Steps:
- Preheat the oven to 350˚F (180˚C). Grease a 12-cup muffin tin with cooking spray.
- In a large bowl, thoroughly beat the eggs, then mix in the applesauce, Greek yogurt, milk, maple syrup, and vanilla until evenly combined.
- Add 3 cups (240 g) of muesli, the baking powder, and salt. Mix well.
- Divide the batter between the muffin cups.
- Sprinkle the remaining 2 tablespoons of muesli over the tops of the muffins.
- Bake for 20-25 minutes, or until golden brown.
- Let cool, then serve or store in the fridge for up to a week.

MUFTIS - MUESLI BALLS
This is a very simple recipe for muesli balls. In 1989 my home town Freiburg used to be the inofficial capital of organic food in Germany, and there were four organic food stores within a diameter of 2 miles around the place where I lived. In one of them I found a small booklet, handwritten and photocopied on brown packaging paper, entitled "Our little cake heaven. Baking recipes". The publisher was something called "packaging paper mail orders", and they turned out to be a group of very radical environmental activists. This is their website: http://www.packpapier-verlag.de/ The recipes they publish in their packaging paper booklets are organic, whole food, and mostly very yummy - which was quite rare in the beginnings of the organic food movement when whole grain recipes used to be healthy but unedible ;-)

Steps:
- Combine all dry ingredients with the honey.
- Mix in the milk - but slowly. The required amount may be a little more or less than 1 1/2 cups to get a sticky dough.
- Let the dough rest 30 minutes, then preheat oven to 390 degrees and form walnut size balls. If the dough is too sticky to form balls, add some more ground hazelnuts.
- Bake for about 20-25 minutes until balls are golden brown.

SPIESSBRATEN, IDAR-OBERSTEIN STYLE
This is a traditional recipe from my home town, Idar-Oberstein, in Germany. The meat is grilled on hardwood fire, using a metal tripod with a fire pan attached to the bottom of the tripod legs and the actual grilling surface hanging from the top of the tripod. If you are interested in a picture of this type of grill, let me know and I will post one. You can use any kind of meat with this recipe. Even half chickens turn out wonderful. Our favorite is pork tenderloin, however. The spice measurements are per pound of meat, so you cannot go wrong if you stick to these measurements. We figure that one pound of meat serves two people nicely. The "pinches" in the measurements are my Mom's pinches: pick up as much as your thumb, index and middle finger can hold.

- Mix the spices with your hands, squeezing the onions until they get juicy.
- Place some of the spice mixture in a dish, place the meat on top and cover with the rest of the mixture.
- Cover the dish and marinate for at least 3 hours or up to 6 hours. I don't recommend to marinate over night because the onions will turn bitter.
- Fire up the grill and when it has its cooking temperature, remove the marinade from the meat and grill to desired doneness.
- If you go with pork tenderloin, make sure you don't overcook the meat. Take it off the grill when it is still flexible when you press on it with your finger. Place it in an oven dish, cover it and let it rest in the oven at about 200 degrees for 10 minutes. This gives the juices a chance to settle and the meat will be soooo tender.

APRICOT AND MUESLI SESAME BALLS

Steps:
- Place the apricots, water cinnamon, nutmeg and cardamom in a small saucepan and bring to the boil over medium heat.
- Reduce the heat to low and cover and simmer stirring occasionally for 12 minutes or until apricots soften.
- Remove from the heat and uncover and set aside for 20 minutes to cool.
- Meanwhile place the sesame seeds in a saucepan and toss over medium heat for 2-3 minutes until golden.
- Transfer to a heatproof bowl and set aside.
- Place the muesli in the bowl of a food processor and process until finely chopped, add apricot mixture and process until a stiff dough forms (you can add a little more water if required).
- Transfer to a bowl and use your hands to knead well until combined.
- Use your hands to roll 2 teaspoonfuls of mixture into a ball.
- Repeat with the remaining mixture and toss the balls in sesame seeds to lightly coat.
