Olive Oil- 2 tablespoons.
Yellow or Sweet Onion- 1 (chopped.)
Garlic- 2 cloves minced.
Tomatoes- 1 28 ounce can (crushed or diced depending on your preference.)
Wine (see above for suggestions- 1/2 cup.)
Seasonings- salt

Steps:

  • In a large saucepan on medium heat, saute your onion until tender. This should take just a few minutes. Then stir in the garlic and continue cooking until the garlic is soft. This should take only about a minute or two.
  • Next, turn up the heat slightly and add the wine to the skillet. You will need to stir the mixture continuoulsy in order to preven burning the ingredinets and sticking to the skillet. The wine should mostly burnt off when this step is done.
  • Add the remaining ingredients to the skillet, turn down the heat to low and allow the sauce to simmer. Stir your sauce occasionally as well.
  • Your sauce should be done in 15- 20 minutes, giving you the perfect opportunity to make your pasta :).

2 tablespoons olive oil
1-2 shallots (thinly sliced (may substitute yellow onion))
3-4 cloves garlic (minced)
1 tablespoon dried basil
1 tablespoon dried oregano
1/2 cup red wine (such as Merlot, Cabernet Sauvignon)
6 oz. tomato paste
14.5 oz. petite diced tomatoes
22 oz. crushed tomatoes
fresh basil, oregano, and/or parsley for garnish
parmesan cheese for garnish

Steps:

  • In a large skillet or Dutch oven, saute shallots and garlic in olive oil over medium heat until shallots have softened and become translucent.
  • Add dried basil and oregano and saute one minute longer.
  • Add red wine to the pan, scraping the browned bits from the bottom of the pan. Bring the wine to a simmer until reduced in half - about 3-4 minutes.
  • Add tomatoes and tomato paste. Bring to a boil over medium-high heat. Reduce heat to low, cover with a lid, and simmer for about 30 minutes.
  • Taste the sauce and season with salt and pepper as needed. Add 1-2 teaspoons of sugar and simmer a couple minutes longer to take some of the acidity out of the tomatoes if desired.

1 tablespoon good olive oil
1 cup chopped yellow onion (1 onion)
1 1/2 teaspoons minced garlic
1/2 cup good red wine, such as Chianti
1 (28-ounce) can crushed tomatoes, or plum tomatoes in puree, chopped
1 tablespoon chopped fresh flat-leaf parsley
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper

Steps:

  • Heat the olive oil in a large (12-inch) skillet. Add the onion and saute over medium heat until translucent, 5 to 10 minutes. Add the garlic and cook for 1 more minute. Add the wine and cook on high heat, scraping up all the brown bits in the pan, until almost all the liquid evaporates, about 3 minutes. Stir in the tomatoes, parsley, salt, and pepper. Cover, and simmer on the lowest heat for 15 minutes.

1/2 cup extra-virgin olive oil
2 small onions, finely chopped
2 garlic cloves, finely chopped
2 stalks celery, finely chopped
2 carrots, peeled and finely chopped
1/2 teaspoon sea salt
1/2 teaspoon freshly ground black pepper
2 (32-ounce) cans crushed tomatoes
2 dried bay leaves

Steps:

  • In a large casserole pot, heat the oil over a medium-high flame. Add the onions and garlic and saute until the onions are translucent, about 10 minutes. Add the celery, carrots, and 1/2 teaspoon of each salt and pepper. Saute until all the vegetables are soft, about 10 minutes.   • 1) Heat oil in pot, brown onion and sugar over low, 30 min. until golden. 2) Add wine, cook 1 min. 3) Add all other ingredients, boil. 4) Reduce heat, simmer 3 hours.

RED WINE VINEGAR MARINADE
