Miniature chocolate wafers are sandwiched together with a creamy raspberry filling.

Cookie
1 cup all-purpose flour
1/2 cup Land O Lakes® Butter softened
2 tablespoons sugar
4 teaspoons Land O Lakes® Heavy Whipping Cream
1 (1-ounce) square unsweetened baking chocolate, melted, cooled
Filling
1 1/2 cups powdered sugar
1/2 cup Land O Lakes® Butter softened
1 1/2 teaspoons raspberry-flavored coffee drink syrup *

Steps:

  • Combine flour, 1/2 cup butter, sugar and whipping cream in bowl. Beat at low speed, scraping bowl often, until well mixed. Add melted chocolate; beat until well mixed.
  • Divide dough in half; wrap in plastic food wrap. Refrigerate 1-2 hours or until firm.
  • Heat oven to 400°F.
  • Roll out dough on well-floured surface, one-half at a time (keeping remaining dough refrigerated), to 1/4-inch thickness. Cut with 1 1/2-inch round or square cookie cutters. Dip both sides of each cookie in sugar. Place cookies 2 inches apart onto greased cookie sheets; prick several times with fork.
  • Bake 6-8 minutes or until set. Let stand 2 minutes on cookie sheets; remove to cooling rack. Cool completely.
  • Combine powdered sugar, 1/2 cup butter and flavored syrup in bowl. Beat at medium speed, scraping bowl often, until light and fluffy.
  • Carefully put cookies together in pairs, using 1 teaspoon filling for each sandwich cookie.

Fresh Raspberry Jello Dessert is an easy, no-bake recipe that has been in my family for decades! It's a summer favorite made with layers of crushed Nilla Wafer crumbs, creamy filling, a sweet and tart raspberry jello layer with fresh raspberries, and freshly whipped cream on top!

6 ounces raspberry jello mix (or two 3-ounce packages)
4 cups cold water (divided)
1 box finely crushed Nilla Wafers (about 2 1/2 cups, divided)
1 3/4 cups powdered sugar (divided)
1 Tablespoon salted butter (melted)
1 3/4 cups heavy cream (divided)
18 ounces fresh raspberries (divided)
2 teaspoons vanilla extract

Steps:

  • Prepare the jello by heating 2 cups of water in the microwave for 4-5 minutes until boiling. Stir in the powdered gelatin until dissolved, then add the remaining 2 cups of cold water and stir. Place in the fridge for 30-60 minutes until thickened and syrupy.
  • Crush the Nilla Wafers into fine crumbs using a food processor, blender, or by hand with a rolling pin and heavy duty ziploc bag. Set aside 1/2 cup of the crumbs and pat the remaining crumbs into the bottom of a 9x13-inch pan.
  • Whisk 1 and 1/2 cups of the powdered sugar, melted butter, and 1/4 cup of the cream in a medium bowl until thick but drizzly. If the mixture is too thick to drizzle add a little additional cream, one tablespoon at a time. Drizzle this over the Nilla Wafer crumbs. It's okay for some of the crumbs to peek through and there is no need to spread the creamy layer to the edges.
  • Sprinkle the raspberries evenly over the creamy layer, reserving your best looking raspberries for decorating the top of the dessert when it's done.
  • Pour the syrupy, cooled jello over the raspberries, then place in the fridge for 2-3 hours until completely set.
  • Make the whipped cream by combining the remaining 1 and 1/2 cups of heavy cream with the remaining 1/4 cup of powdered sugar and vanilla extract in a large bowl. Use a stand mixer fitted with a whisk attachment or a hand mixer to beat the cream until stiff peaks form, taking care not to overbeat it. Spread in an even layer on top of the set jello.
  • Sprinkle the reserved Nilla Wafer crumbs over the whipped cream, then decorate with the reserved raspberries. Slice into squares and serve.

1 1/2 cups butter, softened, divided
1/3 cup heavy cream
1/4 cup granulated sugar
1 1/2 cups powdered sugar
1/2 teaspoon almond extract
2 tablespoons Smucker's® Red Raspberry Preserves

Steps:

  • COMBINE flour, 1 cup butter and cream in large bowl until blended. Divide dough into thirds; shape each into a flattened ball. Wrap in plastic wrap; chill about 1 hour.
  • HEAT oven to 375 degrees F. Cover a sheet of wax paper with granulated sugar.
  • ROLL one round of dough at a time to 1/8 to 1/4 inch thickness on floured pastry cloth (do not roll too thin).
  • CUT with 1 1/2-inch cookie cutter. Place on prepared wax paper. Turn to coat both sides of cookies. Place on ungreased baking sheet about 1 inch apart. Pierce each cookie 3 or 4 times with fork.
  • BAKE 7 to 9 minutes or until edges begin to brown. Cool on wire rack.
  • BEAT remaining 1/2 cup butter, powdered sugar and almond extract in medium bowl with electric mixer until light and fluffy, about 2 or 3 minutes.
  • STIR in raspberry preserves to achieve a swirled appearance. Just before serving, sandwich two cookies together with 1 teaspoon of filling.

