SUGAR-FREE BANANA BREAD
This recipe is naturally sweetened with fruit and an optional drizzle of agave syrup meaning less added sugar is required in this banana bread

- Grown ups: Preheat the oven to 180C/ 160C fan/ gas mark 4. Grease and line a 450g loaf/1lb tin with baking parchment.
- Children: Weigh the flour, baking powder, cinnamon and sultanas into a bowl and mix with a wooden spoon. Then weigh the butter, vanilla essence, egg, milk and mashed bananas and put into another bowl or jug and mix with a small balloon whisk or fork. Pour the 'wet' banana mixture into the 'dry' flour mixture and combine thoroughly with a wooden spoon. Weighing needs to be very accurate when baking so help older children to measure carefully. Younger children can also get involved by spooning or pouring into the scales with adult supervision. Younger children can also beat the egg with a fork and mash the banana with a potato masher.
- Grown ups: Pour the cake mixture into the prepared tin and bake for 30 - 40 mins or until a skewer inserted in the middle comes out clean. Remove from the oven, allow to cool in the tin for 10 mins then turn out.
- Children: Drizzle with agave syrup if using.

- Pre-heat oven to 325F. Grease a 9x5 inch loaf pan and set aside.
- In a medium bowl, whisk the flour, cinnamon, baking soda and salt. Set aside.
- In a large bowl, beat eggs, oil, honey, milk and vanilla for 2 minutes. Stir in the bananas, flour mixture and chocolate chips (or any other add ins of choice.
- Pour batter into greased pan, sprinkle with some more cinnamon, raw sugar, or banana slices (optional) Bake for 50-55 minutes or until a toothpick inserted comes out clean. Cool for 10 minutes, slice and enjoy!

NO SUGAR ADDED BANANA BREAD

- Preheat your oven to 325 and prep a loaf pan for nonstick.
- In a medium sized bowl, whisk together your flour, baking soda, and baking powder. Set this bowl aside.
- Next, in a mixing bowl, cream together the sugar alternative and the butter. Then stir in the beaten eggs and the vanilla extract. Next, we will add the flour mixture to the mixing bowl with the other ingredients. Do so by adding half of the flour mixture at a time, gently mixing between additions. When this is blended, you can fold in the bananas and optional chopped nuts.
- Bake your bread for 65-70 minutes or until a toothpick comes out clean. Allow it to cool for a few minutes before removing from the pan.

- Preheat oven to 350 degrees F. Line 9 x 5 loaf pan with unbleached parchment paper. In a large bowl, mash bananas with a fork or a masher.
- Add eggs, applesauce, maple syrup, oil, vanilla, baking powder, baking soda and salt; whisk to combine (masher works fine).
- Add flour and stir gently just enough to mix.
- Pour batter in prepared loaf pan and bake for 50 - 60 minutes or until a toothpick inserted in the middle comes out clean.
- Remove from the oven and let cool for 15 minutes. Then transfer to a cooling rack to cool off completely. Cut into 10 slices and enjoy.

- In a large mixing bowl, mash the bananas until smooth.
- Add in the greek yogurt, honey, and vanilla, mix.
- Stir in the eggs.
- Combine the flour, baking soda, baking powder, cinnamon, and salt in a separate bowl.
- Gradually mix in the flour until no streaks remain.

- Mix ground and whole flax seeds, salt, garlic, onion, and water.
- Then -- Add sunflower and sesame seeds and mix well.
- Use the back of a spoon to spread batter evenly on one dehydrator tray. Dry at 104 degrees F for 4 hours. Flip and score into nine slices to make it easy to break in straight lines. Dehydrate another hour before serving.
- OR you can put it out in the sun for 3 hours, score it, flip it and let it go another 2-3 hours -- .

- Place oats in a food processor and process until a fine flour forms. Place oat flour in a mixing bowl.
- Process macadamia nuts (or your nut of choice) in food processor until they are evenly broken down (still a little bit chunky, making sure not to over process or you’ll end up with nut butter). See picture for texture.

Follow the instructions above, but scoop the batter into muffin tins with paper cups (sprinkle 1 teaspoon of raw sugar onto each muffin) and bake them for about 34-36 minutes in muffin tins. Test for doneness with a toothpick as well. I used Tulip cupcake holders for these.
