RASPBERRY-CINNAMON MUFFINS
These delicious raspberry muffins are low fat and dairy free.

- Preheat the oven to 400 degrees F (200 degrees C). Line a muffin tin with paper liners.
- Stir brown sugar, applesauce, and egg in a bowl until well combined. Add flour, baking soda, cinnamon, and salt; stir until just combined. Fold in raspberries gently.
- Use a disher scoop to portion uniform amounts of batter into the prepared muffin tin.
- Bake in the preheated oven until muffins are golden brown and a toothpick inserted into the center comes out clean, 15 to 20 minutes. Remove muffins from the tin immediately and cool on a wire rack.

THE BEST HOMEMADE APPLESAUCE
After tasting the pure apple flavor of this homemade sauce, you just might never go back to the store-bought kind. Supermarket applesauce can be loaded with added sweeteners and flavorings. We use only a little sugar, plus lemon juice, salt and cinnamon, providing a balanced flavor and the perfect amount of sweetness.

- Combine the apples, sugar, 1 cup water and 1/2 teaspoon salt in a large pot. Bring to a simmer over medium-high heat, stirring occasionally. Reduce the heat to medium-low. Cover with a tight-fitting lid and cook until the apples are very soft, 18 to 20 minutes.
- Stir in the lemon juice and cinnamon. Let cool for 5 minutes or so, then transfer the apple mixture to a blender, filling no more than halfway. Remove the center cap from the lid and place it on the blender. Cover the lid with a folded kitchen towel to catch splatters and pulse until smooth. Alternatively, puree in the pan with an immersion blender.
- Transfer the applesauce to a bowl and refrigerate until cool, about 1 hour. Store leftover applesauce in an airtight container in the refrigerator for up to 5 days.
RICE COOKER RECIPE: RASPBERRY APPLESAUCE

- Place apples and raspberries in the rice cooker; add brown sugar, cinnamon, and nutmeg. Add honey, vanilla extract, lemon juice, and water, in respective order.
- Set rice cooker to standard "cook" setting, about 30 minutes. Stir mixture halfway through cooking cycle, mashing apples a little bit.
- Remove the applesauce from the heat and cool for 30 minutes. Transfer applesauce to a bowl and chill in the refrigerator for at least 1 hour.

- Heat apples, 1/2 cup water, and cinnamon in a medium pot over medium-high. Bring to a simmer, then cover, reduce heat to low, and cook until apples are tender, 25 to 30 minutes. Add raspberries; cook, stirring, until juicy, about 5 minutes. Remove from heat; sprinkle with chia seeds. Let cool slightly, then mash. (If too thick, add water, 1 tablespoon at a time.) Applesauce can be refrigerated in an airtight container up to 2 weeks.
RASPBERRY APPLESAUCE
I altered a basic applesauce recipe to come up with this flavored version. Other variations can be made by substituting another flavor of jam for the raspberry. Depending on how sweet your apples are and how you like your applesauce, you may need to add a little sugar in with the jam. I used a combination of Macintosh and Red Delicious with about 1/3 cup jam, and thought it was fine without added sugar.

- In a large saucepan, combine apples with 1 cinnamon stick, jam, and water; bring to a boil.
- Reduce heat to low; cover and simmer, stirring occasionally, until apples are tender (about 30 to 35 minutes). Add more water if necessary to prevent sticking.
- Remove from heat; remove cinnamon stick.
- Stir in 2 teaspoons fresh lemon juice.
- The sauce will be somewhat chunky. If you prefer it smoother, puree it in a blender or food processor.

- Beat eggs until light and foamy. Add oil (or combination of oil and applesauce), sugar, raspberries and vanilla. Mix lightly, but well. Sift flour, salt, soda, cinnamon and baking powder together. Add nuts. Add flour mixture to wet ingredients - stir well. Pour into two 9x5x2 inch loaf pans. Bake at 325 degrees F. for 1 hour.

- Cobine stevia, applesauce, and water in a medium bowl. Sprinkle in yeast and soften 10 minutes.
- Stir in oil, egg, salt, and whole wheat flour. Beat 3 minutes. Mix and knead in unbleached flour, using more as needd to form soft dough.
- Oil bowl. Turn dough in bowl to oil top. Cover and chill 1 1/2 hours.
- Punch down dough and roll on a floured surface to a 12 inch square. Use water to dampen a 1/2 inch wide strip along one side. Spread remaining surface with butter and raspberry spread. Sprinkle with cinnamon and currants. Stat with edge opposite dampened edge and roll dough. Press dampened edge to to seal.
- Cut into 12 pieces and place in an oiled 9 inch square baking pan. Cover and let rise in a warm place until double, about 40 minutes.
- Bake in a preheated oven at 400 degrees F for 15-18 minutes. Cool 5 minutes, turn out and serve hot.
- Variation: For blueberry rolls, use 1 cup Blueberry Jam and omit currants.