These yummy cookies are so cute and very delicate. My family has always made these cookies at Christmas time, and made a red and green filling. But I found that making them once a year wasn't enough, so I've been known to make them once a month! You'll love them!

2 cups flour
1 cup butter or 1 cup margarine, softened
1/3 cup heavy whipping cream
sugar
1 1/2 cups powdered sugar
1/2 cup butter or 1/2 cup margarine, softened
2 teaspoons vanilla
food coloring, if desired

Steps:

  • Mix flour, butter, and whipping cream.
  • Cover and refrigerate about 1 hour or until firm.
  • Preheat oven to 375 (F).
  • Roll 1/3 of the dough at a time on a floured surface.
  • Roll the dough until it is 1/8 inch thick.
  • Cut dough into 1 1/2 inch rounds (or by using the opening of a shot glass).
  • Dip both sides of cookie in sugar.
  • Place sugared cookies on ungreased cookie sheet.
  • Prick each cookie about 4 times with a fork.
  • (This allows air to escape from the cookie while baking, so it can rise.) Bake cookies in preheated oven for 7-9 minutes, until set but not brown.

1 cup butter, softened
1 cup powdered sugar
1 egg, large
1 teaspoon vanilla
2 cups pastry flour
1/2 cup cocoa powder, dark
1/8 teaspoon salt
whipping cream
3 cups heavy cream
1/4 cup granulated sugar
2 teaspoons finely grated orange rind
2 teaspoons orange liqueur, Grand Marnia
2 cups fresh raspberries
1/8 cup powdered sugar (garnish)

Steps:

  • Preheat oven to 375 degrees.
  • Line two rimless baking sheets with parchment paper and set aside until needed.
  • Chocolate Wafers.
  • Beat butter with icing sugar until fluffy.
  • Next add the egg and vanilla, mix well.
  • In a separate bowl, sift together the flour, cocoa powder and salt.
  • Stir into butter mixture in two additions to form smooth soft dough.
  • Divide dough in half and shape each into 8-inch log and wrap in plastic wrap and chill for 3 - 4 hours. (until firm enough to slice,).
  • Cut into thin slices, about 1/8-inch thick.
  • Place cookie slices, 1 inch apart, on prepared baking sheets.
  • Bake in top and bottom thirds of 375°F oven.
  • Switch and rotate pans halfway through baking, until wafers are just firm to the touch and slightly darkened, about 9 minutes.
  • Let cool for 2 minutes on pan, then transfer wafers to rack and let cool completely.
  • In a small bowl, whip together heavy cream, granulated sugar and orange rind and Grand Marnia.
  • Divide wafers into 5 batches. Arrange 1 batch in single layer on flat glass cake pan. Break wafers into smaller pieces to fill in gaps as necessary.
  • Then cover the wafers with one-sixth of the whipped-cream mixture.
  • Add second layer of wafers and cream then place half of the raspberries over the cream.
  • Repeat with 2 more layers of cream and wafers.
  • Lastly, cover the top of the cake with the remaining cream mixture.
  • Loosely drape with plastic wrap and refrigerate for 6 hours.
  • When ready to serve garnish with the remaining raspberries and sprinkle with a light dusting of powdered sugar.

1/3 cup icing sugar
6 egg whites
1 1/2 cups sugar
1 cup all-purpose flour
3/4 cup unsalted butter, melted
2 tablespoons water
1 tablespoon vanilla
2 (300 g) packages unsweetened raspberries, thawed
1/2 cup instant dissolving fruit sugar
2 teaspoons raspberry liqueur (optional)

Steps:

  • Wafers:.
  • Trace two 8-inch circles on each of two pieces of parchment paper.
  • Invert and place on baking sheets.
  • In a large bowl, lightly whisk egg whites, gradually whisk in sugar, flour, butter, water and vanilla just until blended.
  • Drop 1/3 cup batter onto each circle, gently spread to cover circle.
  • Bake one sheet at a time in upper half of 400°F oven for 8 to 10 minutes or until edges are just beginning to brown, let cool on baking sheet on rack for 2 minutes.

  • (Sauce can be covered and refrigerated for up to 3 days.)
  • In bowl, whip cream with icing sugar.
  • Place one wafer on serving plate, spread with 1/2 cup of the whipped cream.
  • Drizzle with 1/4 cup of the raspberry sauce.
  • Repeat layering with remaining wafers, cream and sauce.
  • Top with remaining wafer.
  • Cover and refrigerate for 1 1/2 to 2 hours or until wafers have softened just enough to cut into wedges.
  • Top last wafer with sifted icing sugar and whole half-frozen raspberries.
  • (The raspberry makes a beautiful presentation, but any berry or fruit sauce can be used, or if you like any kind of icing may be used. Try chocolate garnished with mint or flavour the whipped cream with cocoa and maybe mint essence).
