Red lentil & sweet potato pâté image

This easy vegetarian dip is a healthy alternative to hummus and great with crudités in a lunchbox or served as a vegan pate as part of a snack selection.

1 tbsp olive oil , plus extra for drizzling
½ onion , finely chopped
1 tsp smoked paprika , plus a little extra
1 small sweet potato , peeled and diced
140g red lentil
3 thyme sprigs, leaves chopped, plus a little extra to decorate (optional)
500ml low-sodium vegetable stock (choose a vegan brand, if desired)
1 tsp red wine vinegar (choose a vegan brand, if desired)
pitta bread and vegetable sticks, to serve

Steps:

  • Heat the oil in a large pan, add the onion and cook slowly until soft and golden. Tip in the paprika and cook for a further 2 mins, then add the sweet potato, lentils, thyme and stock. Bring to a simmer, then cook for 20 mins or until the potato and lentils are tender.
  • Add the vinegar and some seasoning, and roughly mash the mixture until you get a texture you like. Chill for 1 hr, then drizzle with olive oil, dust with the extra paprika and sprinkle with thyme sprigs, if you like. Serve with pitta bread and vegetable sticks.

In this vegetarian main inspired by Indian dal, lentils are cooked with an aromatic blend of Thai spices - fresh ginger, turmeric, red curry paste and chile - then simmered in coconut milk until fall-apart tender. Browning the sweet potatoes before cooking them with the lentils brings out their sweetness, balancing the heat from the chile and curry paste, while baby spinach tossed in just before serving adds fresh flavor. Serve over steamed white or brown rice, or with toasted flatbread on the side.

3 tablespoons olive oil
1 pound sweet potatoes (about 2 medium sweet potatoes), peeled and cut into 3/4-inch cubes
1 medium yellow onion, chopped
3 tablespoons Thai red curry paste
3 garlic cloves, minced (about 1 tablespoon)
1 (1-inch) piece fresh ginger, peeled and grated (about 1 tablespoon)
1 red chile, such as Fresno or serrano, halved, seeds and ribs removed, then minced
1 teaspoon ground turmeric
1 cup red lentils, rinsed
4 cups low-sodium vegetable stock
2 teaspoons kosher salt, plus more to taste
1 (13-ounce) can full-fat coconut milk
1 (4- to 5-ounce) bag baby spinach
1/2 lime, juiced
Fresh cilantro leaves, for serving
Toasted unsweetened coconut flakes, for serving (optional)

Steps:

  • In a Dutch oven or pot, heat 2 tablespoons olive oil over medium-high. Add the sweet potatoes and cook, stirring occasionally, until browned all over, 5 to 7 minutes. Transfer the browned sweet potatoes to a plate and set aside.
  • Add the remaining 1 tablespoon olive oil to the pot and set the heat to medium-low. Add the onion and cook, stirring occasionally, until translucent, 4 to 6 minutes. Add the curry paste, garlic, ginger, chile and turmeric, and cook until fragrant, about 1 minute.
  • Add the lentils, stock, salt and browned sweet potatoes to the pot and bring to a boil over high. Lower the heat and simmer, uncovered, stirring occasionally, until the lentils are just tender, 20 to 25 minutes.
  • Add the coconut milk and simmer, stirring occasionally, until the liquid has reduced and the lentils are creamy and falling apart, 15 to 20 minutes.
  • Add the spinach and stir until just wilted, 2 to 3 minutes. Off the heat, stir in the lime juice and season with salt to taste.
  • Divide among shallow bowls and top with cilantro and coconut flakes, if using.

What I have come to understand is that how food looks as you prepare it can make as much difference to the cook as it does, on the plate, to the person who gets to eat it. When the skies are drab and life feels a little gray, I am absurdly cheered by the fresh brightness of a vibrantly orange dal, a red lentil stew spiced with turmeric, chili and ginger, and colored with sweet potatoes and tomatoes. Just seeing that mixture in the pan lifts my spirits. It helps that a dal is simple to make: a bit of chopping and the stew all but cooks itself. And it can be made in advance and then reheated, always a bonus. This dal makes a wonderful, exuberant partner to broiled salmon, but I love it without meat, too, when I partner it with my "bright rice."

2 tablespoons vegetable oil
1 cup finely chopped onion
2 1/2 cups (10 ounces, about 1 medium) finely diced sweet potato
1 tablespoon minced ginger

1 Thai or bird's-eye red chili
1 cup red lentils
2 teaspoons ground coriander
2 teaspoons ground cumin
2 teaspoons turmeric
1 teaspoon ground ginger
1 cup canned chopped tomatoes
Salt
3 tablespoons chopped cilantro
Pieces of coconut flesh from a fresh coconut (optional)

Steps:

  • In a large saucepan over medium-low heat, heat oil, and sauté onion until softened. Add sweet potato, and sauté for about 5 minutes. Add minced ginger and garlic; stir, and reduce heat to low.
  • Finely dice chili, keeping seeds if you wish to add more heat. Add chili, lentils, coriander, cumin, turmeric and ground ginger to pan. Stir until lentils are well coated with oil. Add tomatoes and 4 cups water. Raise heat to bring to a boil, then reduce heat until mixture is at a fast simmer. Cook uncovered until lentils and potatoes are soft, stirring occasionally, about 25 minutes.
  • Season to taste with salt, and continue to simmer until mixture has thickened, about 10 minutes. Whisk dal to amalgamate lentils and sweet potatoes. If dal is too soupy, increase heat and cook for a little longer.
  • To serve, place dal in a serving bowl and sprinkle with chopped cilantro. If desired, shave thin strips of fresh coconut on top. Serve hot.

