TRADITIONAL BROWN IRISH SODA BREAD



Traditional Brown Irish Soda Bread image

Hearty and delicious Brown Irish Soda Bread, with buttermilk, oats, wheat germ and wheat bran. Makes 1 large loaf.

1 3/4 cups all purpose flour
1 3/4 cups whole wheat flour
3 Tbsp wheat bran (toasted, *see Note 2 below and recipe instructions for how to toast)
3 Tbsp wheat germ (toasted)
2 Tbsp rolled oats (plus more for topping)
2 Tbsp dark brown sugar (or light brown sugar, if necessary)
1 tsp baking soda
1/2 tsp salt
2 tbsp salted or unsalted butter (cold and cut into pieces)
2 cups buttermilk (*see Note 2)

Steps:

  • Preheat oven to 425F (not fan assisted). Grease a 9x5-inch loaf pan and set aside.
  • Toast the wheat bran and wheat germ by scattering onto a dry baking sheet and placing into a 350F oven, for 3-4 minutes, stirring once or twice. Watch closely as it can quickly burn if left too long. Remove from oven and immediately remove from the baking sheet to a bowl to cool a few minutes before using.
  • *I like to do the toasting when my oven is preheating. When it reaches about the 325F mark, I'll pop in the baking sheet and it. Alternately, just preheat oven to 350F, toast, then increase the oven temperature to 425F once you've finished toasting.
  • In a large bowl, combine the all purpose flour, whole wheat flour, toasted wheat bran and wheat germ, rolled oats, brown sugar, baking soda and salt. Whisk to combine well. Add the butter and rub into the flour mixture with your fingertips, until it is the consistency of fine meal. Add about 2/3 of the buttermilk and stir well to combine. Continue adding buttermilk in small increments, until the dough comes together in a moist, but not sticky dough. You may not need to use all of the buttermilk, but reserve any excess for brushing the top. Remove the dough to a work surface and roughly shape into a loaf shape to fit the pan.
  • Brush top of loaf with buttermilk and scatter with more rolled oats and press down gently.
  • Bake loaf until golden brown and until a long tester inserted in the centre of the loaf comes out clean, about 35-40 minutes. *If your top is well browned but it is not yet testing ready, you can loosely lay a sheet of aluminum foil over the top of the loaf to be able to cook it longer, without it browning too much further. Remove from oven and immediately remove loaf to a cooling rack to cool. Allow the loaf to cool to just warm or completely before slicing.

Unlike many of the recipes here, none of the soda bread that I have ever eaten in Ireland was sweet or contained sugar, so here is a recipe for a traditional soda bread from Keith Floyd. This is great with Irish Stew but also a handy recipe to have in reserve for the times that you run out of bread and can't face going to the shops. Do feel free to substiute buttermilk for the sour milk in this recipe.

150 g strong white flour
50 g oatmeal
1 teaspoon bicarbonate of soda
1 teaspoon salt
475 -725 ml sour milk (or fresh milk soured with juice of 1/2 lemon)

Steps:

  • Mix the dry ingredients very well.
  • Moisten with the sour milk to form a soft dough.
  • Knead lightly.
  • Form into a round, mark with a cross, place on a tin and bake for 30-45 minutes in the oven at 220°C.

250g plain white flour
250g plain wholemeal flour
100g porridge oats
1 tsp bicarbonate of soda
1 tsp salt
25g butter, cut in pieces
500ml buttermilk

Steps:

  • Preheat the oven to 200C/gas 6/fan 180C and dust a baking sheet with flour. Mix the dry ingredients in a large bowl, then rub in the butter. Pour in the buttermilk and mix it in quickly with a table knife, then bring the dough together very lightly with your fingertips (handle it very, very gently). Now shape it into a flat, round loaf measuring 20cm/8in in diameter.
  • Put the loaf on the baking sheet and score a deep cross in the top. (Traditionally, this lets the fairies out, but it also helps the bread to cook through.) Bake for 30-35 minutes until the bottom of the loaf sounds hollow when tapped. If it isn't ready after this time, turn it upside down on the baking sheet and bake for a few minutes more.
  • Transfer to a wire rack, cover with a clean tea towel (this keeps the crust nice and soft) and leave to cool. To serve, break into quarters, then break or cut each quarter in half to make 8 wedges or slices - or simply slice across. Eat very fresh.

