This sweet-tart chutney combines summer tomatoes with autumn-flavored cranberries, making it an awesome condiment for late-summer and fall barbecues. Spoon it over burgers and/or grilled chicken. When the weather gets cooler, toss a little chutney with roasted vegetables, such as carrots, onions, or sweet potatoes. Mix it with mayonnaise to make a dip for raw or cooked vegetables. This is also good over omelets or scrambled eggs! Adapted from Cooking Light.

Number Of Ingredients 14

3 cups finely chopped peeled tomatoes (about 4 large)
1 cup finely chopped red bell pepper
1 cup finely chopped red onion
1/2 cup dried cranberries
1/2 cup cider vinegar (try 1/4 balsamic!)
1/4 cup granulated sugar
1/4 cup packed brown sugar
2 tablespoons minced peeled fresh ginger
1/2 teaspoon salt
1/2 teaspoon mustard seeds
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cumin
1/4 teaspoon ground allspice
1/8 teaspoon ground red pepper

Steps:

  • Combine all ingredients in a large saucepan; bring to a boil. Reduce heat, and simmer, uncovered, 45 minutes or until thick, stirring frequently. Cool and pour into airtight containers.
  • Note: Refrigerate Red Tomato Chutney in airtight containers up to two months.
  • This could also be canned. Fill jars, seal, and process in hot water bath for 10 minutes.

Found at the back of a store cupboard, a friend brought this to a barbie where it was enjoyed by all. I had to try the recipe and this has to be one of the nicest chutneys I've ever made. Give it a go and I'm sure you be making it time and time again.

Number Of Ingredients 9

2 lbs tomatoes, peeled and chopped
3 large onions, finely chopped
salt
1/2 pint malt vinegar
1 lb sugar
1 1/2 tablespoons plain flour
1 tablespoon English mustard powder
1 tablespoon curry powder
1 teaspoon cayenne pepper (optional)

Steps:

  • Place the chopped tomatoes and onion in a large dish or colander and cover with salt. Leave for a few hours to drain off the liquid.
  • Put the tomatoes and onions in a saucepan and add three quarters of the malt vinegar and boil for five minutes. Stir in the sugar.
  • Meanwhile blend the flour, mustard powder, curry power and cayenne pepper, if using, into a smooth paste with the remaining malt vinegar.
  • Add the paste to the pan and simmer gently for one to one and a half hours. To test whether the chutney has reached the required consistency, draw a wooden spoon through the mixture: it should leave a clean path with no free liquid showing.
  • Decant into warm jars.
  • The finished chutney mellows with keeping and should be kept for at least 6-8 weeks before eating.

500g red onion, finely sliced
1kg tomato, chopped
4 garlic cloves, sliced
1 red chilli, chopped (optional)
4cm piece ginger, peeled and chopped
250g brown sugar
150ml red wine vinegar
5 cardamom seeds
½ tsp paprika

Steps:

  • Tip all the ingredients into a large heavy-based pan and bring to a gentle simmer, stirring frequently. Simmer for 1 hr, then bring to a gentle boil so that the mixture turns dark, jammy and shiny. Place into sterilised jars and allow to cool before covering. Will keep for 6 weeks.

From 'An Invitation to Indian Cooking' by Madhur Jaffrey. This is one of Madhur Jaffrey's favorite sweet chutneys, she always spoons out a small bowl for all her dinner parties. It goes with almost all foods and is very popular. Store, bottled, in the refrigerator. It keeps for months.

1 head garlic, peeled,coarsely chopped
1 piece fresh ginger, about 2 inches long,1 inch thick and 1 inch wide,peeled and coarsely chopped
1 1/2 cups red wine vinegar
1 (28 ounce) can whole tomatoes (or 2 lbs fresh tomatoes if they taste like a tomato should)
1 1/2 cups sugar
1 1/2 teaspoons salt
1/8-1/2 teaspoon cayenne pepper (personal preference)
2 tablespoons golden raisins
2 tablespoons blanched slivered almonds

Steps:

  • Put the chopped garlic, ginger and 1/2 cup of the vinegar into the container of an electric blender and blend at high speed until smooth.
  • In a 4-quart, heavy-bottomed pot with non-metallic finish, place the tomatoes and juice from the can, the rest of the vinegar, the sugar, salt and cayenne pepper (or, if you prefer, add the cayenne at the end, a little at a time, stirring and tasting as you do so).
  • Bring to a boil.
  • Add puree from blender.
  • Lower heat and simmer gently, uncovered, for about 1 1/2 to 2 hours or until chutney becomes thick.
  • (A film should cling to a spoon dipped in it.) Stir occasionally at first, and more frequently later as it thickens.
  • You may need to lower the heat as the liquid diminishes.
  • You should end up with 2 1/2 cups of chutney, and it should be atleast as thick as honey after it cools.
  • If the canned tomatoes you used have a lot of liquid in them, a longer cooking time may be required, resulting in a little less chutney.
  • Add the almonds and the raisins.
  • Simmer, stirring, another 5 minutes.
  • Turn heat off and allow to cool.
  • Bottle.
  • Keep refrigerated.

