3 tablespoons canola oil
1 medium Spanish onion, coarsely chopped
3 cloves garlic, coarsely chopped
3 tablespoons ancho chile powder
1 1/2 teaspoons ground cumin
1 28-ounce can whole plum tomatoes, pureed with their juices
Kosher salt and freshly ground pepper
1 tablespoon honey

Steps:

  • Heat the canola oil in a medium saucepan over high heat. Add the onion and cook until soft, about 4 minutes. Add the garlic and cook 30 seconds. Stir in the chile powder and cumin and cook 30 more seconds.
  • Add the tomatoes, season with salt and pepper and cook over medium-high heat, stirring, until reduced to a sauce-like consistency, about 25 minutes. Transfer to a food processor and puree (add water if necessary). Add the honey and more salt and pepper, if needed.

Recipe for an easy red enchilada sauce, also known as salsa roja or mole rojo, prepared with dried ancho and pasilla chiles. Use it as a base for Pozole too.

8 ancho chiles (mild fruity dried chili pods)
4 pasilla chiles (mild fruity dried chili pods)
1 medium onion quartered
2 plum tomatoes
3 cloves garlic
1/2 teaspoon Mexican oregano
1/2 teaspoon marjoram
2 tablespoons cooking oil
salt to taste

Steps:

  • Toast the chiles in a hot pan until fragrant. (about 10 to 15 seconds per side)
  • Allow chiles to cool and then remove stems, seeds, and veins.
  • Char the onion, tomatoes, and garlic in a hot pan.
  • Place the chiles, onion, tomatoes, garlic oregano and marjoram in a pot with just enough water until the ingredients are almost covered.
  • Bring to a boil and then reduce the heat to low.
  • Simmer for 15 minutes to reconstitute the chiles and soften the veggies.
  • Blend the chiles, onion, tomatoes, garlic, oregano marjoram, and the soaking water until smooth. It usually takes about a minute.
  • Add water little by little if necessary to blend. You may have to blend in two batches
  • Strain the mixture.
  • Add two tablespoons of cooking oil to a hot pan add the strained sauce to fry it.
  • Reduce the heat and simmer for 30 minutes until the sauce has thickened.
  • Add salt to taste.
  • Allow the sauce to sit for at least 2 hours so that the flavors meld.
  • Warm the sauce before serving.

2 cloves garlic, minced
1 teaspoon minced onion
½ teaspoon dried oregano
2 ½ teaspoons chili powder
½ teaspoon dried basil
⅛ teaspoon ground black pepper
⅛ teaspoon salt
¼ teaspoon ground cumin
1 teaspoon dried parsley
¼ cup salsa
1 (6 ounce) can tomato sauce
1 ½ cups water

Steps:

  • Heat the oil in a large saucepan over medium heat. Add the garlic and saute for 1 to 2 minutes. Add the onion, oregano, chili powder, basil, ground black pepper, salt, cumin, parsley, salsa and tomato sauce.
  • Mix together and then stir in the water. Bring to a boil, reduce heat to low and simmer for 15 to 20 minutes.

6 dried red chilies (a mixture of New Mexico, and Passillas gives great depth)
3 garlic cloves, smashed
2 teaspoons dried oregano
2 tablespoons ground cumin
4 cups boiling water (broth may be used, but is quite unnecessary)
4 tablespoons lard or 4 tablespoons bacon drippings
3 tablespoons all-purpose flour
salt

Steps:

  • Remove stems and seeds from dried chiles, and break chiles into smaller pieces.
  • Place chiles in a blender cup with garlic, and cover with boiling water. Let stand for 30 minutes to an hour.
  • In the mean time in a heavy sauce pan use the lard and flour to make a roux, and let cook for a couple of minutes to remove any raw taste.
  • When the chiles have rehydrated, blend on "liquify' until smooth.
  • Add to sauce pan with oregano,cumin,and salt. Simmer for 15 minutes.
  • If you can make this a few hours, or a day, ahead it is even better.

6 dried ancho chiles
1 (6 ounce) can tomato paste
¼ cup corn oil
2 cloves garlic, minced
1 ½ teaspoons salt
1 teaspoon dried oregano
¼ teaspoon ground cumin
3 cups beef broth

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C).
  • Arrange the ancho chiles on a baking sheet and toast in the preheated oven 3 to 4 minutes; remove the stems, pulp, and seeds from the toasted peppers. Place peppers in a bowl and pour enough hot water into bowl to cover completely; allow to soak for 1 hour.
  • Combine the ancho chiles, tomato paste, corn oil, garlic, salt, oregano, cumin, and about 1 cup of the beef broth in a blender; blend until smooth. Pour the mixture into a saucepan with the remaining beef broth and place over medium heat; simmer until heated through, about 10 minutes.

1 medium onion, chopped fine
1 teaspoon vegetable oil
3 medium cloves garlic, minced
3 tablespoons chili powder
3 teaspoons ground cumin
2 teaspoons sugar
2 (8 ounce) cans tomato sauce
1 cup water
1 lb boneless skinless chicken breast
8 ounces cheddar cheese, shredded
3 tablespoons pickled jalapenos, chopped
1 fresh jalapeno, chopped
1/2 cup minced fresh cilantro
10 (6 inch) soft corn tortillas
vegetable cooking spray
1 lime, cut into wedges (for serving)
salt
ground black pepper

Steps:

  • Adjust an oven rack to the middle position and heat the oven to 400 degrees. Combine the onion, oil, and 1/2 teaspoon salt in a large saucepan. Cover and cook over medium-low heat, stirring often, until the onions have softened, 8 to 10 minutes. Stir in the garlic, chili powder, cumin, and sugar, and cook until fragrant, about 30 seconds. Stir in the tomato sauce and water, bring to a simmer, and cook until slightly thickened, about 5 minutes.
  • Nestle the chicken into the sauce. Reduce the heat to low, cover, and cook until the chicken is no longer pink in the center, and the thickest part registers 160 degrees on an instant-read thermometer, 10 to 12 minutes. Transfer the chicken to a plate; set aside to cool. Strain the sauce through a medium-mesh strainer into a medium bowl, pressing on the onions to extract as much liquid as possible. Season the sauce with salt and pepper to taste.
  • Once the chicken is cool enough to handle, shred into bite-sized pieces. Toss together the shredded chicken, 1/2 cup of the enchilada sauce, 1 cup of the cheddar, the jalapeños, and cilantro, and season with salt and pepper to taste.
  • Stack the tortillas on a microwave-safe plate, cover with plastic wrap, and microwave on high until warm and pliable, 40 to 60 seconds. Spread the warm tortillas out over a clean work surface. Place 1/3 cup of the chicken mixture evenly down the center of each tortilla. Tightly roll each tortilla around the filling and lay them seam-side down in a 13 by 9-inch baking dish.
  • Lightly spray the tops of the enchiladas with vegetable oil spray. Pour 1 cup of the remaining sauce over the enchiladas to coat them thoroughly. Sprinkle the remaining 1 cup cheddar down the center of the enchiladas. Cover the baking dish with foil and bake until the enchiladas are heated through, 20 to 25 minutes.
  • Remove the foil and continue to bake until the cheese browns, about 5 minutes longer. Serve, passing the remaining 1 cup sauce and the lime wedges separately.

  • Rinse any dirt off the chile pods. Gently toast dried whole chile pods in a heavy skillet over medium heat until they are warm and release their fragrance, 1 to 2 minutes per side. Be very careful to prevent any burning. Remove the chiles from the skillet immediately. When cool enough to handle, break each chile pod into several pieces and discard stem and seeds.
