- 1. Cream the butter until smooth.
- 2. Add the corn starch, flour, and confectioners' sugar, a little at a time, until well mixed.
- 3. Scoop dough out onto a cookie sheet either ungreased or lined with parchment paper.
- 4. Smooth dough out onto a cookie sheet.
- 5. Bake in preheated 325-degree oven for about 30 minutes. Shortbread should not brown, but just begin to slightly lose the whiteness.
- 6. Cool to room temp.
- 7. Slice into bars or triangles.
IRISH SHORTBREAD COOKIES
This is the most amazing shortbread ever. Flaky and rich, and very very simple; I've never had a shortbread that compares to it. Note: I use salted butter. If you use unsalted, you may want to add a pinch of salt.

- Cream butter and sugar together until light and fluffy.
- Sift in cornstarch and flour; mix well.
- Press into a 10 3/4 by 7 inch pan.
- Prick all over with a fork.
- Bake in preheated 275 F oven for 30 minutes, then reduce heat to 250 F and bake 1 to 1 1/2 hours longer.
- Remove from pan and sprinkle with powdered sugar. Cut into 20 finger shaped cookies.

Steps:
- With paddle attachment, mix butter for 30 seconds. Add a 1/3 of the powdered sugar, mix on first speed for 1 minute. Add another 1/3 of the powdered sugar, mix another minute. Finally, add the last 1/3 of sugar, mix 1 minute.
- Combine eggs, vanilla, and almond extract together, add to butter/sugar mixture. Mix for 30 seconds.
- Add a 1/3 of the flour, mix 1 minute.
- Scrape.
- Add the next 1/3 of the flour, mix 2 minutes.
- Scrape.
- Add the final 1/3 of the flour, mix 3 minutes.
- Refrigerate until able to be rolled out and cut into desired shapes.

Or the dough may be pressed into a 9" round or 9" square, lightly oiled, pan and then after baking sliced into bars or triangles. 3. Bake in preheated 325 degree oven for about 12 min. Shortbread should not brown, but just begin to slightly loose the whiteness.
THE REAL DEAL IRISH BREAKFAST
This is what your average Irish person will crave when they live abroad- not the healthiest way to start your day- but its delicious. The key here is the quality of the pork you use - "clonakilty" is the best brand in my opinion - worth the effort to try and get an Irish brand for the ingredients as it genuinely makes a big difference! I think this is a great hangover cure because its a greasy comfort food . Not for those watching their waist line though :S

- Heat a frying pan with a little oil. Fry the sausages slowly over a medium heat - keep turning.
- Add the pudding to the pan and continue to cook. Put sausages and pudding on a plate and keep warm in the oven.
- Place rashers on frying pan and cook until colour has darkened and they crisp - transfer to oven. Add more oil to the frying pan and sauté the mushrooms.
- Add as many eggs are you want per person and fry however you prefer them.
- Add the salt and pepper to the mushrooms.
- Serve all ingredients on a plate and serve with crusty french bread (aka breakfast roll - popular hangover cures sold in petrol stations in Ireland ) or with Irish brown bread . Add ketchup to taste. Loads of Kerrygold Irish butter for the bread is yum as it is slightly salty and has a gorgeous flavour. Round it all of with a glass of cold orange juice and a strong cup of tea!
