1/2 cup butter or 1/2 cup margarine, softened
2/3 cup firmly packed brown sugar
1 teaspoon vanilla
1/2 cup all-purpose flour
1/4 teaspoon baking soda
1 1/2 cups quick oats
1 cup chopped walnuts
1 cup raisins
1/2 cup raspberry jam

Steps:

  • Heat oven to 375 F degrees.
  • Combine butter, brown sugar, vanilla until well blended.
  • Add flour and baking soda to mixture.
  • Stir in oats and nuts into existing mixture.
  • Reserve 1 cup of oat mixture for topping.
  • Press remaining mixture into 8in.
  • square baking pan.
  • Combine raisins and jam.
  • Spread raisin mixture to within 1/2 inch of edges of pan.
  • Sprinkle with reserved oat mixture.
  • Press lightly.
  • Bake at 375F degrees for 25-30 minutes until golden brown.
  • Cool in pan.
  • Cut into bars.

I make this raspberry mousse every year when raspberries are in season. You want to use ripe and sweet berries. Adjust sugar amount accordingly.

18 ounces fresh raspberries
7 tablespoons confectioners' sugar, or more as needed
4 tablespoons orange juice
1 (.25 ounce) package unflavored gelatin
1 ¾ cups heavy cream
2 tablespoons vanilla sugar
1 dash lemon juice

Steps:

  • Set a few raspberries aside for garnish. Combine remaining raspberries and confectioners' sugar in a bowl, mix, and set aside for 30 minutes. Pass raspberries through a sieve to strain out seeds. Discard seeds.
  • Pour orange juice into a small saucepan and sprinkle gelatin on top. Set aside for 1 minute. Heat over low temperature without boiling until gelatin is fully dissolved, about 3 minutes.
  • Remove from stove, allow to cool slightly and mix with raspberry puree.
  • Beat cream in a chilled glass or metal bowl using an electric mixer until frothy. Add vanilla sugar gradually, continuing to beat until soft peaks form. Fold whipped cream into raspberry puree. Stir in lemon juice and sweeten with more confectioners' sugar if desired. Cover and refrigerate for 2 hours. Garnish with raspberries.

This is a favorite finger food for Valentine's Day parties because it looks so festive. Here in snowy Maine, these bars are also fun to make on a "snow day" when our normal routine shifts to a vacation day.

1/3 cup plus 1/2 cup sugar, divided
1-1/2 cups all-purpose flour
3/4 cup butter, cubed
2 large eggs, separated
1 cup raspberry jam
1 cup broken walnuts

Steps:

  • In a small bowl, combine 1/3 cup sugar, flour, butter and egg yolks. Press into a greased 13x9-in. baking pan. Bake at 350° for 15 minutes or until golden. Cool. Spread jam over crust; sprinkle with nuts., In a small bowl, beat egg whites on medium speed until soft peaks form. Gradually beat in remaining sugar, 1 tablespoon at a time, on high until stiff glossy peaks form and sugar is dissolved. Spread meringue over nuts. , Bake at 350° for 25 minutes or until set and lightly browned. Cool on a wire rack. To cut into bars, use a knife dipped in hot water. Store in the refrigerator.

1-1/2 pkg. (4 oz. each) BAKER'S Bittersweet Chocolate (6 oz.), divided
1/4 cup whipping cream
2 eggs
1/3 cup sugar
2 Tbsp. flour
1-1/2 cups thawed COOL WHIP Whipped Topping
1 cup fresh raspberries

Steps:

  • Heat oven to 325°F.
  • Line 8-inch square pan with foil, with ends of foil extending over sides. Spray with cooking spray. Microwave 3 oz. chocolate and cream in large microwaveable bowl on HIGH 1 min. or until chocolate is almost melted; stir until chocolate is completely melted and mixture is well blended. Cool slightly. Add eggs, sugar and flour; whisk until blended. Pour into prepared pan.
  • Bake 20 min. or until toothpick inserted in center comes out with fudgy crumbs. (Do not overbake.) Cool completely. Meanwhile, melt 2 oz. of the remaining chocolate as directed on package; cool.
  • Stir 1/2 cup COOL WHIP into cooled chocolate. Add remaining COOL WHIP; mix well. Spread onto dessert. Refrigerate 2 hours or until chilled.
  • Use foil handles to lift dessert from pan before cutting into bars. Melt remaining chocolate; drizzle over bars. Serve with raspberries.

1/2 cup sugar
1 large egg
1 teaspoon vanilla extract
2-1/4 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup raspberry jam
GLAZE:
1 cup confectioners' sugar
2 tablespoons evaporated milk
1/2 teaspoon vanilla extract

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and granulated sugar until light and fluffy, 5-7 minutes. Beat in egg and vanilla. In another bowl, combine the flour, baking powder and salt; gradually add to creamed mixture and mix well., Divide dough into four portions; shape each into a 10x2-1/2-in. log. Place 4 in. apart on greased or foil-lined baking sheets. Make a 1/2-in. depression down the center of each log. Bake for 10 minutes., Fill depressions with jam. Bake until lightly browned, 10-15 minutes longer. Cool for 2 minutes. Remove to a cutting board; cut into 3/4-in. slices. Place on wire racks., In a small bowl, combine glaze ingredients. Drizzle over warm cookies. Cool completely.

1 cup confectioners' sugar
2 tablespoons evaporated milk
½ teaspoon vanilla extract
1 cup butter, softened
½ cup white sugar
1 egg
1 teaspoon vanilla extract
2 ¼ cups all-purpose flour
½ teaspoon baking powder
¼ teaspoon salt
½ cup raspberry jam

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking sheet.
  • Combine confectioner's sugar, evaporated milk, and 1/2 teaspoon vanilla extract in a small bowl.
  • Beat butter and white sugar with an electric mixer in a large bowl until smooth. Mix in egg and 1 teaspoon vanilla extract. Combine flour, baking powder, and salt in a small bowl.
