1 cup unsweetened pineapple juice
1/4 cup white wine or reduced-sodium chicken broth
2 tablespoons brown sugar
2 tablespoons reduced-sodium soy sauce
1/4 teaspoon cayenne pepper
1 beef top sirloin steak (1 pound), cut into thin strips
2 tablespoons cornstarch
1-1/2 teaspoons olive oil, divided
2 large carrots, sliced
1 small onion, halved and sliced
1 medium green pepper, julienned
1/2 cup fresh snow peas
3/4 cup unsweetened pineapple tidbits
2 cups cooked brown rice

Steps:

  • In a small bowl, combine the first five ingredients. Pour 2/3 cup marinade into a large resealable plastic bag; add the beef. Seal bag and turn to coat; refrigerate for 30 minutes. Cover and refrigerate remaining marinade., In a small bowl, combine cornstarch and reserved marinade until smooth; set aside., Drain and discard marinade. In a large nonstick skillet or wok, stir-fry beef in 1 teaspoon oil for 2-3 minutes or until no longer pink. Remove with a slotted spoon and keep warm., Stir-fry carrots and onion in remaining oil for 4 minutes. Add green pepper and snow peas; stir-fry 2-3 minutes longer or until vegetables are crisp-tender., Stir cornstarch mixture and add to the pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Add beef and pineapple; heat through. Serve with rice.

1 can (20 ounces) pineapple chunks
1/2 cup minced fresh cilantro
1/4 cup soy sauce
1 tablespoon ground ginger
1 pound boneless beef round steak, thinly sliced
1 teaspoon cornstarch
2 teaspoons canola oil
1 medium sweet red pepper, thinly sliced
1/2 cup cut fresh green beans
1 tablespoon chopped green chilies
2 garlic cloves, minced
2 green onions, sliced
Hot cooked rice

Steps:

  • Drain the pineapple, reserving 1 cup pineapple and 3/4 cup juice. (Cover and refrigerate remaining pineapple for another use.) In a small bowl, combine the cilantro, soy sauce, ginger and reserved pineapple juice. Remove 3/4 cup; cover and refrigerate. , In a large resealable plastic bag, combine the beef and remaining marinade. Seal bag and turn to coat; refrigerate for 30 minutes., Drain and discard marinade. Combine cornstarch and reserved juice mixture until smooth. In a skillet, stir-fry beef in oil for 5-6 minutes. 2 tablespoons olive oil
2 tablespoons salted butter
2 pounds boneless skinless chicken thighs, cubed into bite-size pieces
1 green bell pepper, diced
1 red bell pepper diced
4 scallions, sliced, whites and greens divided
2/3 cup low-sodium soy sauce
2 tablespoons rice vinegar
1 tablespoon cornstarch
1 tablespoon grated fresh ginger
2 teaspoons chile paste, plus more to taste
2 cloves garlic, pressed
One 20-ounce can diced pineapple, drained and juice reserved
1/4 cup fried onions, such as French's
1/4 cup chopped peanuts
1 tablespoon sesame seeds
1 teaspoon chile-lime seasoning, such as Tajin
Cooked brown rice, for serving

Steps:

  • Place a large skillet over medium-high heat. Add the oil and butter. When the butter is melted and the oil is hot, add the chicken, bell peppers and the whites of the scallions. Cook, stirring occasionally, until the chicken is browned and cooked through, about 5 minutes.
  • Meanwhile, make the sauce. Add the soy sauce, rice vinegar, cornstarch, ginger, chile paste, garlic and 2 tablespoons of the reserved pineapple juice to a mason jar. Secure the lid and shake until mixed thoroughly, then set aside.
  • Mix together the fried onions, peanuts, sesame seeds and chile-lime seasoning in a small bowl. Set aside.
  • When the chicken has cooked through, add the drained pineapple and stir to combine. Give the sauce a final shake and add it to the skillet. Allow the sauce to come to a boil and thicken, about 1 minute.
  • Serve over the rice, garnishing with the peanut mixture and reserved scallion greens.

400g rump steak, thinly sliced
3tbsp soy sauce
2tbsp soft brown sugar
1tbsp chilli sauce
1tbsp rice wine vinegar
2tsp vegetable oil
thumb-sized piece ginger, cut into fine matchsticks
4 spring onions, cut into 3cm lengths
200g pineapple, cut into chunks
handful coriander leaves, to serve
rice and greens, to serve (optional)

Steps:

  • Mix the steak, soy sauce, sugar, chilli sauce and vinegar together, and set aside for 10 mins.
  • Heat a wok with 1 tsp of the oil. Lift the steak from the marinade and sear, in batches, then remove. Add a bit more oil and fry the ginger until golden. Add the spring onions and pineapple, and return the steak to the pan. Stir to heat through for 1 min, then add any remaining marinade. Keep stirring until the marinade becomes thick and everything is hot. Serve sprinkled with coriander, and with rice and greens, if you like.

  • Remove the meat from the marinade, place in the skillet.
  • Stir fry 5 minutes, just until cooked through, remove the meat and keep warm.
  • Combine marinade and cornstarch in bowl.
  • Add the beans, chilies, pepper and marinade to skillet; stir fry 4 minutes (or until veggies are crisp tender and mixture is thickened).
  • Stir in 1 cup pineapple chunks, scallions and meat; heat through.

I found a recipe for a sausage kebab that I modified into a stir fry. It turned out really tasty. I hope you'll give it a try! The chutney & the pinepple give it a nice flavor. Although sausage is not usually a favorite of mine, I love this dish.

1 tablespoon olive oil
1 small onion, cut into strips
1 red pepper, cut into strips (or similar amount of mixed color baby peppers, if available)
1 clove garlic, minced
13 ounces cooked sausage, sliced about 3/4 inch thick (I used smoked chicken & mango from aidells)
1 (13 ounce) can pineapple chunks in juice
1/3 cup mango chutney, any large pieces chopped

Steps:

  • Saute onion for 2-3 minutes, then add peppers and garlic.
  • Cook, stirring frequently, another 2-3 minutes, then add sausage.
  • Stir fry on medium heat about 5 minutes, till sausage is browned, then add pineapple & cook another 2-3 minutes till sauce bubbles and reduces.
  • Stir in mango chutney and cook another minute.
  • Serve over rice.
  • Or you could put the vegetables, pineapple& sausage on skewers, brush with the chutney& broil or grill.
  • Note: I have also tried this with a chicken & apple sausage with good results.
