RASPBERRY MINT LIMEADE
Raspberry Mint Limeade! A refreshing drink perfect for summer! Vegan, gluten-free and low-sugar.

Steps:
- Place frozen raspberries in a saucepan. Add water and sugar then bring to a simmer over medium-high heat then reduce to medium. Simmer, serving occasionally, for 5 minutes until berries are very soft and almost dissolved. Stir in the mint sprigs, then remove pan from heat. Let cool, and discard mint. For a thicker beverage, puree in a blender or using an immersion blender. For a smoother texture, strain and discard solids. Stir in lime juice.
- Divide juice among 6 glasses then top with soda water and mint sprigs.
SPARKLING RASPBERRY LIMEADE

Steps:
- Add the sugar, raspberries and 1 cup water to a medium saucepan and bring to a simmer. Stir until the sugar dissolves. Press the berries with the back of a wooden spoon so their juices leach into the mixture. Let sit and steep until cool. Strain, discarding the solids.
- Combine the cooled raspberry syrup, lime juice and club soda in a large pitcher. Pour into tall glasses filled with ice and garnish with the lime slices and a few extra berries.
RASPBERRY-MINT LIMEADE

Steps:
- Finely chop mint, and rub into sugar OR pulse mint and sugar in food processor. Place mint sugar in 1-quart saucepan with raspberries and 1/4 cup water. Heat over medium-high heat until sugar dissolves, raspberries break down, and mixture comes to a boil. Remove from heat, and strain through fine mesh strainer. Set raspberry mint syrup aside to cool.
- In large pitcher, mix raspberry mint syrup, lime juice, 3 cups water and the sparkling water. Serve immediately with lots of ice and a shot of gin, or refrigerate until ready to serve.

- Make your lemonade, however you like it. Everyone has their own recipe for lemonade.
- In an ice cube tray, place one raspberry and one mint leaf in each compartment (if the mint leaves are small, I usually put two).
- Fill ice cube tray with lemonade and freeze.
- Once frozen, add to your lemonade. Once the cubes start to melt, it will infuse the lemonade with the flavor of the raspberries and mint leaves, and since it was frozen with lemonade and not just plain water, it will not "water down" the flavors.

RASPBERRY LIMEADE WITH LAVENDER AND MINT
Steps:
- In a small saucepan over medium heat, combine 1 cup water, the sugar, lavender and mint sprigs. Bring to a simmer and cook until the sugar has dissolved, about 3 minutes. Cool and strain.
- In a blender, add the cooled syrup, raspberries and lime juice and blend until smooth.
- To serve, place some of the raspberry puree in the bottom of each glass, top with seltzer water and garnish each glass with a sprig of mint.

- In a Dutch oven, combine raspberries, sugar and butter. Bring to a full rolling boil over high heat, stirring constantly. Stir in pectin. Continue to boil 1 minute, stirring constantly. , Remove from heat; skim off foam. Stir in mint. Ladle hot mixture into eight hot half-pint jars, leaving 1/4-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. LIMEADE WITH MINT
Steps:
- Combine 1/2 cup sugar and 1/2 cup water in a small saucepan over high heat. Bring to a boil, stirring to dissolve sugar. Transfer to refrigerator to chill, about 20 minutes. In a blender, combine syrup and mint, and puree. Strain through a fine mesh sieve into a small bowl.
- In a pitcher, combine lime juice, remaining 1/2 cup sugar, and 1 quart water. Stir until sugar is dissolved. Fill glasses with ice. Divide syrup evenly between glasses. Pour limeade over ice. Garnish with mint sprigs and lime wheels. Serve immediately.
