This Orange Creamsicle Poke Cake is insanely delicious, moist and topped with whipped cream. The orange jello and vanilla pudding takes it over the top.

Candy Orange Slices
Orange Zest
One box (4-serving) vanilla pudding
1 cup milk
8 oz. tub of Cool Whip
1 teaspoon vanilla, optional
1 cup boiling water
One box (4-serving size) orange JELL-O
1 cup cold water
Vanilla Cake Mix
3 eggs
1 cup orange juice
1/2 cup extra virgin olive oil

Steps:

  • Heat oven to 350ºF (325ºF for dark or nonstick pans).
  • Spray 13x9-inch pan with baking spray with flour.
  • In a large bowl, beat cake mix, eggs, orange juice, and oil with electric mixer on low speed for 30 seconds. Beat on medium speed for 2 minutes, scraping the bowl occasionally. Pour batter into pan.
  • Bake 28 to 33 minutes or until toothpick inserted near center comes out clean. Cool completely in pan on a cooling rack for about 1 hour.
  • Use a skewer to poke holes all over cake.
  • In a medium bowl, pour boiling water over orange JELL-O; stir until gelatin is completely dissolved. Stir in cold water. Pour gelatin mixture carefully and slowly over the cake. Refrigerate for 2-3 hours.
  • Beat together pudding mix, milk and vanilla in a large bowl until blended. Fold in container of whipped topping. Spread over cooled cake.
  • Refrigerate for at least 30 minutes before serving.

1 box white cake mix ((prepared to package instructions))
3 ounces orange gelatin ((1 small box))
1 cup boiling water
3.4 ounces French vanilla instant pudding ((1 small box))
1 ½ cup milk
30 ounces mandarin oranges ((drained))
8 ounces whipped topping ((thawed))

Steps:

  • Mix and bake cake in 13x9 pan according to package instructions. Allow the cake to cool.
  • Using a fork, poke holes in the top of the cake.
  • In a small bowl, mix together gelatin with 1 cup of boiling water until dissolved. Pour the gelatin over the cake, making sure to pour over and into the holes.
  • In a small bowl, mix together the French vanilla pudding mix and 1 ½ cups of milk. Allow the pudding to set for 3 minutes, then spread it overtop the cake.
  • Add a layer of half of the Mandarin oranges over the pudding.
  • Top with whipped topping and the remaining Mandarin oranges.
  • Cover and chill for 4 hours before serving. Keep refrigerated.

2 1/2 cups (325g) all purpose flour
2 cups (414g) sugar
3 tsp baking powder
1 tsp salt
1 cup (240ml) milk
1/2 cup (120ml) vegetable oil
1 tbsp vanilla extract
2 large eggs
2 tbsp orange zest
1/2 cup (120ml) water
1/4 cup (60ml) fresh squeezed orange juice*
3 oz package orange JELLO powder
1 1/4 cup boiling water
3/4 cup sweetened condensed milk
2 1/4 cups (540ml) heavy whipping cream
1 cup (115g) powdered sugar
2 tsp vanilla extract
Orange candy slices

Steps:

  • Preheat oven to 350°F (176°C) and prepare a 9×13 inch cake pan with non-stick baking spray. 2
  • Add the flour, sugar, baking powder and salt to a large mixer bowl and combine. Set aside. 3
  • Add the milk, vegetable oil, vanilla extract, eggs and orange zest to a medium sized bowl and combine. 4.
  • Add the wet ingredients to the dry ingredients and beat until well combined. 5.
  • Slowly add the water and orange juice to the batter and mix on low speed until well combined. Scrape down the sides of the bowl as needed to make sure everything is well combined. 6.
  • Pour the batter into the prepared cake pan and bake for 28-30 minutes, or until a toothpick comes out with a few moist crumbs. 7.

3 eggs (or as called for by your cake mix)
1/3 cup oil (or as called for by your cake mix)
1 1/3 cups water (or as called for by your cake mix)
1 (6 ounce) box orange Jell-O
1 1/2 cups hot water
1 cup cold water
8 ounces cream cheese, softened
1 (3 1/2 ounce) box vanilla instant pudding mix
1 (3 1/2 ounce) box orange Jell-O
1 cup milk
1 teaspoon vanilla extract
8 ounces Cool Whip, thawed

Steps:

  • Bake cake as needed in 9x13-inch pan.
  • When baked and cooled, poke holes all over cake with meat fork.
  • Mix large box of Jello with the waters and just let it start to set up.
  • Slowly pour over the cooled cake and allow to run into holes all over cake.
  • Chill cake until Jello is set.
  • In large bowl, cream the cheese until creamy.
  • Add the dry Jello powder, pudding mix, milk and the vanilla extract; beat well.
  • Fold in Cool Whip.
  • Spread on cake and chill until served.

Steps:

  • Set out Cool Whip to thaw.
  • Prepare cake mix according to directions for a 9x13 pan,.

1 teaspoon 2% low-fat milk
1/8 cup canola oil
1/2 teaspoon vanilla

16 ounces sifted powdered sugar
1/4 cup orange juice concentrate
mandarin orange, for garnish

Steps:

  • Preheat oven to 350°F.
  • Cream together butter and sugar until light and fluffy.
  • Add eggs, one at a time, beating well after each addition.
  • Sift together flour, baking powder and salt.
  • Combine the 1 2/3 tablespoons orange juice concentrate, water, milk, canola oil, vanilla and orange extract.
