2 large red heirloom tomatoes, coarsely chopped (see Cook's Note)
2 large yellow heirloom tomatoes, coarsely chopped
2 ounces vodka
2 tablespoons fresh lime juice
1 tablespoon fresh lemon juice
1/2 teaspoon freshly grated horseradish
1 teaspoon hot sauce
Sea salt and freshly ground black pepper
Heirloom baby tomatoes, for garnish

Steps:

  • Puree the red and yellow tomatoes in a blender until smooth, about 1 minute. Strain the puree through a fine-mesh strainer into a bowl and discard the solids. Stir in the vodka, lime and lemon juices and horseradish. Add the hot sauce and season with salt and pepper.
  • Fill a tall glass halfway with ice. Thread some baby tomatoes on a wooden skewer. Pour the tomato mixture over the ice, garnish with the skewered tomatoes and serve.

Heirloom tomatoes are sliced and drizzled with toppings that hit the notes of a Bloody Mary in this game-changing salad. Lemon juice and Worcestershire are whisked with oil for the dressing, and celery seeds and fresh horseradish get sprinkled on before serving. A dash of aquavit, a spiced Norwegian liquor, or vodka gives the salad more complexity, but it's just as delicious virgin.

2 pounds heirloom tomatoes, cored and cut into 1/2-inch-thick rounds
Kosher salt and freshly ground pepper
2 tablespoons aquavit (optional)
2 tablespoons fresh lemon juice
1 teaspoon Worcestershire sauce
3 tablespoons extra-virgin olive oil
1/2 teaspoon celery seeds
1/2 teaspoon caraway seeds
1 tablespoon freshly grated horseradish
2 tablespoons chopped fresh chives (optional)

Steps:

  • Arrange tomatoes on a platter in an overlapping single layer; season with salt and pepper. In a bowl, whisk together aquavit, lemon juice, Worcestershire, and oil; drizzle evenly over tomatoes. Sprinkle with celery and caraway seeds, horseradish, and chives; serve.

1 cup vodka
2 tablespoons hot sauce, such as Frank's
1 tablespoon Worcestershire sauce
1 pint cherry tomatoes
Freshly ground black pepper
Celery salt, for seasoning

Steps:

  • Combine the vodka, hot sauce and Worcestershire in a jar. Poke a couple of holes in each cherry tomato with a toothpick, then place a toothpick through the center of each. Add the toothpick-ed tomatoes to the vodka mixture and allow to soak for at least 2 hours, ideally overnight.
  • Drain the contents of the jar and sprinkle the tomatoes with pepper and celery salt. Serve immediately!

Growing up in the Sacramento Valley and being spoiled by the region's incredible seasonal produce, creating an Green Heirloom Bloody Mary just made perfect sense. I use green heirloom tomatoes (green zebra, evergreen, green grape, etc. for a green colored drink.

10 lbs heirloom tomatoes
1 bunch parsley
1 cup fresh lime juice
3 garlic cloves
1 habanero pepper
1 tablespoon sea salt
1 tablespoon black pepper
1 tablespoon celery seed

Steps:

  • In a large pot, cook tomatoes on low heat until softened. Blend tomatoes, lime juice, garlic and seasonings in blender on high or puree. Once liquefied, add parsley and habanero while the blender is on at a high setting. Filter mixture through a medium mesh chinois and chill overnight. Ready to serve the next day over ice, on its own or with vodka.
  • Rim the glass: with kosher salt and ancho chile powder.
  • Garnish the glass: Heirloom grape or cherry tomatoes and micro celery if available.

6 large, ripe tomatoes, peeled, seeded and diced (juices reserved)
6 tablespoons freshly squeezed lime juice, plus wedges
2 tablespoons Worcestershire sauce
2 teaspoons extra-spicy horseradish
2 teaspoons kosher salt, plus sea salt, for serving
2 teaspoons freshly ground black pepper, plus more for serving
Vodka

Steps:

  • In a blender, puree the tomatoes, lime juice, Worcestershire, horseradish, and salt and pepper until smooth. Chill covered until ready to use.
  • On a small shallow dish, mix 3 parts sea salt to 1 part finely ground black pepper. Run a lime wedge around the rim of each glass, then dip the rims in the salt and pepper mixture. Fill each glass with ice, 1-ounce vodka, and approximately 2/3 cup Fresh Tomato Bloody Mary mixture.

  • To make the juice, blend the lightest (in color) tomatoes until pureed and blended. Strain the mixture through a fine mesh strainer into a large measuring cup or glass. I started with the green, went to the yellow and went to red. I seasoned each of the juices a bit with salt and pepper, but didn't do much more since the bloody mary has so much flavor!
