Big things do come in small packages! Capture the brightness and energy of spring with this vinaigrette. This combination is super simple and super flavorful. Substitute the balsamic with red wine vinegar for a lighter flavor.

1/2 cup olive oil
1 cup raspberries, fresh
1/4 cup walnuts, toasted, lightly chopped
1/4 cup balsamic vinegar
1/4 cup red onion, lightly chopped
1/4 teaspoon kosher salt
1/8 teaspoon black pepper, ground

Steps:

  • Place all the ingredients in a blender or food processor. Process until smooth. Taste and adjust seasoning. Makes 1 1/2 - 2 cups.

0.333 cup toasted walnut pieces*
0.25 cup raspberry or red wine vinegar
2 tablespoon honey
1 tablespoon Dijon-style mustard
0.5 teaspoon salt
0.25 teaspoon ground black pepper
0.333 cup olive oil

Steps:

  • In a blender container combine raspberries, walnuts, vinegar, honey, mustard, salt, and pepper. Cover and blend until nearly smooth. With blender running, drizzle in the oil until combined. Serve as desired with toss or fruit salads.

Steps:

  • Measure all the ingredients and add everything to your blender or food processor.
  • With variable speed units, start with a low speed and then gradually increase it to a higher speed until the mixture is perfectly smooth.

This is from a recipe on drfuhrman.com. It is the best vinaigrette I have ever tasted, healthy or not. Everyone who has tasted this salad dressing asks for the recipe. You need a high speed blender or food processor to make the dressing so the raisins and nuts blend with the rest of the ingredients. We have this dressing every day for lunch on a salad of romaine lettuce with extra toppings like green or red pepper, avocado, cucumber, grape tomatoes, pumpkin seeds, sunflower seeds, raw nuts, raisins, sesame seeds, ground flax seed, etc. We like the nuts left whole and put on the salad instead of putting them in the dressing but they should be included in the salad one way or the other to help the absorption of the nutrients in the salad. When I make it, I usually quadruple the dressing recipe and store it in glass jars in the refrigerator.
