SUPER SIMPLE SPINACH SALAD
A simple but divine spinach salad with homemade balsamic vinaigrette!

Steps:
- Put your spinach into a big bowl. If you're using any add-ins, go ahead and add them now. (See notes for ideas.)
- Mix all of the dressing ingredients together in a small jar or container with a tight-fitting lid. Shake them up until it's well mixed.
- Pour the dressing over the spinach right before you're ready to serve.
- Enjoy!

Steps:
- Combine dressing ingredients in a small jar with a lid. Shake well to combine and refrigerate at least 1 hour.
- Toss dressing with spinach just before serving.
- Add remaining ingredients on top of salad. Serve immediately.

SPINACH SALAD WITH GARLIC DRESSING
Steps:
- In a medium skillet, cook the bacon over medium-high heat until just crisp. Drain on paper towels and crumble when cool enough to handle. Set aside.
- In a small bowl, whisk together the oil, vinegar, salt, pepper and garlic.
- Wash the spinach leaves very well and spin dry. Tear the leaves into small pieces and place in a medium salad bowl. Add the mushrooms and bacon, and toss to combine. Pour 2/3 cup of the dressing over the salad (reserve the rest for another use) and toss again. Serve immediately.

- Distribute the apples, celery and scallions over the lettuce.

SPINACH SALAD DRESSING
My ex-wife developed this recipe about 30 years ago, but it has been modified many times over the years due to changing tastes and the availability of ingredients. Decrease olive oil by half, and increase spices and hot sauce to make a great marinade for grilling meat and veggies. Prep time does not include time for designing and building your salad... just for making the dressing.

- Combine all ingredients in a jar, except olive oil, and shake thoroughly to mix.
- Allow to set at room temperature for 30 minutes, shaking occasionally, add olive oil, shake again, and refrigerate until needed, but at least 1 hour.
- Shake and toss with spinach salad (spinach, hard-boiled egg, sliced fresh mushrooms, real crisp bacon bits, croutons, etc.) or other greens.
- Note: Use the Sriracha hot sauce if you can find it.
- It adds a lot of flavor, not just heat!
