1/3 cup (67 grams) granulated sugar
1 3/4 cups (228 grams) all-purpose flour, plus more for dusting
1/2 teaspoon kosher salt
3/4 cup (168 grams) unsalted butter, cold and cubed
2 large eggs, separated
Nonstick cooking spray, for the pan
1 cup (120 grams) almond meal
3/4 cup (150 grams) granulated sugar
1/2 teaspoon kosher salt
6 tablespoons (85 grams) unsalted butter, softened
1 teaspoon almond extract
1 large egg
About 1 cup (120 grams) powdered sugar, or more as needed
1/4 cup (60 milliliters) heavy cream, or more as needed, or 2 ounces fresh raspberries
1/4 teaspoon almond extract
To decorate: sprinkles, sliced almonds

Steps:

  • For the shells: Pulse together the granulated sugar, flour and salt in a food processor to combine. Add the butter and continue to pulse until mealy. Add the egg yolks (reserve the egg whites for the filling) and pulse until the dough comes together. Press the dough into a disc, then wrap in plastic wrap and refrigerate for at least an hour, or up to overnight.
  • To mold the shells, grease a muffin tin with nonstick spray. Roll out the dough on a floured surface to 1/4-inch-thick, dusting with more flour as needed. Cut out 3-inch circles and press them into the muffin cups so that the dough comes all the way up the sides. (No worries if the dough tears; just patch it up with additional dough.) Freeze the shells for 15 minutes.
  • For the filling: Preheat the oven to 350 degrees F.
  • Combine the almond meal, granulated sugar, salt, and butter, either by blending it in the food processor (no need to clean it out after making the dough, you can just use it immediately for this step), or by stirring it together in a large bowl (I find it's easiest to get in there with my hands). Add the almond extract, egg and the reserved egg whites from the shells, and continue to blend/stir until smooth and combined.
  • Fill the frozen shells with the filling so that it comes up about 1/4-inch from the top. Bake until the tops and edges are lightly browned; begin checking for doneness at 30 minutes. Let cool in the pans for 10 minutes, then use a small offset spatula or a knife to remove to a wire rack to cool completely.
  • For the glaze: If making the glaze with heavy cream, combine the powdered sugar, heavy cream and almond extract in a bowl until smooth. Add additional powdered sugar or liquid to thicken it up or thin it out so that you get the consistency of a thick glue.
  • To make the glaze with the raspberries, place the raspberries in a fine-mesh sieve and give them a rinse. Place the sieve over a bowl and use a stiff rubber spatula or wooden spoon to smash them through the sieve into the bowl until you're just left with seeds in the sieve. Be sure to scrape the underside of the sieve to get the stuff that's sticking to it. (You should be left with about 2 tablespoons seedless puree. If it's a tiny bit more or a tiny bit less, that's fine.) Add the powdered sugar and almond extract and mix to make a thick glaze. If it's too thick, add a few drops of water to thin it out, and if it's too thin, add a few more spoonfuls of powdered sugar. It should be the consistency of a thick glue.
  • Spread the glaze over the cooled tarts and decorate with sprinkles, almonds and anything else you'd like! These will keep for several days at room temperature or in the fridge.

Soft and tender Raspberry Almond Cake with a crunchy, nutty crust.

115 grams (1/2 cup or 1 stick) unsalted butter, room temperature
150 grams (3/4 cup) caster sugar or granulated sugar
2 large eggs, room temperature
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
175 grams (1 and 1/4 cups) plain flour or all purpose flour
75 grams (3/4 cup) almond meal or ground almonds
2 teaspoons baking powder
1/4 teaspoon salt
180 ml (3/4 cup) full fat or whole milk
125 grams (1 cup) fresh raspberries
30 grams (1/3 cup) flaked almonds
Icing sugar or powdered sugar, to serve, optional

Steps:

  • Preheat oven to 180 C (350 F) standard / 160 C (320 F) fan-forced. Grease and line an 8-inch round cake pan with baking or parchment paper.
  • In a large mixing bowl, beat butter and sugar with an electric mixer on medium speed until pale and creamy, approximately 1-2 minutes.
  • Add eggs, vanilla and almond extracts and beat briefly to combine. Don't worry it it goes a little lumpy at this stage.
  • Add flour, almond meal, baking powder and salt, along with the milk. Gently mix together on a low speed, just until cake batter is smooth and creamy.
  • Roughly tear 95 grams (3/4 cup) of the raspberries in half and fold them into the batter. Transfer batter to prepared pan. Press remaining whole raspberries on top. Scatter over flaked almonds.
  • Bake for approximately 40 minutes or until a skewer inserted into the middle of the cake comes out clean.
  • Leave cake to cool for 10 minutes before carefully transferring to a wire rack to cool completely. To serve, dust cake lightly with icing sugar.

