- Put the flour in a shallow platter and add the onion powder, garlic powder, cayenne, salt, and pepper; mix with a fork to distribute evenly. Pat the pork chops dry with paper towels to remove any moisture and then dredge them in the seasoned flour; shaking off the excess.
- Heat a large saute pan or cast iron skillet over medium heat and coat with the oil. When the oil is nice and hot, lay the pork chops in the pan in a single layer and fry for 3 minutes on each side until golden brown. Remove the pork chops from the pan and add a little sprinkle of seasoned flour to the pan drippings. Mix the flour into the fat to dissolve and then pour in the chicken broth in. Let the liquid cook down for 5 minutes to reduce and thicken slightly. Stir in the buttermilk to make a creamy gravy and return the pork chops to the pan, covering them with the sauce. Simmer for 5 minutes until the pork is cooked through. Season with salt and pepper and garnish with chopped parsley before serving.

My neighbor across the hall gave this recipe to me. He had tried it with veal and loved it. I made it with the pork chops as directed. I used red onion, but think I will try one vidalia onion and one red onion next time.

- Season pork chops with seasoning salt and pepper, coat completely with flour.
- Heat oil in heavy skillet.
- Add pork chops and brown on each side (about 3 minutes per side).
- Remove and set aside.
- Add sliced onions to the pan drippings and cook for 1 minute.
- Add remaining flour; continue to stir until onions and flour begin to brown.
- Add 2 cups of water and bring to a boil, stir until incorporated and return pork chops to the gravy, cover skillet, reduce heat, and simmer for 20 to 25 minutes until gravy is thick and pork chops are tender.

- Season both sides of the chops with the Essence.
- Heat the olive oil in a large, heavy pot or Dutch oven over high heat. Add the pork chops, 3 or 4 at a time, and lightly brown, about 2 minutes per side. Remove the pork chops and transfer to a platter. Set aside.
- Reduce the heat to medium. Add the flour and stir constantly until the roux is the color of peanut butter, about 4 minutes. Add the onions, salt, and black pepper. Cook, stirring, until the onions are slightly soft, about 5 minutes. Add the garlic, bay leaves, chicken stock, and water and bring to a boil. Return the pork chops to the pot. Reduce the heat to medium-low, cover, and simmer for 45 minutes. Add the smoked sausage and the potatoes. Bring to a boil; reduce the heat to medium-low, and cook, uncovered, stirring occasionally, for 30 minutes. Remove the bay leaves.
- Remove from the heat. Serve with either steamed white rice or rice pilaf.

- Sprinkle the pork chops all over with salt and the Cajun seasoning. Pour the flour into a shallow bowl. Dredge the chops in the flour, turning to coat, and tap off any excess. Reserve the remaining flour. Heat the olive oil in a large skillet over medium-high heat. Add the chops; cook until browned, 2 to 3 minutes per side. Transfer to a plate. Add the butter, onion, thyme and a pinch of salt to the skillet. Cook, stirring occasionally, until the onion is golden brown, 8 to 10 minutes. Add 2 tablespoons of the reserved flour to the skillet and cook, stirring, 1 minute. Add the chicken broth, bring to a boil and cook until reduced by one-third, about 2 minutes. Add the buttermilk and return the chops to the skillet. Bring the sauce to a simmer, then reduce the heat to medium low and cook until the sauce is thickened and the chops are just cooked through, 10 to 12 minutes. Serve with biscuits.

- Heat 2 tablespoons butter plus 2 tablespoons oil in each of 2 skillets over medium heat.
- Put the onion and pepper slices in one skillet and cook until browned and caramelized, about 10 minutes.
- Meanwhile, whisk together the seasoned salt, lemon pepper, cumin, cayenne pepper, salt, black pepper and 1/2 cup of the flour in a pie plate. Dredge the pork chops in the flour mixture.
- Fry the chops in batches in the other skillet until well browned, 2 to 3 minutes per side. Remove the chops from the skillet and set aside.
- To this skillet, add the remaining 3 tablespoons butter and 3 tablespoons flour. Stir and cook until the roux gets some color on it, about 2 minutes. Whisk in the stock a bit at a time, working out all the lumps, then add the cream. Add the onions and peppers, coating them in the sauce.
- Serve with plenty of sauce and the caramelized onions/peppers and accompany with the Smashed Red Potatoes.
- Put the potatoes in a glass or microwavable bowl and microwave according to the manufacturer's instructions, 5 to 10 minutes. Carefully remove the bowl and smash the potatoes with a fork. Add the butter, salt and pepper, then smash again. Cover with a towel until ready to serve.

- In a large skillet place 2 tbs of olive oil in pan on med/high heat.
- Sprinkle both sides of the pork chops with Garlic salt, and pepper to your liking, and squish together in hot pan. Cook til browned on both sides about 3 min per side.
- Remove pork chops set aside and keep warm.
- Add 1 tbs of unsalted butter and scrape up the bits and pieces of the pork chop from the pan. Add the onions and mushrooms to the pan drippings and cook until onion is tender; about 3-5 minute.
- Turn the stove to med/low heat and add the cream of mushroom soup. Add salt to pepper to taste and mix well.
- Return the pork chops to the pan and cover for 20 minute.
- Once ready remove pork chops, give the gravy one last mix and dig in! Serve with mashed potatoes or rice!

- Combine the salt, garlic powder, pepper, paprika, and poultry seasoning in a small bowl. Rub about half of the seasoning into each pork chop. (Reserve the remaining seasoning for the gravy.) Spread 1/4 cup of the flour in a shallow dish. Dredge each pork chop in the flour.
- Heat oil in a heavy skillet over medium-high heat. Add pork chops and cook until they are well browned, about 3 minutes per side. Transfer the pork chops to a paper towel-lined plate to drain.
- Add the onion to the skillet (don't pour off any drippings). Cook until the onion is softened and beginning to brown, about 7-8 minutes. Add the remaining 1/4 cup flour and cook, whisking constantly until the mixture is thickened and golden brown. Add the chicken broth and whisk until smooth. Stir in the remaining seasoning. Bring the mixture to a boil over medium-high heat. Return the pork chops to the skillet and add the rosemary. Reduce heat to a simmer, cover, and cook until the pork is tender, about 1 hour.

- Preheat oven to 350°F.
- Combine sugar, salt, sage and pepper; rub mixture onto both sides of pork chops. Coat chops well with flour.
- Heat a large heavy skillet, add oil and butter.
- Sauté pork chops until browned on both sides; remove from skillet and set into a baking dish.
- Add onion, sauté until just tender adding garlic and mushrooms after first 5 minutes.
- Sauté 10 minutes until softened.
- Add chicken stock, tomato paste, Worcestershire and heavy cream to pan, bring to simmer. pour over pork chops, Cover and bake 45 minutes- 1 hour, or until very tender.