1-inch piece of ginger, grated or minced
1/2 teaspoon mustard seeds
1/2 teaspoon ground coriander
pinch of red chile flakes (or more to taste)
1/4 teaspoon turmeric
1/4 cup finely chopped tomato
1 sweet potato (about 6 ounces), peeled and diced small
1 3/4 cups water, plus additional water for rehydrating
1/2 cup red lentils, rinsed and drained
1 cup finely chopped kale or spinach
1/2 teaspoon salt

Steps:

  • Method At Home: Heat oil over medium heat in a medium pot. Add the garlic and ginger and stir fry for about a minute. Add the mustard seeds, coriander, red chile flakes and turmeric. Stir fry for about 30 seconds or until fragrant. Add the tomatoes and cook for a minute or two, until the tomatoes break down a bit. Add the sweet potatoes, water, and red lentils. Increase the heat to high and bring to a boil. Then reduce heat to medium-low and simmer, partially covered, for about 20 minutes, or until the sweet potatoes and lentils are tender. Add the kale or spinach and the salt. Continue cooking for about 5 more minutes. Taste and add additional salt and/or chile flakes. Let the dal cool slightly (just so it's easier to handle), then spread on a parchment-lined (or use a nonstick dehydrator sheet) dehydrator tray. You may need to use a couple of trays depending on the size of your dehydrator. Dehydrate at 135 degrees F for about 8 hours, or until completely dry. Package dehydrated dal in a heavy duty zip-top bag or container of your choice. At Camp: Place dehydrated dal in a pot with 1 1/2 cups water and let it sit for about 5 minutes. Heat dal on a stove until hot and fully rehydrated. This should only take a minute or two. Serve hot with rice or flatbread.

2 tablespoons butter
1 medium onion, chopped
5 garlic cloves, minced
1 tablespoon fresh ginger, minced
1 1/2 teaspoons salt

1/2 teaspoon ground coriander

1/2 teaspoon mustard powder
1/4 teaspoon cayenne pepper (or other Ground red pepper)
3 cups water
1 medium tomatoes, Seeded & Chopped
1 medium yukon gold potato, Cut into 1/2 inch chunks
1 cup lentils (I used regular brown or green ones)
1/4 cup parsley
2 tablespoons red wine vinegar

Steps:

  • Melt butter in a large saucepan over medium heat.
  • Add onion, saute until translucent.
  • Add garlic and ginger, saute a 1-2 minutes.
  • Add salt, tumeric, coriander, cumin, mustard powder, Cayanne Pepper and cook for 1-3 minutes until fragrant.
  • Add water, scraping to loosen browned bits from the bottom.
  • Stir in tomato, potato, and lentils.
  • Bring to a boil; cover, reduce heat, and simmer until potato mixture is tender (About 30 minutes).
  • Remove from heat and stir in Parsley & Red Wine Vinegar.
  • Serve over rice or with Naan.

1 tbsp sesame oil
1 red onion, finely chopped
1 garlic clove, crushed
thumb-sized piece ginger, peeled and finely chopped
1 red chilli, finely chopped
1½ tsp ground turmeric
1½ tsp ground cumin
2 sweet potatoes (about 400g/14oz), cut into even chunks
250g red split lentils
600ml vegetable stock
80g bag of spinach
4 spring onions, sliced on the diagonal, to serve
½ small pack of Thai basil, leaves torn, to serve

Steps:

  • Heat 1 tbsp sesame oil in a wide-based pan with a tight-fitting lid.
  • Add 1 finely chopped red onion and cook over a low heat for 10 mins, stirring occasionally, until softened.
  • Add 1 crushed garlic clove, a finely chopped thumb-sized piece of ginger and 1 finely chopped red chilli, cook for 1 min, then add 1½ tsp ground turmeric and 1½ tsp ground cumin and cook for 1 min more.
  • Turn up the heat to medium, add 2 sweet potatoes, cut into even chunks, and stir everything together so the potato is coated in the spice mixture.
  • Tip in 250g red split lentils, 600ml vegetable stock and some seasoning.
  • Bring the liquid to the boil, then reduce the heat, cover and cook for 20 mins until the lentils are tender and the potato is just holding its shape.
  • Taste and adjust the seasoning, then gently stir in the 80g spinach. Once wilted, top with the 4 diagonally sliced spring onions and ½ small pack torn basil leaves to serve.
  • Alternatively, allow to cool completely, then divide between airtight containers and store in the fridge for a healthy lunchbox.
