PORK CHOPS WITH RASPBERRY GLAZE

Pork Chops With Raspberry Glaze image

My son's fiancée invited us to dinner and served this. She said she wanted to impress the soon to be in-laws. She did impress us, it was delicious. She hesitated to give me the recipe because she didn't want me to know how quick and easy it really was. I told her that it was even more impressive that she could make such a yummy meal in less than 30 minutes.

  • Put the potatoes and Brussels sprouts onto a large sheet pan and toss with enough olive oil to coat. Season generously with salt and pepper. Roast for 15 minutes while you sear the pork chops.
  • Add about 1 TBSP olive oil to a large, heavy skillet set over med-high heat. Season the pork chops very generously on all sides with salt and pepper. Sear them (I do two at a time) until very crusty and brown on both sides; about 2 minutes per side.
  • In a small bowl, stir together the raspberry preserves/spread, the balsamic, and the Dijon until smooth. Season with a little salt and pepper, if you like.
