LOWER CARB KALE EGGS BENEDICT

- First, make the hollandaise: Add the egg yolks to a blender with the lemon juice and a pinch of salt. Blend on high for 30 seconds, until totally mixed. Adjust the blender speed to low and slowly drizzle in the hot melted butter. The sauce will start to get very thick. Add the mustard, black pepper and cayenne and mix until combined. If it becomes too thick to blend, squeeze in the juice of the other half of the lemon and try again. Put the lid on the blender and keep warm.
- Crack the eggs into separate small ramekins. Set aside.
- In a large nonstick skillet, cook the bacon over medium-high heat, turning until crisp. Remove from the skillet and drain on a paper-towel-lined plate. Pour off the grease, reduce the heat to medium-low and add the garlic. Stir and cook for 30 seconds, being careful not to burn the garlic. Add the kale, sprinkle with salt, pepper and red pepper flakes. Cook for about 3 minutes, until the kale is wilted. Set aside and keep warm.
- To poach the eggs, boil 2 quarts of water in a medium saucepan over medium-high heat. Add a pinch of salt and the vinegar. Use a metal spoon to carefully stir a vigorous "whirlpool" in the water. Immediately drop 2 of the eggs into the center of the whirlpool and let them cook for about 3 minutes for a soft yolk. Use a slotted spoon to carefully lift the eggs out of the water. Gently shake the spoon and check the doneness. If they are too soft, return them to the water for 45 seconds. Repeat with the other eggs. Drain on a paper-towel-lined plate.
- Place some of the kale in a neat pile on 4 plates. Top with bacon, then place the eggs on top of the bacon.
- Pour on the hollandaise and serve!
SMOKED SALMON BENEDICT

- Preheat a grill pan over medium heat. Bring a large pot of water to a simmer.
- For the herby hollandaise: Add the egg yolks and lemon zest and juice to a blender and blend for about 10 seconds. With the blender running, slowly drizzle in the melted butter. Season with the salt and pepper. Transfer to a serving vessel and stir in the chives, parsley and dill.
- For the bread and asparagus: Toss the asparagus with 2 tablespoons of the melted butter and season with a pinch of salt and pepper. Place on half of the grill pan and cook until charred, about 3 minutes. Brush the bread with the remaining melted butter and place on the other side of the grill pan. Grill the bread until nice grill marks form, about 1 minute per side. Set aside.
- For the eggs: To poach the eggs, begin by adding the vinegar to the large pot of simmering water. Gently crack the eggs into the water and leave them alone for 2 to 2 1/2 minutes. Remove the eggs with a slotted spoon and set aside on a paper lined plate so that any water is soaked up.
- To assemble, place a piece of bread on each of 4 plates and add a few slices of smoked salmon. Top with an egg, followed by some of the herby hollandaise. Serve with the grilled asparagus on the side and garnish with chives.
EGGS BENEDICT

- Add the egg yolks to a blender or a food processor. Add in the lemon juice and blend for several seconds. With the blender on, slowly drizzle in the melted butter. Turn off the blender and add in a little salt and cayenne. Whip it again until combined. Set this aside for a minute. Next, poach an egg by gently cracking an egg into simmering, slightly bubbling water. Leave the egg alone for 2 to 2 1/2 minutes, and then remove it with a slotted spoon and carefully place it on a plate. Repeat with the remaining eggs. To serve, place a buttered, toasted English muffin half on a plate. Top the English muffin with a warm slice of Canadian bacon. Place the warm poached egg on top. And then drizzle on some warm hollandaise. Sprinkle a little paprika on top.
STEAK AND EGGS BENEDICT WITH SPICY HOLLANDAISE

- For the hollandaise sauce: Add the egg yolks and lemon juice to a blender and blend for several seconds. With the blender running, slowly drizzle in the melted butter. Turn off the machine and add the adobo and some salt. Blend again and taste, adding more salt, adobo or lemon juice as needed. Set aside and keep warm.
- For the steak and eggs: Heat a large skillet over medium-high heat. Slice the steaks in half so you have four 1-inch-thick steaks. Pat dry and sprinkle with salt and pepper. When the skillet is hot, add the steaks and cook until done to your liking. Remove to a plate, cover with a second plate and keep warm.
- Wipe out the skillet, then rub it with a little butter. Crack in the eggs, keeping them separate, and cook until done to your liking, either sunny-side up or over easy. Season with salt and pepper.
- To build: Place 2 halves of the Garlic Butter English Muffins onto each plate. Top each with a steak and then an egg. Pour over the hollandaise, garnish with some cayenne and serve immediately.
- Preheat the oven to 350 degrees F. Place a rack over a baking sheet.
- Melt the butter with the garlic in a small saucepan over medium-low heat. Brush both sides of the muffins with the garlic butter and place them, split-side up, on the rack. Sprinkle with the Parmesan. Bake until browned, about 10 minutes. Serve immediately.
