CHERRIES IN THE SNOW
An easy, no bake dessert that looks pretty too! Cherries In the Snow is a sweet, creamy, layered dessert with angel food cake.

Steps:
- In a large bowl, whip the cream cheese, powdered sugar and milk until smooth.
- Gently mix in the Cool Whip.
- Break the cake into small pieces and add into the whipped mixture.
- Fold to combine and place in a 9x13 baking pan.
- Spread the cherry pie filling on top and refrigerate until serving.

SNOW ON THE MOUNTAIN SALAD
I found this recipe years ago and thought the name was strange but I guess it does look like snow on a mountain when it is served. It is delicious.

Steps:
- Trim bases off lettuce.
- Separate leaves and rinse; pat dry.
- In small bowl combine mayonnaise, Parmesan cheese, lemon juice, garlic salt and pepper.
- Stack the lettuce leaves on a cutting board and cut crosswise into small pieces, enough to measure 9 cups.
- Transfer to a large salad bowl.
- Pour the seasoned mayonnaise over the lettuce and toss well; set aside.
- Wash and trim cauliflower.
- Cut the cauliflower head in half.
- Grate half the cauliflower.
- Mix the grated cauliflower with the bacon, blue cheese and chopped green onion tops.
- Sprinkle over the top of the salad.
SNOW MOUNTAIN RICE
This is like a fruity rice pudding. Not sure exactly where it got the name though. Tastes great and really simple to make. Note that the chill time is not included in the cook time.

Steps:
- Slice strawberries.
- Bring water, sugar, lemon and salt to a boil.
- Stir in rice.
- Cover and remove from heat.
- Let stand 5 minutes.
- Uncover and stir and cool.
- Sprinkle fruit with sugar.
- Let stand.
- Drain fruit, measuring 1/4 cup juice.
- Add to rice along with fruit and nuts, if desired.
- Fold whipped cream into fruit and rice mixture.
- Chill in the refrigerator for 2- 3 hours.

SNOW CAKE
This is my favorite way to use up egg whites. Altough this cake starts out like anglefood cake, but in the end when the melted butter is folded into the batter it changes its texture and does not resemble an anglefood cake when baked. We like this simple cake dusted with powdered sugar and ground nuts. Recipe adapted from The Finnish Cookbook.

Steps:
- Preheat oven to 350-degrees F.
- Spray tube or fancy cake pan with cooking spray and dust with sugar or ground nuts.
- Beat egg whites until foamy, slowly add sugar, and continue beating until stiff peaks form.
- Sift the flour and cornstarch into the egg white mixture, folding to combine well with rubber spatula or wooden spoon.
- Fold butter into cake mixture.
- Add extract.
- Turn into prepared pan.
- Bake for one hour at 350-degrees F or until done.
- Cake will not rise but feels firm to the touch when done.

- Break angel food cake into small pieces, and spread into the bottom of a 9 x 13 inch baking dish.
- Mix together confectioners' sugar, cream cheese, vanilla, and milk until smooth. Fold in whipped topping.
- Pour over cake pieces.
- Pour blueberries over all. Chill for 4 hours or overnight.
