Raspberry Shortbread image

The most amazing shortbread cookies I have ever made!!! The secret is the grated, frozen dough - and the raspberry filling really sends it over the top.

Number Of Ingredients 8

1 lb butter, at room temperature
4 egg yolks
2 cups granulated sugar
4 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1 cup raspberry jam, at room temperature
1/2 cup confectioners' sugar

Steps:

  • In a mixer fitted with a paddle attachment (or using a hand mixer), cream the butter until soft and fluffy.
  • Add the egg yolks and mix well.
  • In a medium bowl, stir together the granulated sugar, flour, baking powder, and salt.
  • Add to the butter/egg yolk mixture and mix just until incorporated and the dough starts to come together.
  • Turn the dough out onto a floured work surface and form into 2 balls.
  • Wrap each ball in plastic wrap and freeze at least 2 hours or overnight, or for as long as a month.
  • Preheat the oven to 350F.
  • Remove 1 ball of dough from the freezer and coarsely grate the frozen dough into the bottom of a 9 by 13 inch baking pan or a 10 inch tart pan with a removable bottom.
  • Make sure the surface is covered evenly with shreds of dough; gently press down on dough to compact slightly.
  • With a spoon or spatula, spread the jam over the surface, to within 1/2-inch of the edge all the way around.
  • Remove the remaining dough from the freezer and coarsely grate it over the entire surface.
  • Bake until light golden brown, 30 to 40 minutes.
  • As soon as the shortbread comes out of the oven, dust with confectioners sugar.
  • Cool on a wire rack, then cut in the pan with a serrated knife.

1 cup butter, softened (no substitutes)
2/3 cup sugar
1/2 teaspoon almond extract
2 cups all-purpose flour
1/3-1/2 cup seedless raspberry jam
1 cup powdered sugar
2 -3 teaspoons water
1/2 teaspoon almond extract

Steps:

  • In a mixing bowl, cream butter and sugar.
  • Beat in extract; gradually add flour until dough forms a ball.
  • Cover and refrigerate for 1 hour or until easy to handle.
  • Roll into 1 inch balls.
  • Place 1 inch apart on ungreased baking sheets.
  • Using the end of a wooden spoon handle, make an indentation in the center.
  • Fill with jam.
  • Bake at 350 degrees for 14-18 minutes or until edges are lightly browned.
  • Remove to wire racks to cool.
  • Spoon additional into cookies if desired.
  • Combine glaze ingredients and drizzle over cookies.

1 cup fat free raspberry-flavored yogurt
3 tablespoons vanilla extract
3 tablespoons canola oil
3 ¼ cups bread flour
1 teaspoon salt
2 tablespoons white sugar
2 ¼ teaspoons active dry yeast
1 tablespoon water

Steps:

  • Layer yogurt, vanilla extract, canola oil, bread flour, salt, sugar, and yeast into a bread machine in the order recommended by manufacturer's instructions.
  • Set the machine to basic cycle for a 2-pound loaf. Add water in 1-teaspoon increments if dough is too dry after first kneading period.
  • Cool finished bread on a wire rack for 20 minutes before slicing.

A delicious shortbread topped with jam and coconut! From an old Country Womans Association cookbook in Australia. In imperial measures as this was well before metric arrived!

4 ounces butter
1 1/2 cups self raising flour
1 1/2 cups desiccated unsweetened coconut
2 cups sugar
2 eggs
1 tablespoon raspberry jam

Steps:

  • Line a roasting dish with foil, leaving enough room at either end so you can immediately lift it out.
  • Beat butter and half of the sugar to a cream. Add 1 beaten egg; mix well, then add the flour. Knead well and cover the base of the pan with the shortbread. It is easy to take small pieces and flatten in your hand first. Spread thinly with raspberry jam.
  • Mix the remaining sugar with 1 egg, adding the coconut mix together well. Carefully add all over the top, using a fork to cover properly. Bake at 150°C (300°F) for about 30 minutes. Coconut should be nicely browned.
  • Lift out the shortbread as soon as its cooked - using the extra foil on both sides of the roasting dish, place on a cutting board then cut into squares immediately and leave to cool.
  • PLEASE NOTE: Don't use sweetened coconut as the sugar in it melts and the syrup from it dilutes the base.

