2 mashed bananas
1 tablespoon unsweetened applesauce
1 teaspoon vanilla extract
1/2 cup sugar
1 dash salt
1 teaspoon baking powder
1 large egg
2 tablespoons nonfat milk
3/4 cup white flour

Steps:

  • Preheat oven to 350° and spray two mini-baking pans with non-stick cooking spray.
  • Place all ingredients but flour in a medium-sized mixing bowl and gently mix by hand until smooth.
  • Add in flour to wet ingredients.
  • Cook about 20 minutes - or until golden brown.

This banana bread is good & moist, lower in calories and fat. The recipe comes from Ladies Home Journal with rave reviews. Good with nutmeg, added with the cinnamon. I made this using Splenda for Baking,1/3 cup, was plenty sweet.

1 1/2 cups flour
1 1/4 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/8 teaspoon salt
2 egg whites, slightly beaten
1 cup banana, ripe, mashed
3/4 cup sugar or 3/4 cup Splenda sugar substitute
1/4 cup canola oil
nonstick cooking spray

Steps:

  • In a medium mixing bowl stir together flour, baking powder,baking soda, cinnamon, and salt,set aside.
  • In a large mixing bowl stir together egg whites, banana, sugar, and oil; Stir flour mixture into banana mixture until JUST moistened.
  • Spray a 8x4x2-inch loaf pan with nonstick cooking spray; Spread batter in prepared pan.
  • Bake in a 350 degree oven 45 to 50 minutes or until toothpick inserted near middle comes out clean.
  • Cool bread in the pan for 10 minutes; remove from pan and cool throughly on a wire rack; for eaiser slicing, wrap the bread in plastic wrap and store overnight.
  • Make ahead directions; cool completely, wrap in release foil, then seal in a plastic bag, freeze for up to 3 months.

1/2 cup Splenda granular, sugar substitute
1 teaspoon baking powder
1/2 teaspoon baking soda
1/8 teaspoon salt
1 tablespoon canola oil
1/3 cup low-fat buttermilk
2 teaspoons vanilla extract
1 1/4 cups mashed bananas
1/4 cup walnuts, chopped

Steps:

  • Preheat oven to 350 degrees and spray 9" x 5" loaf pan with cooking spray.
  • Combine dry ingredients and set aside.
  • In another bowl, combine the rest of the ingredients except the walnuts.
  • Pour the wet ingredients into the dry ingredients and mix well.
  • Fold in the walnuts and stir until just mixed.
  • Pour batter into pan and bake 45-55 minutes or until center is set.

  • spray the loaf pans with pam or a non-stick cooking spray.
  • mix the all the ingredients except the flour together in a bowl.
  • add the flour.
  • pour it into the pan.
  • bake in a 350 degree oven for about 20 minutes or so.

No one can tell the difference between it and its full fat/full calorie mates. The best part is: it works with just about everything you have in your pantry or fridge. Well, assuming everyone keeps plain yogurt around! Enjoy!

2 cups all-purpose flour (or whole wheat, the book calls for 1 1/2 ap and 1/2 cup cake flour, but I never use the cake flour)
3/4 cup granulated sugar, divided
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3 tablespoons butter, softened
3 very ripe bananas, mashed
2 large eggs
1 teaspoon vanilla
1/2 cup plain yogurt

Steps:

  • Preheat oven to 350 degrees. Generously grease a 9" loaf pan with cooking spray or butter.
  • In a large bowl, combine flour, 1/4 c sugar, baking powder, baking soda and salt. Set aside.
  • In a medium bowl, mash bananas and mix in vanilla and yogurt. Set aside. (Sorry guys, you'll need a total of three bowls for this. It's worth it!).
  • With your stand mixer or in yet another bowl, beat together remaining sugar (1/2 cup) and softened butter for about 3 minutes until "light and fluffy". Add eggs, one at a time.
  • Turn the mixer to low and add a third of the banana mixture. Let mix until just combined. Add half of the dry ingredients. Continue alternating until all the ingredients are combined, scraping down sides if necessary. Try not to overmix.
  • Pour batter into prepared loaf pan and bake for about 55 minutes or until a skewer comes out clean.The book claims using this recipe above each serving (1 loaf divided by 10 slices) is 240 calories. That's compared to a standard banana bread recipe at 320. I usually cut the slices in half again which makes each piece only 120 calories. Not bad for a morning or evening snack.

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x4 inch loaf pan.
  • In a large bowl, stir together flour, sugar, baking powder, baking soda and cinnamon. Add egg whites, bananas and applesauce; stir just until combined. Pour batter into prepared pan.

1 1/4 cups mashed bananas
1/4 cup chopped walnuts (optional)

Steps:

  • Preheat oven to 350 degrees F. Spray a 9X5-inch loaf pan with nonstick cooking spray. Set aside. Blend the dry ingredients in a large mixing bowl. Set aside. Add oil, buttermilk and vanilla to the mashed bananas. Mix well. Pour banana mixture into dry ingredients. Stir until just mixed. Add chopped walnuts. Stir until just mixed. Pour batter into prepared pan. Bake in preheated 350 degrees F oven 45-55 minutes or until rich brown and the center is set.
