Steps:
- Put the herbs, radishes and beetroot in a food processor and blitz until chopped into small pieces. Stir in the rest of the ingredients, adding the lemon juice a bit at a time to taste - you may not need all of it. Season, then place on a large platter topped with a few parsley leaves, if you like, and serve straight away.

TABBOULEH WITH APPLES, WALNUTS AND POMEGRANATES
This grain-free tabbouleh, a perfect side for a Passover meal, comes from chef Michael Solomonov of Zahav.

Steps:
- Mix the parsley, pomegranate seeds, apples and red onion in a medium bowl. Stir in the pepper or paprika, honey, lemon juice and olive oil. Season to taste with salt and mix thoroughly. If desired, at this point the mixture may be covered and refrigerated for up to two days.
- In a dry skillet over medium heat, stir the walnuts until toasted, about 3 minutes. Sprinkle the walnuts with a pinch salt and crush them with the side of a knife or in a mortar and pestle until they are in coarse pieces.
- Stir in the crushed walnuts. (If the tabbouleh has been refrigerated, set it out at room temperature for an hour before adding the walnuts.)

- In a medium sized salad bowl, using your microplane grater (or the smallest holes of a cheese grater) grate fresh ginger directly into bowl, about one teaspoon. Grate beets and apples, add them to the bowl with the ginger, and toss until ginger is evenly distributed. Add sherry vinegar, salt, and pepper to bowl and toss to coat evenly. Add olive oil, stir to combine. Taste and adjust seasonings. Serve immediately or keep refrigerated.

RAW BEET AND APPLE TABBOULEH
Steps:
- In a large bowl stir together bulgur and boiling-hot water. Let mixture stand, covered, 30 minutes.
- While bulgur is standing, trim beets (reserve greens for another use) and peel. Using a mandoline or very sharp knife separately cut beets and apple into 1/8-inch-thick slices. Separately cut beet and apple slices into 1-inch-long julienne strips. In a blender or food processor puree basil with oil, lemon juice, and salt and pepper to taste until smooth.
- Fluff bulgur with a fork. Add beets, apple, and about 1/4 cup dressing, tossing to combine.
- Serve tabbouleh with remaining dressing on the side.
WALNUT, FETA & APPLE TABBOULEH
Not your usual Tabbouleh, this salad merely has a similar consistency and shares some common ingredients with its authentic cousin. It has a lot of crunch thanks to the apple, radish and walnuts, and involves no actual 'cooking'. The bulgur and dressing could easily be made a day in advance, but I do find it tastes best if the salad, fully combined, is allowed to sit for about 30 minutes to an hour before serving. Ideal to share, bring it along to your next potluck party! Serves 6-8 easily as a side. Prep time includes the 30 minutes it takes for the bulgur to soak.

- Place the bulgur into a medium sized ceramic or Pyrex bowl. Pour the boiling vegetable stock over top and stir. Cover it with a loose fitting lid or a tea towel and set aside for 30 minutes. If using frozen peas, set them into a similar bowl and cover with boiling or very hot water and set aside.
- Finely mince the clove of garlic, or pass through a garlic press. Place it in a small bowl and whisk together with the rest of the dressing ingredients; apple cider vinegar, olive oil, marjoram, sea salt and black pepper. Set aside. While the bulgur and dressing sit, prepare the rest of the ingredients.
- Keep in mind that a small dice will best suit the fine bulgur wheat (i.e., a 1/4-1/2 inch dice). Dice the green apple, add it into your salad bowl and sprinkle with the single teaspoon of vinegar (to stop it from browning). Seed and dice the tomato, dice the red onion and the radish and add them all into the salad bowl along with the feta cheese and walnuts. Finely mince the fresh parsley and add it to the bowl.
- By now 30 minutes have likely passed, check the bulgur by fluffing it with a fork. It should be cooked, but still al dente. Allow it to cool down slightly if it hasn't already.
- Add the peas to the salad (straining first of course if they were previously frozen), along with the cooled down bulgur. Re-whisk the dressing and pour it over the salad, toss gently to thoroughly combine. Enjoy!

- In a small bowl, mix sour cream, mustard and vinegar.
- Set aside.
- Grate beets by hand using the second-largest hole on a 4 sided grater or using the grating attachment on a food processor.
- Put in a mixing bowl.
- Core apple but do not peel.
- Cut into 1/2-inch cubes and add to beets.
- Add raisins, hazelnuts and chives.
- Season with salt and pepper.
- Add sour cream dressing and mix well.
- Taste for seasoning and serve over watercress.

- Tip the bulgur into a sieve and rinse under cold water. Cook in a pan of boiling water following pack instructions. Drain and leave to cool.
- Crush the coriander seeds, then tip into a pan and dry-fry for 3 mins until just toasted. Toss the bulgur with the toasted seeds, the parsley, apple, broad beans, beetroot, lemon juice and rapeseed oil.
- Spoon the tabbouleh onto a serving platter and scatter over the feta and pistachios.

- Preheat the oven to 350°. Put the beets in a baking dish and toss with 2 tablespoons of the oil. Cover with foil and bake for about 1 1/2 hours, or until tender when pierced with a knife. Let cool slightly, then slip off the skins. Cut into 1-inch cubes.
- Meanwhile, put the bulgur in a medium bowl and pour the boiling water over it. Cover with a plate and let stand until the water is absorbed and the bulger is tender, about 1 hour. Drain the bulgur, rinse with cold water and squeeze dry in handfuls, fluffing it with your fingers as you transfer it to a large bowl.
- In a small skillet, toast the allspice and cumin over moderately high heat until fragrant, about 1 minute. Let cool. Grind in a spice grinder or mortar, or finely chop with a knife. Transfer to a bowl. Add the remaining 1/4 cup plus 1 tablespoon olive oil, the lemon juice, 1/2 teaspoon salt and a generous pinch of pepper.
- Add the dressing and the onion to the bulgur, toss well and season with salt and pepper. Add the beets and toss again. Stir in the spearmint and serve chilled or at room temperature.
