RASPBERRY SPINACH SALAD
This salad can also be made with sliced strawberries and/or kiwi. I love to keep the dressing on hand for other salads as well.

RASPBERRY SPINACH SALAD WITH GARLIC STEAK
I put this recipe together as my own variation on a classic. It became an instant hit with the whole family, and has been requested for our regular rotation. Prep time does not include marinating time.

Steps:
- Preheat grill or broiler.
- In a small bowl, mix together the pepper, garlic, onion, salt and thyme. Rub olive oil all over the meat. Rub seasoning mixture all over the meat. Place in a shallow dish and marinate at room temperature for about an hour, or while preparing the remaining salad and vinaigrette. (Can also cover and marinade in the fridge for up to 2 days. Remove meat from fridge an hour before grilling).
- Put walnuts in a small pan over med-low heat. Let toast until you can smell them (while you are preparing the remaining recipe).
- In a blender or food processor, combine raspberry vinegar, 1/4 cup raspberries, honey, and oregano (or basil); whirl 1 minutes or until well blended. With the motor on, add olive oil in a slow steady stream, whirling until dressing is smooth.
- Grill steak about 3-4 minutes per side or until done to your preference. (Using a meat thermometer - Rare: 120F; Medium Rare: 125F; Medium: 130F).
- When the steaks are done to your liking, remove from oven, let sit 15 minutes before serving (meat temperature will rise 5 to 10 degrees after it is removed from the oven). Slice steak across grain into 1/4-inch slices.
- While steaks are resting, prepare salad by layering equally on each plate the spinach, remaining raspberries, walnuts and cheese. Place strips of steak on top of each salad. Serve dressing on the side.

SPINACH SALAD WITH RASPBERRY VINAIGRETTE
Nothing is better than a spinach salad topped with fruity goodness like oranges and sweet raspberry dressing. Pecans and onions add savory crunch.

SPINACH-STRAWBERRY-GORGONZOLA SALAD WITH RASPBERRY DRESSING
I just threw this together one day when I had an unexpected lunch guest and it was such a hit, I've been making it to rave reviews ever since. You can sub feta for the gorgonzola, but I like the gorgonzola better...it gives the salad a richer taste and is not as dry as the feta. You can also sub toasted pine nuts or candied pecans or walnuts for the walnuts if you want to kick it up a notch. The best part about this salad is there is absolutely NO COOKING required. If you happen to have a leftover cold chicken breast, slice into strips and add it for a nice protein addition. Lose the banana if you add the chicken. Really, the possibilities are endless but the must-have ingredients for the right blend of flavors are the cheese, dressing, spinach and strawberries. Enjoy!

SPINACH SALAD WITH STRAWBERRIES AND RASPBERRY VINAIGRETTE
Easy and delicious spinach salad. I didn't use all the sugar, or all the oil. The dressing was sweet enough without the whole 1/3 cup of sugar, and I like my vinaigrettes with a little less oil. You can adjust to your own taste.

GRILLED PEACH SALAD WITH SPINACH AND RASPBERRIES
Right before your grilled entree comes off the grill, throw some peaches on for the salad. The caramelization adds a dimension of flavor and appearance to the peaches. Put them on a bed of fresh spinach, add raspberries and a good vinaigrette, and some almonds, too, for crunch.
