PORRIDGE WITH BLUEBERRY COMPOTE

Top high-fibre porridge oats with creamy Greek yogurt and healthy blueberries - buy frozen to help cut the cost of this filling breakfast

Number Of Ingredients 4

6 tbsp porridge oats
just under ½ x 200ml tub 0% fat Greek-style yogurt
½ x 350g pack frozen blueberries
1 tsp honey (optional)

Steps:

  • Put the oats in a non-stick pan with 400ml water and cook over the heat, stirring occasionally for about 2 minutes until thickened. Remove from the heat and add a third of the yogurt.
  • Meanwhile, tip the blueberries into a pan with 1 tbsp water and the honey if using and gently poach until the blueberries have thawed and they are tender, but still holding their shape.
  • Spoon the porridge into bowls, top with the remaining yogurt and spoon over the blueberries.

1 cup rolled oats
2 ½ cups water
1 teaspoon salt
1 tablespoon white sugar
2 bananas, sliced
1 pinch ground cinnamon
½ cup cold milk

Steps:

  • In a saucepan, combine the oats, water, salt, sugar, bananas and cinnamon. Bring to a boil, then reduce heat to low, and simmer until the liquid has been absorbed, stirring frequently. Pour into bowls, and top each with a splash of cold milk.

500ml almond milk
200g jumbo porridge oats
2 tbsp almond butter
1 tsp baking powder
1 egg , beaten
1 small ripe banana , mashed
½ tsp almond extract or 1 tsp vanilla extract (optional)
450g blueberries , plus extra to serve
30g whole, skin-on almonds , roughly chopped
milk or fat-free yogurt and honey, to serve (optional)

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Mix all of the ingredients together in a large bowl.
  • Tip the mixture into a 2-litre ovenproof dish, then bake for 30-35 mins until piping hot in the middle. Serve warm with a little milk or yogurt, honey and extra blueberries, if you like.

Steps:

  • First make the blueberry compote: place the blueberries, maple syrup and lemon juice into a small pan with 1 tablespoon of water and allow to come to the boil. Once bubbling, take it off the heat and set aside. Place the porridge ingredients, including the water the oats have been soaked in, into a pan over a medium heat and cook for 3-4 minutes, stirring continuously, until the oats have come together. Spoon into 2 bowls and add the toppings in this order: a tablespoon of blueberries in a line down the middle with a pool of juice around the edge, then the seeds, strawberry slices, coconut flakes, almond butter and amaranth, if using.

3 tbsp (25g) porridge oat
150g pot 0% fat probiotic plain yogurt
1 small banana , chopped
generous handful blueberries or thawed frozen raspberries (85g)
small handful toasted flaked almonds

Steps:

  • For the porridge: Tip 200ml water into a small non-stick pan and stir in porridge oats. Cook over a low heat until bubbling and thickened. (To make in a microwave, use a deep container to prevent spillage as the mixture will rise up as it cooks, and cook for 3 mins on High.) Stir in yogurt - or swirl in half and top with the rest.
  • For the topping: Stir banana into the porridge, then top with blueberries or raspberries and flaked almonds for added protein.

50g porridge oats
350ml milk or water, or a mixture of the two
Greek yogurt, thinned with a little milk and clear honey, to serve

Steps:

  • Put 50g porridge oats in a saucepan, pour in 350ml milk or water and sprinkle in a pinch of salt. Bring to the boil and simmer for 4-5 minutes, stirring from time to time and watching carefully that it doesn't stick to the bottom of the pan.
  • Or you can try this in a microwave. Mix the porridge oats, milk or water and a pinch of salt in a large microwaveproof bowl, then microwave on High for 5 minutes, stirring halfway through. Leave to stand for 2 minutes before eating.
  • To serve, pour into bowls, spoon Greek yogurt, thinned with a little milk, on top and drizzle with honey.