This recipe is from week 16 of my food blog, Travel by Stove. I am attempting to cook one meal from every nation on Earth, and Australia is my 16th stop. This chutney is supposed to be made with bush tomatoes, but they are difficult to find in the US, so sundries tomatoes can be used instead.

3 tomatoes
1 cup sugar
1/4 cup dried Bush Tomato, chopped (or substitute sundried tomatoes)
1 red onion, chopped
1 garlic clove
1/2 a granny smith apple
2 tablespoons golden raisins
white vinegar (enough to cover)
1/2 teaspoon salt
1/2 teaspoon chili powder

Steps:

  • Cut up the tomatoes, garlic and onions and put them in a medium sized saucepan. Add just enough vinegar to cover them.
  • Add the rest of the ingredients and bring to a boil. Reduce heat and simmer until the vegetables are soft and the entire mixture has a jam-like consistency.

2 pounds apples - peeled, cored and sliced
2 cups water
1 tablespoon mustard seed
2 pounds tomatoes, sliced
2 large onions, chopped
1 clove garlic, chopped
½ cup sultana raisins
¾ cup white sugar
5 teaspoons curry powder
1 teaspoon cayenne pepper
4 teaspoons salt
2 ½ cups malt vinegar

Steps:

  • Place apples and water in a large saucepan. Bring to a boil, reduce heat, and cook 25 minutes, or until apples are tender, stirring occasionally. Add more water as necessary to keep the apples simmering.
  • Wrap mustard seed in cheesecloth, and place with apples. Mix tomatoes, onions, garlic, sultanas, sugar, curry powder, cayenne pepper, salt and vinegar into saucepan. Stir until sugar has dissolved.
  • Bring the mixture to a boil. Reduce heat, and simmer 3 hours, stirring occassionally, until a thick chutney remains. Remove and discard wrapped mustard seed. Seal chutney in sterile containers until serving.

This is the best selling, fabulous tasting, world famous Tomato Relish as made by the "Boonooroo Brown Paper-bag Ladies" This is REALLY like granma used to make. If I buy "cooking tomatoes" and they are very pale, I add a small tub of tomato paste. You can add garlic, or herbs to this recipe, but I dont find it needs it. I always double this recipe, cause I am constantly being asked for it :) I use good quality brown vinegar, but the my fellow Bag Ladies use the generic stuff.

1 1/2 kg ripe tomatoes (peeled and chopped)
500 g brown onions (peeled and chopped)
2 tablespoons salt
2 cups sugar
3 teaspoons curry powder
1/4 teaspoon chili powder
1 tablespoon dry mustard
2 cups malt vinegar

Steps:

  • skin tomatoes, cut in cubes, place in bowl.
  • Peel onions, chop finely, place in separate bowl. Sprinkle each with one tablespoon salt and leave overnight.
  • Next day place tomatoes , and the onions together in a saucepan.and their liquid.
  • Add sugar, stir over low heat until sugar has dissolved, increase heat, bring to boil, boil, 5 minutes
  • Combine curry, chilli and mustard, mix to smooth paste with a little vinegar, add remaining vinegar, add to saucepan and stir to combine thoroughly. Bring to boil and boil uncovered for 50 to 60 minutes, or until thick.
  • If necessary, (and it probably is ) thicken with 3 tablespoons of cornflour mixed with a little vinegar.
  • Pour into hot sterilized jars and seal.

I got given a large lot of tomatoes from a grower so used some to make this, this is a lovely sweet chutney that goes great on sandwiches or alongside some roast beef or lamb and if stored correctly will apparently keep for up to 1 year.

1 kg ripe tomatoes, roughly chopped
3 onions, chopped
2 apples, peeled, cored & chopped
1 pear, peeled & chopped
2 3/4 cups brown sugar
1 cup white vinegar
1 cup cider vinegar
1 tablespoon salt
1 teaspoon mixed spice
1 teaspoon chili powder

Steps:

  • Slowly bring all ingredients to the boil in a large saucepan, stir until sugar dissolves, reduce heat.
  • Simmer, covered for approx 2 hours or until mixture is thick, stirring occasionally.
  • Allow to stand for 5 mins before spooning into sterilised jars. Seal immediately.
  • When cool, label & date.
