Steps:
- Combine warm water and salt and stir until dissolved. Slowly mix in cornmeal until a sticky dough is formed. Divide dough into 8 equal portions and form each portion into a small dough ball. Roll out each ball to form a 1/2-inch-thick disk.
- In a medium skillet over medium heat, heat 1 tablespoon lard until it starts to move and pop. Add one dough disk. Cook until golden brown, 3 to 4 minutes per side. Remove arepa from pan and place on a paper towel. Repeat with remaining lard and dough.
- Top each arepa with creme fraiche, egg, chives, shallot, and caviar and serve.

CHIVE PANCAKES WITH GORGONZOLA AND BACON

- For the pancakes: In a bowl, combine the flour, baking powder, and salt. Make a well in the center of the flour and add the eggs, milk, chives, and the olive oil. Gradually combine the flour into the wet ingredients and stir until smooth.
- Coat a large saute pan with olive oil and put over medium-high heat. When the pan is hot, drop the batter by teaspoonfuls into the pan. Cook until bubbles form on the top of the pancake, about 1 minute. Flip and cook on the other side. Remove the pancakes to a large plate and cool. Continue making pancakes until all the batter is used.
- In a medium bowl, combine the Gorgonzola and mascarpone and put it into a pastry bag. Pipe the Gorgonzola mixture onto the pancakes. Top with shards of the crispy bacon and chives. Arrange on serving platters and serve. Coolio!

- Mix the dumpling dough as indicated on the packet. Divide the dough into 8 equal parts.
- With clammy hands take one part of the dough and shape a dumpling out of it. Press a recess in it and fill it with 1 - 2 teaspoons caviar. Close the dumpling carefully. Keep attention, that it is closed all around to keep the caviar inside.
- Do the same with the other 7 parts of the dumpling dough.
- Place a big saucepan with salted water on the stove and bring the water to boil. Reduce the heat and add the dumplings. Let them steep until they are cooked. It takes about 20 minutes. You know that the dumplings are cooked, when they are coming up and swimming.
- Wash the dill and the chives dry it carefully and chop it up small.
- Squeeze the lemon.

- Preheat outdoor grill for medium heat and lightly oil the grate.
- Puree roasted red peppers in a food processor; transfer to a cold large skillet.
- Stir chicken broth, Parmesan cheese, 1/2 cup cilantro, cornstarch, jalapeno pepper, and garlic into red pepper puree.
- Bring red pepper mixture to a boil over medium-high heat, stirring constantly, until thickened, about 10 minutes. Keep warm.

- To make the dressing, place the wholegrain mustard in a bowl, then using a whisk, add the olive oil slowly. Add a squeeze of lemon, season to taste, then set aside.
- To make the pancake mixture, mix together the eggs, flour, milk and chopped chives until smooth. Season with pepper and salt, if you want
- Heat a medium non-stick frying pan over a highish heat. Using a piece of kitchen paper wipe the pan with some vegetable oil. SMOKED WILD IRISH SALMON WITH CHIVE PANCAKES
What a delicious combination: smoked salmon and chive pancakes! This dish is part of Irish cook Kevin Dundon's dinner menu for St Patrick's Day that I was delighted to find just recently in the March 2005 edition of the BBC Good Food magazine. And I certainly won't be waiting for St Patrick's Day 2006 before I try it. He describes this as a 'prepare ahead starter': the pancakes are served at room temperature. One detail in this recipe, I suppose incidental, that really intrigued me was that he doesn't use commercial spray-on oil. A reminder that there really are alternatives to so many of the products that the advertisers try to foist upon us. He suggests a simple alternative, one I opted for years ago after reading that commercial spray-on oils contain carcinogenics. But I have rarely seen recipes that suggest this. I have already posted the side dish to Kevin Dundon's St Patrick's Day menu: his scrumptiously creamy Colcannon. Next I shall be posting the main course dish: Guinness & Honey Glazed Pork. All the courses in his St Patrick's Day - or ANY day - menu sound just SO delicious!

- In saucepan over medium heat, combine milk, onions, bay leaf and nutmeg; simmer, stirring for 5 minutes.
- Discard onions and bay leaf.
- In separate saucepan over medium heat, melt butter, cook flour, stirring for 2 minutes.

- Meanwhile pour enough water into separate saucepan to come to 3 inches. bring to boil.
- Reduce heat to gentle simmer and break eggs one at a time into water.

- Arrange layer of spinach on each slice, top with poached egg.
- Spoon sauce over eggs.
- Top with folded slice of smoked salmon. .
