Steps:
- Bring a large pot of well-salted water to a boil. Add the cabbage and cook for about 30 seconds, until barely wilted. Drain in a colander under cold running water until cool, and pat dry.
- In a wide, heavy-bottomed pot, melt butter over medium heat. Add onions, season well with salt and pepper, and cook until softened, about 5 minutes.
- Turn up the heat and add apples. Continue to cook, stirring constantly, allowing onions and apples to brown a bit, until apples are cooked through, 5 to 8 minutes. Stir in celery and caraway, then transfer to a large mixing bowl.
- Add cabbage and toss gently. Adjust seasoning and transfer to an oven-proof serving dish. If not serving immediately, keep at room temperature for 2 to 3 hours, or refrigerate and bring to room temperature, before heating in a 400-degree oven for 10 minutes. To serve, sprinkle with the scallions.

My German grandmother passed this recipe down to my mother, who gave it to me. I remember eating it as a small child. This vegetable dish can be made quickly and goes great with roast pork or barbecued ribs, potatoes and biscuits.

PICKLED RED CABBAGE WITH CRANBERRIES AND APPLE
It may be my German heritage, but I love cabbage. This dish is also hysterical because it reminds me of the scene in A Christmas Story when the kid keeps smashing his face into his red cabbage, mashed potatoes and meatloaf. Classic. At the restaurant I serve this side dish with lightly breaded pork cutlets and a super herbaceous chive spaetzle. Also, after sitting in the refrigerator overnight, the cabbage will be almost translucent and really glossy. Beautiful.

Steps:
- In a large saute pan, heat the olive oil and saute the red onions with the apples until they are slightly golden, about 5 minutes. Add the red cabbage, season with salt and saute until the cabbage begins to wilt, 5 to 10 minutes. Add the cranberries, sugar and vinegar and cook until the juices reduce and the cabbage looks glossy, about 15 minutes. Chill the cabbage and cranberry mixture overnight. It can be served both warm or cool, according to one's taste.

DAZZLING WINTER SLAW - RED CABBAGE, APPLE AND PECAN SALAD
A dazzling coleslaw salad for your winter festive table. Red cabbage is mixed with apples, carrots, pecans and onions which is then dressed with a tangy mustard and nut vinaigrette - fabulous! Plus, the colours as well as the taste, is amazing! This goes so well with cold cuts, pies, tarts, quiches, buffets as well as being a wonderful supper or light lunch accompaniment. I do all the shredding and grating in my food processor, it is so easy and cuts down on time. You can of course grate and shred by hand - it will just take a little longer! I sometimes add semi-dried cranberries and grated beetroot - these are listed as optional exras. The pie shown in the photograph, is my Recipe #268117, which I often serve with this winter slaw salad - they make a wonderful combination. (This recipe was posted to our personal preferences - with a light dressing and not a creamy or heavy dressing; if you like your salads with more dressing - please adjust the dressing quantities up!)

- Remove the wilted outer layers of cabbage, cut out the core, and cut the cabbage into very thin strips. Peel and core the apples, then grate on the big holes of a box grater, chop the onion.
- Melt the butter in a large pot, add the onion and cloves, cook over medium-low heat for a couple of minutes, or until the onion is soft. Discard the cloves.
- Increase the heat to high and add the shredded cabbage and grated apples. Cook, stirring, for about 5 minutes, making sure that the cabbage is not sticking to the pot.
- Add the vinegar, wine, orange juice, sugar, and cinnamon stick. Stir everything together, cover with a lid, and simmer over low heat for about 1.5-2 hours (the longer the better). The cabbage should be very tender but still have a little bite to it. Stir the cabbage from time to time, add some boiling water to the cabbage if it gets too dry - I added about 3/4 cup during this time. The cooking time may vary depending on how thick you've chopped your cabbage.

- Pour over the red wine vinegar, maple syrup/sugar and olive oil and sprinkle over the salt and pepper. Stir well to combine.
- Cover with a lid or very tightly with foil, and bake in the oven for about 50 to 55 minutes, after which time the cabbage should be really tender and smell fragrant and delicious. If it's not, give it a few minutes longer. If you get caught up with something it's fine left in the oven longer. If it will be much over 30 minutes extra though turn the oven down a bit to 325°F (160 °C) after the initial 50 to 55 mins.