225g softened butter , plus extra for greasing
225g golden caster sugar
4medium eggs
2 limes , grated zest and juice
250g self-raising flour , sifted with a pinch of salt, plus extra flour
25g ground almond
100g each blueberry and raspberries
8 tbsp lime juice (about 4 limes)
1 lime , grated zest
140g golden caster sugar

Steps:

  • Line the base and sides of a 20cm/8in square cake tin (not loose-based) with greaseproof paper and butter the paper. Set oven to 180C/Gas 4/fan oven 160C.
  • Cream the butter and sugar together until light. Gradually beat in the eggs, adding a little flour towards the end to prevent curdling. Beat in the lime zest, then fold in the flour and almonds. Fold in enough lime juice - about 3 tablespoons - to give you a good dropping consistency (the mixture should drop easily from the spoon when tapped).
  • Fold in three quarters of the blueberries and raspberries and turn into the prepared tin. Smooth the surface, then scatter the remaining fruit on top - it will sink as the cake rises.
  • Bake for about 1 hour (cover with foil if beginning to brown too much), or until firm to a gentle prod in the centre. A skewer pushed into the centre should be clean when removed.
  • Meanwhile make the syrup: put the lime juice, zest and sugar in a small saucepan. Put over a gentle heat and stir, without allowing to bubble. The sugar should dissolve a little. As soon as the cake comes out of the oven, prick all over with a skewer then spoon the syrup over it. To store, cool before wrapping in paper and/or foil.
  • Carefully remove the cake from the tin, discard the lining paper and cut into 12 pieces to serve.

1 cup softened butter
2/3 cup sugar
1/2 teaspoon almond extract
2 cups all-purpose flour
1/2 cup seedless raspberry jam
1 cup confectioners' sugar
3 teaspoons water
1/2 teaspoon almond extract

Steps:

  • In a Medium Mixing Bowl (I prefer using a Plastic Bowl that has a lid).
  • Cream Butter and Sugar.
  • mix in the almond extract.
  • Gradually mix in flour until the dough forms a ball.
  • Cover and refrigerate for an hour for easier handling.
  • Preheat Oven to 350 degrees.
  • Roll into 1 1/2 inch balls and place on a ungreased cookie sheet.
  • Using a wooden spoon handle make and indention in the middle of the ball.
  • (I like using the knuckle on my first finger).
  • Fill with the raspberry jam.
  • Bake at 350 degrees for 14-18 minutes depending on your oven.
  • Add aditional Raspberry jam if desired (I never do this).
  • Remove and place on wire racks for cooling.
  • Mix the Glaze ingredients.
  • Using a butter knife (dipping it in the glaze Mixture) Letting the glaze run off the butter knife, Zig Zag the mixture across the cookies creating a continuing Z.

7 ounce tube almond paste
3 eggs

one pint fresh raspberries, rinsed, dried carefully
one ounce semisweet baking chocolate

Steps:

  • 1. Preheat oven to 350 2. In bowl of mixer, cream together butter and sugar 3. Break up almond paste into bits, add to mixer, continue creaming until incorporated 4. Add eggs to mixture, continue mixing for about a minute to incorporate 5. Add flour to mixing bowl, mix for about another minute 6. Butter and very lightly flour a 10 inch tart pan with removable bottom 7. Scrape batter into prepared cake pan 8. Put rasperries, open side down, decoratively on top of batter, spacing evenly; press down very lightly into batter (raspberries should still protrude slightly from batter) 9. Bake for 30 minutes; cake tester inserted into cake should come out clean 10. Cool cake for 8 minutes in pan, then remove outer part of tart pan; place cake on plate 11. Melt one ounce semisweet chocolate on medium power in microwave, until just shiny (time depends on microwave power); drizzle chocolate decoratively over cake (spiderweb pattern looks very pretty)

  • Bake at 350 degrees for 50 minutes.
  • Make glaze by boiling water, corn syrup, and sugar until sugar dissolves, then add liquor and chocolate. Stir until dissolved . Let set to thicken then glaze cake.

Crust:
1 1/4 cups finely ground chocolate wafer cookies (about 25)
5 tablespoons unsalted butter, melted
Filling and topping:
6 ounces almond paste, crumbled into 1/4-inch pieces (about 1 1/3 cups)
6 ounces bittersweet chocolate (do not exceed 61% cacao), chopped
1/2 cup heavy whipping cream
3 half-pint baskets fresh raspberries
2 tablespoons seedless raspberry jam
2 teaspoons kirsch (clear cherry brandy)
Sliced almonds, toasted
Ingredient info: Almond paste is available in the baking aisle of most supermarkets and at specialty foods stores.
Special Equipment
1 9-inch-diameter tart pan with removable bottom

Steps:

  • For crust:
  • Preheat oven to 350°F. Combine cookie crumbs and 5 tablespoons butter in medium bowl. Stir until crumbs are evenly coated and beginning to stick together. Press crumb mixture in thin even layer onto bottom and up sides of 9-inch-diameter tart pan with removable bottom. Bake crust until set and beginning to crisp, pressing with back of fork if crust puffs, about 15 minutes. Cool crust completely on rack.
  • For filling and topping :
  • Sprinkle almond paste over crust. Gently press to even layer. Place chocolate in medium bowl. Bring cream to simmer in small saucepan. Pour cream over chocolate. Let stand 1 minute, then whisk until melted and smooth. Pour ganache evenly over almond layer. Chill tart until chocolate is cold and set, at least 4 hours and up to 1 day.
  • Arrange raspberries, pointed side up, over top of tart. Stir jam and kirsch in small pan over low heat until blended and heated through. Brush glaze over berries. Sprinkle almonds around edge of tart. DO AHEAD: can be made 6 hours ahead. Chill uncovered.
  • Using small sharp knife, loosen crust from pan sides. Push up pan bottom, releasing tart. Cut into wedges; serve cold.
