This raw beet salad is crunchy, refreshing, and very filling. It's made with shredded or spiralized fresh beets and a very simple dressing. It's perfect as a side salad or cold side dish.

1 medium beet, shredded or spiralized
3 medium carrots, shredded or spiralized
a handful of parsley
juice of 1/2 lemon
1 apple, diced
1/2 cup raw pumpkin seeds
3 Tbsp olive oil
2 Tbsp balsamic vinegar
salt to taste (optional)

Steps:

  • Place the shredded beets, carrots, and parsley into a salad bowl.
  • Slice the apple into small cubes. Place the diced apple into a small bowl and pour the lemon juice over it. Mix to make sure all the pieces are covered in lemon juice. Then add it to the beets.
  • Add the pumpkin seeds, olive oil, and balsamic vinegar. Toss to combine. Season with salt if needed.

350g/12oz carrots, peeled and trimmed
350g/12oz raw beetroot, peeled and trimmed
2 shallots, peeled and finely chopped
2 tsp cumin seeds
2 tbsp olive oil
1 tbsp sherry or red wine vinegar
1 small bunch flat parsley, roughly chopped

Steps:

  • Peel and trim the carrots and beetroot, then coarsely grate both on a grater – wear rubber gloves if you don’t want pink hands! Alternatively, use a food processor fitted with a grating plate. Place the grated vegetables in a bowl, add the shallots.
  • Heat the cumin seeds in small pan until they are hot and smell pungent. Remove from the heat and scatter over the vegetables. Add the olive oil, vinegar and parsley, then toss well. Leave to marinate for at least 15mins before serving.

3 large beetroot , cut into wedges
2 tbsp rapeseed oil
5 thyme sprigs
25g feta , crumbled
1 tbsp honey
200g canned green lentils , drained
50g rocket
30g mixed seeds
small handful of dill , to serve

Steps:

  • Heat the oven to 220C/200C fan/gas 8. Toss the beetroot, ½ tbsp oil and the thyme in a roasting tin. Season. Roast for 30-35 mins or until tender, adding the feta for the last 10 mins. Leave to cool slightly.
  • Whisk the remaining oil with the honey, a splash of cold water to loosen and some seasoning. Warm the lentils in a pan or microwave, then season. Toss the beetroot and feta with the rocket and dressing, then serve on top of the lentils with the seeds and dill scattered over.

I've used my Vegetable Spiraliser to create long stands of the beetroots and carrots (so quick and looks amazing too). Alternatively you can cut them into match-sticks by slicing them thinly (do the carrots on a diagonal), then grab a bunch of slices and lay them flat and chop into match sticks. Or if you have a grater, mandoline you can also use that, or a food processor with a grating attachment or chopping function.
  • Thinly slice the red onions and mix together with the remaining ingredients, reserving a few mint leaves, seeds and raisins to sprinkle on top. If you're using dried and activated seeds they'll be crunchy already so add as is, otherwise pop your seeds in a pan on low heat for 5 minutes, shaking regularly until they just start to go brown and aromatic.
