 minutes, stir and return it to the oven for 10 more minutes. Remove and add the mini chocolate chips and bake for 5 more minutes.
- Allow to fully cool before storing in an airtight container.

THE BEST HEALTHY CHOCOLATE GRANOLA

- Heat oven to 350°F. Line a large baking sheet with parchment paper, and set aside.
- In a large mixing bowl, stir together oats, almonds, cocoa powder and sea salt until evenly combined.
- In a separate mixing cup, stir together the melted coconut oil, maple syrup and vanilla extract until combined. Pour the coconut oil mixture into the oats mixture, and stir until evenly combined.
- Spread the granola out evenly on the prepared baking sheet. Bake for 20 minutes, stirring once halfway through. Then remove from the oven, give the mixture a good stir, then sprinkle the coconut evenly on top. Bake for 5 more minutes, until the granola is lightly toasted and golden.
- Remove baking sheet from the oven and transfer to a wire baking rack. Let cool until the granola reaches room temperature. Then stir in the chocolate chips and/or any other add-ins that you prefer.
- Serve immediately, or store in an airtight container at room temperature for up to 1 month.

- Preheat the oven to 250 degrees F (120 degrees C).
- Combine brown sugar, maple syrup, vegetable oil, vanilla extract, salt, cayenne pepper, and cocoa powder in a bowl. Whisk thoroughly. Add oats and almonds. Toss and smear the mixture together using a spatula until well coated. Spread mixture evenly over a silicone-lined baking sheet.
- Bake in the preheated oven for 30 minutes. Toss granola with a fork, breaking up any clumps to get a finer texture. Continue baking until desired texture is reached, 30 to 60 minutes more. Sprinkle some granola onto a plate; if it clinks, it is ready. Turn off the oven and leave granola inside the oven to dry and cool to room temperature.

CHOCOLATE OAT MILK BUDINO WITH BALSAMIC STRAWBERRIES

- In a medium saucepan, whisk together the oat milk, cocoa powder, vanilla paste, salt and 1/4 cup of the sugar. Place over medium-low heat and bring just to a simmer, whisking occasionally, 3 to 5 minutes.
- In a large bowl, combine the egg yolks, whole egg, cornstarch and 1/4 cup of the remaining sugar. Whisk until thick and pale yellow in color.
- When the oat milk mixture comes to a simmer, temper the eggs by slowly ladling half of the hot oat milk mixture into the egg mixture while continuously whisking. Pour the combined mixture back into the saucepan with the remaining oat milk mixture. Cook over medium-low heat, stirring constantly, until the mixture is thickened and coats the back of a spoon, 6 to 7 minutes. Be careful not to boil the custard mixture.
- Place the melted chocolate in a medium heatproof bowl. Once the custard is thickened, strain in a fine-mesh strainer, over the melted chocolate. Whisk to combine.
- Evenly divide the budino among six 6-ounce jars or glasses. Wrap the glasses with cling film and refrigerate for 3 hours or up to overnight.
- About 30 minutes to 1 hour before serving, combine the strawberries with the balsamic vinegar and remaining 2 teaspoons sugar. Stir to combine and set aside at room temperature.
- When ready to serve, top each budino with the strawberries and a sprinkle of granola.
CHOCOLATE ALMOND GRANOLA

- Roughly chop the dates and add into a blender along with the boiling water. Cover and set aside to soak for 20 minutes.
- Preheat your oven to 300 degrees F (150 degrees C) and lightly grease a large, rimmed baking sheet with cooking spray.
- Add the almond butter, cocoa powder, maple syrup to taste, oil, vanilla and salt to the blender and blitz until smooth (a few bits of dates is totally fine).
- Stir the oats and almonds together in a large bowl and add the cocoa mixture. Mix very well until evenly combined, then transfer to the prepared baking sheet. Spread the mixture into an even layer and bake until crisp and crumbly, stirring about halfway through, 50 minutes to 1 hour.
- Cool the granola to room temperature, then break any large chunks up and transfer to a resealable container and store at room temperature for up to 1 month. Serve with milk, on yogurt or enjoy out of hand.
