- Gather all ingredients and have them ready to go. Line a platter or baking sheet with waxed paper. Also, put the sprinkles in a shallow bowl and/or get the food coloring out if using that too.
- In a double boiler, melt the chocolate chips slowly over a low simmer of water. See notes above on how to use a double boiler if this is new to you. Stir the chips constantly to melt evenly and slowly. Remove from heat as soon as all the white chocolate is melted and smooth.
- Immediately begin dipping and twisting/rolling the strawberries one at a time in the white chocolate. As soon as each is covered about 3/4 so that some red berry is showing, dip and roll into the red, white, and blue sprinkles.
