RASPBERRY ICE CREAM PIE
My sister gave me this recipe after making it for my baby shower. It was so good! You can substitute a graham cracker crust for the oreo crust. This would also be good with strawberries. We usually double this recipe and make in a 9X13 pan.

Steps:
- In a large bowl, stir boiling juice into dry jello at least 3 minutes until jello is completely dissolved.
- Add ice cream by spoonfuls, stirring with a wire wisk after each addition until ice cream is completely melted.
- Add the whipped topping, stir until well blended.
- Add the raspberries, stir gently.
- Dump into crust.
- Freeze until firm.

RASPBERRY ALMOND PIE
I have not made this yet but I love raspberries and almonds together so this is on my list to make soon! Recipe adapted from the Stonebridge Inn. Edited after reading Kittencal's suggestion of cooking time and sugar. Original time was 30 min. increased to 45 min. original sugar was 1/2 cup increased to 3/4 cup.

- Spread jam in the pie crust.
- Cream the butter and sugar together.
- Add the eggs one at a time, beating after each addition.
- Stir in the almonds.
- Pour the batter over the jam.
- Bake in a 350 oven for 45 minutes or until delicately browned.

- Add ice cream by spoonfuls, stirring with wire whisk after each addition until ice cream is completely melted. Add half of the whipped topping; stir until well blended. Gently stir in 1 cup of the raspberries. Refrigerate, if necessary, until mixture is thick enough to mound. Spoon into crust.
- Freeze 3 hours or until firm. Top with the remaining whipped topping and remaining 1/4 cup raspberries just before serving. Store leftover pie in freezer.

RASPBERRY AND PISTACHIO SEMIFREDDO
I love this dessert because it is super easy to prepare! I serve this in the summer at our lake house and everyone gets so excited. I remember the first time I made it our friends the Zacharys were over for dinner and their eyes opened so wide when I walked out with this dessert. All I can say is that the semifreddo platter and everyone's plates were empty. Give this recipe a try if you want to impress your friends. It's gluten-free. Serve garnished with extra raspberries or puree some of the raspberries with a teaspoon of honey and drizzle on top.

Steps:
- Combine egg yolks with 3 tablespoons plus 1 teaspoon honey in the large bowl of an electric mixer fitted with a paddle attachment; beat until volume doubles and mixture is pale and creamy, about 10 minutes.
- Beat heavy cream in a bowl with an electric mixer until firm peaks form, 3 to 4 minutes. Gently fold cream into egg yolk mixture.
- Line a loaf pan with parchment paper, leaving an overhang on both sides. Pour mixture into the pan, smoothing the top. Cover with plastic wrap.
- Freeze until semifreddo is chilled, about 1 1/2 hour. Remove from freezer and stir in raspberries and pistachio nuts. Freeze until firm, at least 4 hours.
- Let semifreddo soften in the refrigerator before serving, about 15 minutes. Turn out of the pan and cut into slices.
