One-Pot Spaghetti with Fresh Tomato Sauce image

This one-pot meal is perfect for the beginner cook: Everything but the cheese goes into one skillet, and it all magically comes together. The tomato paste is here for a little flavor insurance, just in case your tomatoes aren't at their best. Feel free to add an extra tablespoon when they're out of season.

12 ounces spaghetti, broken in half
3 tablespoons extra-virgin olive oil
1 tablespoon tomato paste
4 cloves garlic, thinly sliced
2 medium tomatoes, roughly chopped
Handful fresh basil leaves, plus more for garnish
Large pinch crushed red pepper
Kosher salt
1/2 cup grated Parmesan, plus more for serving

Steps:

  • Put the spaghetti, oil, tomato paste, garlic, tomatoes, basil, crushed red pepper and 1 teaspoon salt in a high-sided medium skillet. Add 5 cups water, and bring to a boil over medium-high heat. Continue to cook, stirring the spaghetti frequently to keep it from clumping, until it is al dente and the sauce has reduced and thickened, 6 to 8 minutes.
  • Stir in the Parmesan (the sauce will thicken more), and season with salt if needed. Divide the spaghetti among 4 bowls, and garnish with more Parmesan and torn basil leaves.

Steps:

  • Brown meat with garlic, green pepper and onion. Do not drain.
  • Stir in water, spaghetti sauce and hot pepper flakes.
  • Bring to a boil.
  • Stir in spaghetti.
  • Boil 15 min., stirring occasionally.
  • Serve with Parmesan cheese.

8 ounces sweet or hot Italian sausage, casings removed
1 onion, halved and thinly sliced
1 carrot, grated
4 cloves garlic, sliced
1 tablespoon tomato paste
10 ounces spaghetti, broken in half
1 14-ounce can cherry tomatoes
Kosher salt and freshly ground pepper
2 tablespoons chopped fresh parsley

Steps:

  • Heat 1 tablespoon olive oil in a large wide pot over medium-high heat. Add the sausage and cook, breaking up the meat into small pieces with a wooden spoon, until lightly browned and no longer pink, about 5 minutes. Pour off the fat from the meat.
  • Add the remaining 1 tablespoon olive oil and the onion to the skillet; cook, stirring occasionally, until the onion softens, about 5 minutes. Stir in the carrot, garlic and tomato paste and cook until the garlic softens, 1 to 2 minutes.
  • Add 4 1/2 cups water, the spaghetti, cherry tomatoes, 1/2 teaspoon salt and a few grinds of pepper to the pot. Increase the heat to high and bring to a boil, then reduce the heat to a simmer; cook, stirring occasionally, until the pasta is tender and the sauce thickens, 10 to 12 minutes. Remove from the heat and add the parsley; season with salt and pepper and toss.

One Pot Spaghetti is quick and delicious, with only one pot to wash for a family-pleasing dinner. In fact, it's such an easy spaghetti recipe that you'll never make it any other way again!

1 pound lean ground beef
3 cloves garlic (minced)
Salt & freshly ground black pepper (to taste)
3 cups marinara sauce (homemade OR 1 (24-ounce) store-bought jar)
1 tablespoon tomato paste
1/2 teaspoon balsamic vinegar
1 teaspoon dried basil
3/4 teaspoon dried oregano
1/4 teaspoon dried thyme
1-2 teaspoons sugar (optional)
3 cups beef broth
8 ounces spaghetti noodles (broken in half)
Freshly grated Parmesan cheese (optional) (for serving)
Fresh minced parsley (optional) (for serving)
Crushed red pepper flakes (optional) (for serving)

Steps:

  • Set a large pot or Dutch oven over medium-high heat. Add the ground beef and cook until no longer pink, breaking apart and stirring as the meat cooks. Stir in the minced garlic and cook for another minute or two until fragrant.
  • Drain the grease from the pot and season the beef with salt and pepper, to taste. Add the marinara sauce, tomato paste, balsamic vinegar, dried basil, dried oregano, dried thyme, sugar (if using), and beef broth. Stir well to combine, bring to a boil, and then reduce heat to a low simmer (about medium-low).
  • Lay the broken spaghetti noodles on top of the sauce, criss-crossing them and pressing them down until submerged by liquid. Do not stir at this point.
