MACADAMIA NUT-COFFEE RUGELACH

Steps:
- Pulse the cream cheese, 1/2 cup granulated sugar, the vanilla and salt in a food processor until smooth. Add the flour and butter; pulse until the dough just comes together. Divide among 3 sheets of plastic wrap; shape into disks. Wrap and chill until firm, at least 1 hour.
- Whisk the remaining 1/4 cup granulated sugar, the brown sugar and cinnamon in a bowl; set aside. Let the dough soften slightly at room temperature, about 5 minutes. Working with 1 disk at a time, dust the dough with flour and roll out into a 9-inch round between 2 pieces of parchment. (If the dough gets too soft, return to the refrigerator.)
- Line 2 baking sheets with parchment paper. Brush each round of dough with the beaten egg, leaving a 1-inch border (refrigerate the remaining beaten egg). Sprinkle each with 1 tablespoon instant coffee, 1/4 cup nuts and 3 tablespoons of the cinnamon sugar; press into the dough. Slice each round into 12 wedges. Starting from the wide ends, tightly roll up the wedges. Arrange 2 inches apart on the baking sheets. Refrigerate until firm, 30 minutes.
- Position racks in the upper and middle thirds of the oven; preheat to 350 degrees F. Brush the cookies with the remaining beaten egg, then sprinkle with the remaining cinnamon sugar. Bake, switching the pans halfway through, until lightly browned, about 30 minutes. Let cool completely on the baking sheets.
MACADAMIA PANCAKES
These were inspired by an episode of House MD, where Dr. Wilson makes them. They have to be tasted to be believed. Please note that when I made these, I didn't measure the ingredients, I just threw it together, so you may need to alter the measurements slightly.

- Combine all ingredients in a bowl.
- If the mixture is too wet, add some more flour. If it's too dry, add more milk.
- Fry the pancakes in butter.
- Serve with maple syrup and cream.

Another moist and flavorful muffin favorite. I have many macadamia nut recipes that I whip out at Christmas time. This one is a keeper.

Steps:
- Heat oven to 400°F Spray bottoms of 12 muffin cups with nonstick cooking spray.
- In medium bowl, combine flour, nuts, coconut, sugar, baking powder, lemon peel, cardamom and salt. Make well in center; whisk in milk, oil and egg until just moistened. Spoon into muffin cups. (I like to sprinkle a little cinnamon & sugar on top before baking.
- Bake 20 to 25 minutes or until nicely browned. Cool in pan on wire.
- rack 10 minutes; remove from pan. Cool completely.

Steps:
- Heat oven to 375°.
- In large bowl, beat butter, granulated sugar, brown sugar, vanilla, and salt with electric mixer until creamy.
- Add eggs, beat well.
- Stir together flour, and the baking soda.
- Gradually add to butter mixture, beating until well blended.
- Stir in white chocolate chips and macadamia nuts.
- Drop by rounded teaspoons onto ungreased cookie sheet.
- Bake 8-10 minutes or until set.
- Cool slightly, remove frm cookie sheet to wire rack to cool completely.

- Preheat oven to 350ºF.
- Line 10 muffin cups with paper muffin liners.
- Using electric mixer, beat 1/2 cup butter and 1 cup brown sugar in large bowl to blend. Add 3 eggs and mix well. Beat in almond and vanilla extracts. Sift flour, baking powder and salt into medium bowl. Add to butter mixture and beat until combined. Add whipping cream and beat just until smooth. Fold in chopped macadamia nuts. Divide batter equally among prepared muffin cups. Sprinkle each muffin with whole macadamia nuts.
- Bake until tester inserted into center of muffins comes out clean, about 25 minutes. Serve warm or at room temperature.
