FRESH TOMATO, BASIL, AND GARLIC SAUCE OVER ANGEL HAIR PASTA

Steps:
- Bring a large pot of water to a boil and prepare an ice water bath. Cut a small "x" on the bottom of each tomato. In batches, place the tomatoes in the boiling water and blanch them for about 30 seconds to 1 minute, or until the skins are easy to peel away. Remove and immediately plunge into the ice bath. Peel the tomatoes and halve horizontally. Squeeze out the seeds, using your fingers to get them all. Roughly chop the peeled and seeded tomatoes. Set aside. (You can also use whole peeled canned tomatoes. Simply drain them, seed, and roughly chop).
- Heat a large saute pan over medium high heat. Add the olive oil and heat. When the oil is hot, add the onions and garlic and saute for 2 minutes. Add the thyme leaves, oregano sprig, and chili flakes and saute until the garlic begins to turn golden brown. Add the tomatoes and the sugar and stir well. Lower the heat and cook slowly until the mixture is fairly dry, about 15 minutes.
- Cook the angel hair pasta in boiling, salted water until al dente. Drain the pasta and add it to the sauce. Add the Parmesan and basil and toss well. Place in a large pasta bowl and garnish with Parmesan and basil sprigs.

- In a food processor, combine cottage cheese, butter and cream cheese; cover and process until smooth. Add flour; cover and process until mixture forms a ball., Divide dough into 2 portions. On a floured surface, roll each portion into a 10-in. circle. Brush with oil. Sprinkle with Parmesan cheese, basil and garlic powder. Cut each circle into 12 wedges., Roll up wedges from the wide end and place pointed side down 2 in. apart on greased baking sheets. Curve ends of each to form a crescent shape. Bake at 350° for 20-25 minutes or until golden brown. Remove to wire racks; serve warm.

EASY CHEESY GARLIC CRESCENT ROLLS

- Before beginning, be sure to preheat your oven to 375 degrees F. Line a cookie sheet with parchment paper, then set aside.
- Mix the melted butter, Italian seasoning, garlic, dried parsley and dried basil together, in a small bowl.
- Unwrap the crescent rolls. Separate dough into triangles. Using a pastry brush, brush the dough with the butter and seasoning mixture (but reserve a bit of the mixture to use later). Place some of the grated mozzarella at the wide end of the dough (or place the string cheese half at the wide end). Carefully roll up the dough, and try to tuck the edges of dough in, to seal. Place dough onto parchment paper, with about 2 inches in between each one.
- Brush the tops of the dough with the remaining butter/seasoning mixture. Bake rolls at 375 degrees for 10-12 minutes, until rolls are golden brown. Remove from oven. If any cheese has leaked out, simply push it back onto roll with a spatula while cheese is still warm! Serve, and enjoy!

- Unroll dough on cutting board; cut lengthwise into 4 strips. Cut each strip lengthwise in half. (You will have a total of 8 strips.)

- Unroll crescent dough into one long rectangle and press into an ungreased 9x13 baking pan.
- Seal seams and perforations and bake at 375° for 14 minutes or until golden brown.
- Meanwhile, in a skillet, saute garlic and basil in oil over low heat just until garlic softens - but do not brown the garlic.
- Sprinkle half of mozzarella over the crust.
- Place sliced tomatoes over cheese and drizzle oil mixture over.

- Brown ground meat in a skillet over medium heat using a spatula to break meat into small pieces until it is thoroughly cooked.
- Pour cooked meat into a colander in the sink and rinse with hot water. Drain and pat dry.
- Return meat to skillet and add 2 (8oz) cans of Hunts tomato sauce with basil, garlic and oregano.
- Heat until sauce is bubbling - about 10 minutes.
- Pour meat and sauce mixture into lightly greased 9x9 casserole dish.
- Sprinkle 1 cup of cheddar cheese on top.
- Separately assemble crescent rolls for baking. Roll into 8 triangles and place on a lightly greased baking sheet.
- Place casserole dish with meat and cheese in the oven at the same time as the crescent rolls. They fit side by side.
- Bake at 375° for 9 to 12 minutes until crescent rolls are golden and cheese is melted in the casserole dish.
- Remove casserole dish and baking sheet from oven.
- Remove crescent rolls from baking sheet and place them on top of the meat, sauce and melted cheese in the casserole dish.
- Serve immediately.

- Unroll the crescent dough and make 15 balls
- Arrange them on parchment paper or a Silpat mat.
- Starting with 5 on the bottom, 4, 3, 2, 1 for the top of the tree.

- In a small bowl, combine melted butter, garlic, and basil. Set aside.
- Separate your refrigerated crescent roll dough into triangles. Brush a generous amount of garlic butter mixture over the first triangle, then place a mozzarrella cheese stick half along the wide edge of it.
- Begin rolling the dough until you reach the smallest end. Fold in the sides of the dough so that the cheese stick is completely covered.
