Steps:
- Place raspberries in a blender; cover and pulse until chopped. Transfer to a large bowl; stir in sugar until dissolved. Stir in remaining ingredients until blended., Pour mixture into cylinder of ice cream freezer; freeze according to the manufacturer's directions. Transfer ice cream to freezer containers, allowing headspace for expansion. Freeze 2-4 hours or until firm.

RASPBERRY DELIGHT
Refreshing dessert, fit for company but easy enough to make for a family dinner. Prep time includes refrigeration for the jello to start to set, I'm guessing it takes around 20 minutes or so. I prefer this recipe with fresh raspberries, but frozen works just as well. The serving size is also an estimate, I used a lasagna pan to make it in and it served 13 last Thanksgiving - it really depends how big you cut the squares.

Steps:
- Melt 1/4 cup butter in saucepan, add graham cracker crumbs, reserving 3/4 cup of crumbs for garnish.
- Press mixture into rectangular pan.
- Bake for 10 minutes at 350 F.
- Cool.
- Place contents of two jello boxes in bowl, add 2 1/2 cup hot water.
- Dissolve and add one box of frozen raspberries, or 2 cups of fresh.
- Let set until spreading consistancy (soft gel) then pour over graham crust.
- Dissolve marshmallows in milk over low heat, remove and cool.
- Whip 1 cup whipping cream and fold into cooled marshmallow mixture.
- Blend well.
- Pour over jello section and cover with remaining graham cracker crumbs.
- Chill until ready to serve.
RASPBERRY ICE CREAM

- Blend 5 cups of raspberries in the blender.
- Using a mesh strainer, slowly press puree through mesh strainer leaving seeds in the strainer. This should result in approximately 2 cups of puree.
- Add lemon juice to raspberry puree, mix and set aside.
- In a large bowl, combine whipping cream, milk and sugar. Mix well.
- Add seedless raspberry puree to whipping cream and mix to incorporate.
- Freeze according to your ice cream makers directions.
- Once ice cream is done mixing, transfer to a container with a lid.
- Cover and freeze for several hours then scoop and enjoy!

- Preheat oven to 300° In a large bowl, mix flour and sugar; cut in butter until crumbly. Press onto bottom of an ungreased 13x9-in. pan. Bake until set, 20-25 minutes (crust will not brown). Cool completely on a wire rack., Beat first four filling ingredients until smooth. - Place the raspberries and 2 tbsp of the sugar in a small pan. Cook on a medium heat until sugar dissolves. Simmer for 5 mins until thickened, then push through a sieve into a bowl and discard the seeds left in the sieve.
- Place the eggs, egg yolks and remaining sugar in a bowl. Whisk with an electric whisk to combine, then place over a pan of gently simmering water - make sure the bowl isn't actually touching the water. Beat with the electric whisk for 3-4 mins until thick and pale. Remove from heat and continue beating until cool.
- In another bowl, whisk the cream until it forms soft peaks, then gently fold into the cool egg mix until just combined. Pour the mix into a shallow container or dish that can be frozen.
- Gently swirl the raspberry coulis through, cover with cling film and freeze for at least 6 hrs. Serve scoops in bowls with sliced mango and extra raspberries, or scoop into cones and top with sprinkles for the kids.

- In medium bowl, mix crust ingredients; reserve 1/4 cup for topping. Press remaining in 13x9-inch pan to make crust. Refrigerate 15 minutes.
- Spread chocolate fudge sauce over crust. Spoon vanilla ice cream over chocolate. Place spoonfuls of sherbet randomly over ice cream; swirl gently into ice cream. - To make crust: In medium bowl, combine crushed chocolate wafers, margarine and sugar; mix well.
- Set aside 1/4 C of the mixture and press remaining mixture onto bottom of 9x13-inch pan. Refrigerate for 15 minutes.
- Carefully spread chocolate fudge sauce over crust, using tip of a rounded knife and being careful not to pull up crust.
- Cut slightly softened ice cream into slices and place them over the fudge, cutting pieces to fit.
- Place spoonfuls of sherbet randomly over ice cream and gently swirl into the ice cream.
- If the ice cream mixture starts to get too soft, set pan in freezer until it firms up slightly.
- Top with raspberries, gently pressing them into the ice cream mixture, then cover with whipped topping, bringing it to the edges of the pan.
- Garnish with reserved chocolate crumbs, cover, and freeze 6 hours or overnight.
- Let stand at room temperature about 10 minutes before serving.
- Note: For easy prep, buy a half gallon of ice cream and cut it in half. Freeze one half to use in other desserts. Let the other half soften just enough to cut it into slices. If desired, 1 quart of ice cream can be used. Soften, then evenly spread over fudge.

- Melt the ice cream slightly in a large bowl stir occasionally until it's like really thick cream.
- Add the raspberries and fold in carefully. Put in a jelly mold so you can turn it out later. put back into the freezer overnight.
- Turn out onto a serving plate decorate with either fruit or chocolate and immediately put back into the freezer as during your decoration. It will start to melt a bit around the edges.
- Serve and enjoy!

- Cook berries and ¼ cup sugar in a medium saucepan over medium heat until berries are soft and start to release their juices. Increase heat to medium-high and bring to a boil. Boil, stirring occasionally to prevent sticking, until mixture thickens slightly, about 5 minutes. Set aside ½ cup sauce. Purée remaining sauce in a blender until smooth and strain through a fine-mesh sieve into a measuring glass (you should have about 1 cup). Let cool.
- Whisk egg yolks, salt, and remaining ½ cup sugar in a medium bowl until lightened in color. Bring 1 cup cream to a boil in a medium saucepan. Remove from heat and gradually whisk half of cream into egg yolk mixture. Whisking constantly, add egg mixture to cream in pan and cook over medium heat, stirring constantly, until custard is thickened and just starts to stick to the bottom of the pan, about 2 minutes. Strain through a fine-mesh sieve into a large bowl. Chill until cold.
- Whisk custard, berry purée, lemon juice, and remaining ½ cup cream until smooth. Process in an ice cream maker according to manufacturer’s directions. Turn off machine.
- Spoon in reserved berry sauce, then scrape ice cream into an airtight container (you want nice streaks of sauce still visible). Cover and freeze until firm, at least 2 hours.