1 pinch salt
1 teaspoon baking soda
1 cup buttermilk

Steps:

  • Heat a heavy skillet, griddle, or cast-iron frying pan over medium-low heat.
  • Stir the flour and salt together in a bowl, and sift in the baking soda. Make a well in the center of the flour mixture, and pour in the buttermilk. Stir the mixture quickly together into a dough, and turn out onto a floured work surface. Knead the dough a few times, just until it comes together. Gently form the dough into a flattened, round cake about 1/2 inch thick, and cut the round into quarters with a floured knife.
  • Sprinkle a little bit of flour into the bottom of the hot skillet, and cook the wedges 6 to 8 minutes per side, until golden brown.

275 g coarse whole meal flour
175 g plain flour (use Bread flour for better texture)
1/2 teaspoon salt
1 teaspoon baking soda
2 tablespoons caster sugar (optional)
500 ml buttermilk
1 tablespoon oil

  • Place wholemeal in a large mixing bowl.
  • Sieve in Cream flour, salt, soda and sugar (if used).
  • Add buttermilk and oil.
  • Mix well.
  • Transfer to a well greased 2lb loaf tin.
  • Bake in a preheated oven at 170°C, 325°F, Gas 3 for approximately 1 hour.
  • Bread will be baked if base sounds hollow when tapped.

1 lb bread flour (white)
1 teaspoon baking soda
1 pinch salt
1 tablespoon sugar (optional)
1 ounce margarine
1/2 pint buttermilk (might need more)

Steps:

  • Sieve flour, salt and soda into a bowl. Add sugar if used.
  • Rub in the margarine to resemble breadcrumbs, lifting mixture with fingertips to introduce air to the dough.
  • Add sufficient buttermilk and mix to make a soft dough.
  • Turn onto a lightly floured board and knead a little.
  • Turn the smooth side up and shape into a round. Place the dough on a floured tin.
  • Cut a cross over the top.
  • Bake in a pre-heated oven, 400°F 200°C Gas 6 for 40-45 minutes.
  • When baked the underneath when "tapped" should have a hollow sound.
  • Cool on a wire tray. Cover with a tea towel to give a soft crust.

3 cups whole wheat flour
1 cup all-purpose flour
15 g wheat germ (I put in 1/8th of a cup)
500 ml 2% buttermilk
1 teaspoon baking soda
1/2 teaspoon salt

Steps:

  • Sieve the Salt, Bread Soda and All purpose flour into a bowl. Mix in the Wholewheat flour and wheatgerm. Add enough milk to make a soft dough. Turn out onto a lightly floured surface and knead until the mixture comes together. Place on a floured baking sheet forming into a round loaf (approx 10" diameter).
  • Place into a preheated oven (central position) and bake at 375 to 400 F for 40 to 45 minutes. When baked the bread will sound hollow when you tap it on the bottom. Cool on a baking rack or wrap in a dry tea towel to give a softer crust.

370 g whole meal flour
250 g white flour
25 g wheat germ
25 g oats
35 g butter
1/4 cup molasses (treacle)
2 eggs
500 ml buttermilk
2 teaspoons baking soda
1 teaspoon salt
2 teaspoons oats, as a garnish

Steps:

  • Preheat oven to 375°F.
  • Spray loaf pan 9"x5".
  • In a large mixing bowl mix all dry ingredients.
  • Melt butter add molasses and stir well.
  • Mix buttermilk and eggs together.
  • Pour all wet ingredients into flour mixture.
  • Stir with wooden spoon until just combine.
  • Don't over mix or it will be dry.
  • Spoon into loaf pan and sprinkle oats on top as a garnish.
  • Bake 35 - 40 minutes or until bread sounds hollow when you tap the tops with your fingers.
  • If necessary, cover with foil for the last 10 minutes of baking to prevent overbrowning.
  • It will double in size.
  • Let it cool for 5 minutes and remove from pan.