1 cup cornmeal, preferably stone-ground (medium or finely ground)
1 cup fat-free buttermilk or 1 cup low-fat buttermilk
2/3 cup pure maple syrup
2 tablespoons butter
1/2 teaspoon salt
4 large eggs, separated
1/4 cup all-purpose flour
2 teaspoons vanilla extract
1/4 cup sugar
3 cups raspberries, divided
8 tablespoons nonfat plain Greek yogurt (optional)

Steps:

  • Preheat oven to 375°F Coat an 8-inch-square baking dish (or other 2-quart ovenproof dish) with cooking spray.
  • Combine cornmeal, buttermilk, maple syrup, butter and salt in a large saucepan. Cook over medium-high heat, whisking constantly, until the mixture bubbles and thickens. Remove from the heat. Whisk egg yolks in a large bowl. Whisking constantly so the eggs won't scramble, add 1/2 cup of the hot cornmeal mixture until completely combined. Scrape in the remaining cornmeal mixture and whisk until smooth. Whisk in flour and vanilla until smooth.
  • Beat egg whites in another large bowl with an electric mixer on high speed until soft peaks form. Gradually sprinkle in sugar, continuing to beat until soft glossy peaks form. Fold the whites into the cornmeal mixture. Fold in 2 cups raspberries. Spoon the batter into the prepared dish.
  • Bake until puffed, golden brown on top and the center is set, 35 to 40 minutes. The spoonbread will be slightly wobbly and soft when it is completely cooked. Let cool for 20 minutes. Serve warm, topped with some of the remaining raspberries and yogurt, if using.

The original recipe from the Boone Tavern hotel in Berea, Kentucky. I serve it annually on Derby Day. The Boone Tavern hotel is operated by the Berea College hospitality students, and has a lovely dining room with classic Kentucky fare.

4 tablespoons unsalted butter (1 tbsp. softened, 3 tbsp. melted)
3 cups milk
1 1/4 cups white cornmeal (finely ground)
1 teaspoon baking powder
1 teaspoon fine salt
2 eggs, well beaten

Steps:

  • Grease a 9" round cake pan with some of the softened butter. Cut out a parchment paper circle to fit inside the pan, nestle it into the bottom, and grease the paper with the remaining softened butter. Set the prepared pan aside.
  • In a 2-quart saucepan, bring the milk to a boil, whisking occasionally, over high heat. While whisking, pour in the cornmeal in a steady stream. Whisk vigorously to incorporate the cornmeal, for about 1 minute. Remove the pan from the heat and set aside to let the cornmeal mixture cool to room temperature.
  • Heat oven to 350°. Transfer the cornmeal mixture to the bowl of a standing mixer fitted with a paddle attachment. Add the remaining butter, baking powder, salt, and eggs and mix on medium speed until uniform and aerated, about 15 minutes.
  • Pour cornmeal batter into the prepared pan and bake until golden brown and puffy and a toothpick inserted in the center comes out clean, about 1 hour and 20 minutes. Serve immediately.

1 lb unsalted butter, slightly softened
4 egg yolks
2 cups sugar
4 cups flour
2 teaspoons baking powder
1/4 teaspoon salt
1 cup raspberry jam (with or without seeds, at room temperature)
1/4 cup powdered sugar

Steps:

  • Cream the butter in a large bowl with an electric mixer until soft and fluffy.
  • Add the egg yolks and mix well.
  • In a another bowl mix the sugar, flour, baking powder and salt together.
  • Add the dry ingredients to the butter/egg mixture and mix until just blended and the dough starts to come together.
  • Turn out the dough onto a floured work surface and form into 2 balls.
  • Wrap each ball in plastic wrap and freeze at least 2 hours or overnight.
  • Heat your oven to 350 degrees F.
  • Remove one ball of dough from the freezer and coarsely grate it into the bottom of a 9x13 inch pan. Make sure the surface is covered evenly with shreds of dough.
  • With the back of a spoon or flexible spatula spread the jam over top, to within 1/2 inch of the edge all the way around.
  • Remove the remaining dough ball from the freezer and coarsely grate it over the entire surface.

  • Dust with the powdered sugar as soon as it comes out of the oven.
  • Cool on a wire rack and then cut in the pan with a serrated knife.
